Ingredients
  

  • 2 cups baby spinach
  • 1 cucumber diced
  • 1 tomato diced
  • 1/2 red onion thinly sliced
  • 1/4 cup Kalamata olives
  • 1/4 cup feta cheese crumbled
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

Instructions
 

  • In a large bowl, combine the baby spinach, cucumber, tomato, red onion, kalamata olives, and feta cheese.
  • In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
  • Pour the dressing over the salad and toss to combine.
  • Serve immediately and enjoy!
