Greek Breakfast Salad

August 30, 2023

Start your morning with something fresh, healthy, and packed with flavor – the Greek Breakfast Salad. A light and nutritious way to fuel up for the day, this salad is inspired by the vibrant and wholesome ingredients of a classic Greek salad, but with a twist to make it the perfect breakfast choice.

The base of the salad consists of fresh cucumbers, juicy tomatoes, red onions, and Kalamata olives, all of which add a crisp, savory bite. The key to this salad’s deliciousness is the tangy and creamy feta cheese. Crumbled or in large blocks, feta adds richness and a sharp, salty kick that perfectly complements the fresh veggies.

The dressing is simple but impactful. A drizzle of extra virgin olive oil, a squeeze of fresh lemon juice, a pinch of oregano, and a bit of salt and pepper brings out the Mediterranean flavors in the best way. The dressing coats the vegetables without overpowering them, allowing the freshness of the produce to shine.

For the breakfast twist, this salad can be topped with a poached or fried egg, adding a boost of protein to make the meal more satisfying. The creamy yolk blends beautifully with the salad, creating a rich and indulgent bite without being heavy. If you prefer a plant-based option, you can easily skip the egg and enjoy the salad as is, it’s still packed with nutrients and flavors.

What makes the Greek Breakfast Salad even better is its flexibility. Add some fresh herbs like parsley or dill for extra flavor, or toss in some avocado for a creamy texture. You can also make it a heartier meal by adding cooked quinoa or chickpeas. It’s the perfect way to start your day with a Mediterranean flair.

Whether you’re in need of a quick breakfast or a light lunch, the Greek Breakfast Salad is a versatile, healthy, and delicious option that will leave you feeling satisfied.

Made it for brunch and it disappeared fast. I added a little more oregano and it was perfect. Definitely “Greek-ish” in the best way.

Not gonna lie, I’m skeptical that spinach + vinegar at breakfast is gonna feel “fancy” 😅 but it actually wasn’t bad.

Super easy and very healthy! I added some grilled chicken for extra protein.

I don’t know about spinach in breakfast… just feels weird to me.

    1. User avatar barrett.wuckert91 says:

I get where you’re coming from, but spinach is really good in the morning! It’s like a healthy start to the day. Give it a try!

  7. User avatar dannette.breitenberg2001 says:

    2 stars
Just ok, I expected more flavors. Kinda bland for my taste.

  8. User avatar oliver.willms74 says:

Greek-ish salad for breakfast? Lol okay. My kids didn’t complain which is basically a 10/10 in my world.

  9. 3 stars
Spinach is not my fav but I guess it’s ok. Maybe will try with lettuce next time.

  10. User avatar jamaal.larkin54 says:

    4 stars
Tasty! However, I think it could use some croutons for crunch. 🤔

  11. User avatar linwood.durgan37 says:

    2 stars
This was really bland for my taste. I need more spices next time.

  12. 5 stars
Yum! Can’t wait to try this. Love Mediterranean flavors!

  13. 4 stars
My mom made something like this but she added olives or somethin. Still tasted good! This recipe is kinda similar.

    1. User avatar chester.abshire says:

      5 stars
Olives really do make everything better! I might try adding them next time just like your mom did.

  14. User avatar jospeh.collier80 says:

    4 stars
I made this for lunch instead. It was quick and tasty! Just wish the olives were less salty.

  15. User avatar hulda.keebler2004 says:

    2 stars
I’m skeptical about calling this a “breakfast” salad. I need eggs or something for morning—still, flavors are solid.

  16. User avatar tom.prohaska says:

    3 stars
I tried this and it came out watery—probably my cucumber was too juicy. Still tasty though, just not as “crisp” as expected.

    1. 5 stars
Totally makes sense—cucumber can dump a lot of water. If you ever make it again, try salting the diced cucumber for 10 minutes and patting it dry before mixing. Also serving right away helps keep that “crisp” feel.

  17. User avatar esteban.swift says:

    5 stars
Easy and quick! Perfect for busy mornings.

    1. User avatar moses.kutch says:

Not sure about olives in breakfast. Sounds strange to me. Why not just cereal?

  18. User avatar Gabriele Tremblay says:

    3 stars
Isn’t yogurt more Greek for breakfast? Seems like a salad for lunch really.

  19. User avatar Magrathean sperm whale says:

    5 stars
I made this for my family and they loved it. It was gone in minutes! Thanks for sharing!

  20. User avatar jaye.gleason says:

    3 stars
I used white vinegar instead; is that ok? The taste was kinda off.

    1. 4 stars
I personally think any vinegar can work. Just adjust the amount if it’s too tangy.

    2. User avatar leanora.sporer49 says:

      3 stars
White vinegar is way too strong for salads! Red wine vinegar adds a nice flavor, you should stick to the recipe next time.

  21. User avatar nathaniel.hegmann21 says:

    2 stars
Honestly I don’t get breakfast salads. Also feta at 1/4 cup feels weirdly specific—like why not just “some feta”? 😂

    1. User avatar liberal.hero says:

      3 stars
I kinda agree, “breakfast salad” sounds like something trendy, not breakfast. 😅 But hey—if it’s got olives + feta, I’d try it. Though I usually just eyeball the cheese… 1/4 cup seems too precise for real life lol.

    2. User avatar mauro.bechtelar58 says:

      5 stars
Breakfast salads totally make sense to me—lighter than eggs but still filling. And 1/4 cup feta isn’t that weird; feta amounts can vary a lot by brand/saltiness, so a measured bit helps balance the tang.

  22. User avatar damon.altenwerth75 says:

    1 star
Ain’t nobody got time for salad in the morning! I stick to my pancakes!

  23. User avatar claud.okon48 says:

    5 stars
This is such a fresh, bright breakfast idea—spinach + feta with a tangy vinegar dressing is exactly my vibe. I added a squeeze of lemon just because, and it was perfect.

  24. User avatar ariane.heathcote93 says:

    4 stars
Pretty solid and simple. I used whatever olives I had and it still worked. Next time I’ll dice the tomato a bit smaller so every bite has everything.

  25. User avatar chet.moen48 says:

    2 stars
I followed it exactly and it came out kinda watery? Maybe my cucumber was too juicy. Still edible, just not as “wow” as I hoped.

  26. User avatar heriberto.wehner2005 says:

    3 stars
Salad for breakfast?? Lol. Still, my picky husband ate it and said it’s good, so… win? I guess.

  27. User avatar Loonquawl and Phouchg says:

    5 stars
This salad was super fresh! I added some grilled chicken to it for extra protein, yum!

  28. User avatar CTRLplusW says:

    3 stars
Okay but the instruction says serve immediately—why? If I put it in the fridge for like an hour it’s fine. 😅

  29. User avatar tobie.spinka70 says:

    4 stars
I dunno… is this really Greek? Where’s the olive oil? Just kidding, I see it now lol.

    1. User avatar bridgett.batz56 says:

      3 stars
Looks good, but is that really how they make it in Greece? I’ve seen different versions.

    2. User avatar fallon.durgan2021 says:

      4 stars
Haha, it’s definitely Greek! The olive oil is just hanging out, doing its job behind the scenes.

  30. User avatar deb.brekke says:

    5 stars
This salad is so refreshing, perfect for breakfast! I didn’t have fetta so used cheddar and it still tasted great.

    1. 4 stars
Cheddar in a salad?? That’s interesting! I usually stick to feta for that Greek flair but I’m glad it worked for you!

  31. User avatar Shadout Mapes says:

    5 stars
Definitely making this again! Who knew salads could be this good? 🥗

  32. User avatar ellis.mcdermott says:

    2 stars
Umm, I don’t know… it just doesn’t seem filling enough. Not worth the fuss.

  33. User avatar emely.huels says:

    2 stars
Can I make this with apples instead??? Asking for a friend.

  34. User avatar liberal.hero says:

    3 stars
I followed it exactly but my salad was kinda watery… maybe my cucumber wasn’t dry enough. Still tasty though.

    1. 4 stars
That sounds like it could be the cucumber, yeah—those juicy bits can really loosen things up. Next time try salting/drying the diced cucumber (or patting it well with a paper towel) before adding. Glad it was still tasty though!

    2. User avatar elly.cruickshank says:

      3 stars
Watery salad is the worst 😅 i think you could also reduce the cucumber amount a tiny bit or drain the tomatoes a lil. But it’s a simple recipe so small changes go a long way.

  35. User avatar harland.konopelski55 says:

    2 stars
Uhh, my salad came out kinda soggy. Did I use too much oil? 🤔

  36. User avatar carletta.collins59 says:

    5 stars
Five stars—so good and healthy. My husband kept going back for more. Totally recommend!

  37. User avatar Brook Stracke says:

    5 stars
This salad is so refreshing! I love the feta and olives together. Perfect for breakfast!

  38. User avatar alessandra.schaden40 says:

    5 stars
This salad is so refreshing! Perfect for a hot summer day. The feta gives it such a nice flavor. I’ve made it twice already!

  39. 4 stars
5 stars, no question. Super easy. Will replace my usual lunch salad with this one.

  40. User avatar glennis.collins1978 says:

    2 stars
Way too salty for my taste. I think the olives put it over the top.

  41. User avatar johnette.champlin58 says:

    4 stars
Nice recipe but what do I do with the leftovers? Thought about using it in a sandwich.

  42. 5 stars
Wow, simple yet so delish! Perfect side for our BBQ.

  43. User avatar malcolm.welch2013 says:

    4 stars
I tried it for breakfast and it felt light but still satisfying. I added a squeeze of lemon though—maybe not Greek-aunty approved, but it was great.

  44. User avatar Tricia McMillan says:

    4 stars
Super easy to make! I added some grilled chicken and it was delish!

    1. User avatar lamont.littel97 says:

      2 stars
I dunno, I thought it was bland. Maybe needs more seasoning?

    2. User avatar colby.macgyver23 says:

      5 stars
Grilled chicken sounds amazing! I’ll try that next time.

  45. User avatar Draugr Thrall says:

    4 stars
Super fresh and light! I added some grilled chicken for protein. Yum!

    1. User avatar kevin.howell says:

      5 stars
Grilled chicken sounds like a great addition! I love how versatile this salad is. 😋

  46. 5 stars
5 stars! My kids love it too, and it’s so healthy 😊

    1. User avatar lang.graham says:

      4 stars
That’s awesome! I’ve tried it too and my kids love it, but they always pick out the tomatoes. 😂

    2. User avatar carmella.dicki72 says:

      2 stars
Healthy? I dunno, I’ve heard salads don’t fill you up. My salad needs meat! 🍖

  47. User avatar wonda.casper says:

    3 stars
Too many onions for me! My breath smells like a whole farm. 😂

  48. User avatar marinda.reichel1994 says:

    2 stars
Eh, not as filling as I thought it would be. Maybe add some nuts or something? 🤔

  49. User avatar Trin Tragula says:

    5 stars
Easy to make and healthy. I’ll definitely send this recipe to my mom for her to try. 😊

  50. 4 stars
My kids actually ate spinach for once! I’ll take that as a win. 👍

  51. User avatar russ.senger25 says:

    5 stars
Five stars! I meal-prepped this for work and it held up fine for a day. If you toss it right before eating, it’s still crispy and not sad.

  52. User avatar johnnie.rosenbaum92 says:

    2 stars
I don’t understand why you would put olives in a salad. Taste horrible, sorry!

  53. User avatar asley.marks says:

    4 stars
Yum! So good! Love the kalamata olives in this, they add a nice flavor. Will make again.

  54. User avatar arnetta.hermann86 says:

    3 stars
I don’t really like feta cheese, could you use something else? I mean, isn’t that like the only thing in Greek salads? Just wondering!

    1. 3 stars
Ew, feta is the best part! But if you hate it, maybe try a bit of avocado? Not the same but good!

    2. User avatar ike.hermann53 says:

      5 stars
You could totally use goat cheese instead! It’s creamy and has a nice flavor. Just try it, you’ll love it!

  55. User avatar suspiciousCommentator says:

    2 stars
What is Kalamata olives? Can I use regular ones?

    1. User avatar clint.farrell2015 says:

      5 stars
I don’t think regular olives will taste the same tho. Kalamata have that unique flavor that just makes the salad pop!

    2. User avatar jacqui.crona24 says:

      4 stars
Kalamata olives are these dark purple olives from Greece. They’re really tasty! You can use regular ones, but the flavor will be different.

  56. User avatar hanna.swaniawski says:

    5 stars
This is such a fresh, tangy breakfast idea—spinach + feta + olives is a combo I’ll keep repeating. The red wine vinegar really wakes it up.

  57. User avatar ArabianNights says:

    3 stars
I followed it closely but it turned out a little bland for me. I think I under-salted. Also the onion taste was strong—maybe soak it or use less next time.

  58. User avatar twanda.heidenreich89 says:

    4 stars
I forgot the vinegar and it still tasted good, so, yeah!

  59. User avatar silas.mitchell4 says:

    2 stars
Greek breakfast?? I mean, it’s basically a salad. Breakfast should have eggs or something 😅 but flavor wise it works.

  60. User avatar kimbery.bernhard says:

    4 stars
Easy recipe, but I added grilled chicken to make it more filling. Still came out great! Will make again.

  61. User avatar Dwarven Centurion says:

    4 stars
Pretty good, but I found the red wine vinegar a little strong for breakfast. Next time I’ll use a touch less vinegar or add a bit more olive oil to mellow it out.

  62. User avatar guy.bauch59 says:

    3 stars
I dont like feta cheese, can I replace it with cheddar? 🤔

  63. User avatar yasmin.leannon4 says:

    4 stars
The dressing is the star. I’m usually lazy with vinaigrettes but whisking it actually makes a difference. Simple and clean flavors.

  64. User avatar Dona McKenzie says:

    4 stars
I’m not sure about breakfast salad… but this was actually good. The feta and oregano made it feel more “Greek” than just chopped veggies.

  65. User avatar cliff.batz20 says:

    3 stars
I dont like feta cheese, can I leave it out? The rest seems good tho.

  66. 4 stars
I don’t really like olives but subbed them for some avocado. Turned out great!

  67. User avatar micha.kovacek51 says:

    5 stars
This salad is delicious! A perfect way to start the day.

  68. User avatar marica.olson says:

    2 stars
The dressing is way too oily for my taste. I adjusted it but still felt too heavy.

  69. User avatar herlinda.konopelski says:

    4 stars
Not a fan of spinach, but my kids liked it. 😅

  70. User avatar malcolm.morar says:

    5 stars
The dressing is simple and tastes legit. I used fresh oregano and it kicked it up a notch. Would make again for sure.

  71. User avatar arlen.renner61 says:

    5 stars
Easy to make and healthy! Will make it again, thanks!

    1. 3 stars
But isn’t that just a regular salad? I thought it would have more flavor or something.

    2. 5 stars
I’m glad you loved it! It’s so refreshing, especially in the morning.

  72. User avatar Brand-shei says:

    3 stars
I tried making it but it turned out too salty. Maybe I added too much feta?

  73. User avatar Falmer Shaman says:

    3 stars
Too much onion for my taste. Next time I’ll try less.

  74. User avatar luther.oreilly says:

    4 stars
I actually used balsamic vinaigrette instead of red wine vinegar, and it turned out good too! Just saying!

  75. User avatar Bernie Donnelly says:

    4 stars
The oregano gives it a nice kick. Good job, but what about adding avocados?

    1. 2 stars
Avocados? I dunno if that’s a good idea. Might make it too creamy for a salad. 🤔

    2. User avatar shayne.brekke26 says:

      5 stars
Thanks! I never thought of adding avocados, that could be delicious! 😋

  76. User avatar barrett.wuckert74 says:
