Instructions
Preheat your oven to 325°F (165°C) and prepare a muffin tin by spraying it with cooking spray.
In a blender, combine the egg whites, cottage cheese, shredded cheese, salt, and pepper. Blend until smooth.
Pour the egg white mixture evenly into the prepared muffin tin.
If desired, add chopped spinach and red bell pepper to each muffin cup and gently stir to combine.
Bake in the preheated oven for 25-30 minutes or until the egg bites are set and slightly golden on top.
Let cool slightly and carefully remove the egg bites from the muffin tin. Serve warm.
