Ingredients
- 1 cup water
- 1/2 cup unsalted butter

- 1 cup all-purpose flour
- 4 eggs large,
- 1 1/2 cup Gruyere cheese shredded

- In a small saucepan, bring water, butter, and salt to a boil. Add flour all at once and stir vigorously until mixture forms a ball. Remove from heat.
- Beat eggs in one at a time, beating well after each addition; beat in cheese.
- Drop rounded tablespoonfuls of batter onto prepared baking sheet.
- Bake in preheated oven until puffed and golden brown, 20 to 25 minutes. Serve warm.

I tried these once and mine didn’t puff that much… think I overbaked? Also I used cheddar and it was still good but not the same. What rack/position do you bake on?

Mine went flat 😭. I think my oven runs cold and I didn’t bake long enough. Also I didn’t beat the eggs enough, probably. Flavor is still nice though.
Flat ones happen 😅 maybe u needed more time. My cousin says “beat till like foam” but i always forget. Also if oven runs cold, 425 might really be like 390… so yeah, add like 5 min? Flavor still good is a win tho.
Ugh, I’m sorry! Gougères can totally deflate if the oven isn’t really at temp. I’ve learned to preheat longer (even 15 extra min) and don’t open the door until they’re set. Also, make sure the batter is hot when you start mixing in eggs—adds puff.

I think you might’ve needed to beat the eggs more! A good mix can help with that puff. Just a thought!

I didn’t have Gruyere so used Cheddar… Does that count? They still puffed up but tasted weird.
