Ingredients
  

  • 1 cup egg whites fresh or carton
  • 1/4 cup cottage cheese low-fat
  • 1/4 cup shredded cheese such as Monterey Jack or your choice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup chopped spinach optional
  • 2 tablespoons red bell pepper diced, optional

Instructions
 

  • Preheat your oven to 325°F (165°C) and prepare a muffin tin by spraying it with cooking spray.
  • In a blender, combine the egg whites, cottage cheese, shredded cheese, salt, and pepper. Blend until smooth.
  • Pour the egg white mixture evenly into the prepared muffin tin.
  • If desired, add chopped spinach and red bell pepper to each muffin cup and gently stir to combine.
  • Bake in the preheated oven for 25-30 minutes or until the egg bites are set and slightly golden on top.
  • Let cool slightly and carefully remove the egg bites from the muffin tin. Serve warm.
