Gougères

December 26, 2023

Gougères are delightful French cheese puffs made from pâte à choux – the same dough used for éclairs and cream puffs, combined with grated cheese, typically Gruyère or Comté. These light, airy bites are crisp on the outside, tender on the inside, and full of cheesy, savory flavor. Whether served as an appetizer, party snack, or paired with wine, gougères never fail to impress.

Originating from the Burgundy region of France, gougères are often enjoyed during wine tastings or festive gatherings. Their delicate structure and rich taste make them a perfect pairing with both white and red wines, especially a crisp Chablis or a light Pinot Noir. Despite their elegant appearance, gougères are surprisingly easy to make at home.

The dough begins with a simple mix of water, butter, flour, and eggs. Once smooth and glossy, it’s enriched with a generous helping of grated cheese and a touch of salt and pepper. You can also add nutmeg or cayenne for a subtle kick. The dough is piped or spooned onto a baking sheet and baked until puffed and golden.

Gougères can be served warm or at room temperature and are delicious plain or filled with savory spreads like herbed cream cheese or pâté. They also freeze beautifully, making them an excellent make-ahead option for entertaining.

Elegant yet unfussy, gougères are the perfect example of how French cuisine elevates simple ingredients into something extraordinary. They’re a wonderful way to bring a taste of France into your home, no passport required.

The instruction ‘beat eggs in one at a time’ is true but vague—how long are we talking? I guessed. Still came out okay, just not super glossy.

These are dangerous. One turns into the whole tray disappearing. I served them with soup and they were gone fast. 10/10.

  3. 2 stars
😐 I expected a lot more. They were just ok.

These turned out beautifully puffed—like little cheese pillows. I used extra-sharp Gruyère and they were super flavorful. Will make again for sure.

Yes!! “Cheese pillows” is exactly it 😄 Great idea using extra-sharp Gruyère—sounds like they must’ve been so savory. Thanks for sharing!

I tried these once and mine didn’t puff that much… think I overbaked? Also I used cheddar and it was still good but not the same. What rack/position do you bake on?

Too much butter for my taste, it left a greasy finish. 🙁

They were kinda bland for me. Maybe add more cheese? 🤔

They looked fancy but were super simple! Made them in no time!

I don’t know what Gruyere is. Can I use cheddar? I don’t want to go to fancy store.

  9. 4 stars
Yummy! But I used cheddar instead of Gruyere, and they still rocked!

These were a huge hit at the party! Fluffy and cheesy, just like I love them. Will make again!

Mine went flat 😭. I think my oven runs cold and I didn’t bake long enough. Also I didn’t beat the eggs enough, probably. Flavor is still nice though.

    1. User avatar tana.kling97 says:

      3 stars
Flat ones happen 😅 maybe u needed more time. My cousin says “beat till like foam” but i always forget. Also if oven runs cold, 425 might really be like 390… so yeah, add like 5 min? Flavor still good is a win tho.

    2. User avatar Bethann Kuvalis says:

Ugh, I’m sorry! Gougères can totally deflate if the oven isn’t really at temp. I’ve learned to preheat longer (even 15 extra min) and don’t open the door until they’re set. Also, make sure the batter is hot when you start mixing in eggs—adds puff.

  12. User avatar Zarniwoop says:

I burnt mine kinda. Maybe my oven runs hot? 🙈

    1. User avatar tatum.williamson says:

      4 stars
Yeah, ovens can be tricky! Maybe try lowering the temp next time? Good luck!

I don’t think this is a real recipe, are you sure this is how you make them? 🤔

  16. 3 stars
I wasn’t sure about this recipe but I gave it a try. They tasted great but didn’t puff up as much as I hoped.

    1. User avatar suzy.rutherford30 says:

      3 stars
I think you might’ve needed to beat the eggs more! A good mix can help with that puff. Just a thought!

    2. User avatar ALTplusF4 says:

      5 stars
I’m glad you tried it! Sometimes the puffiness can depend on the oven or the size of the batter balls. Don’t give up, they’ll be perfect next time!

  17. User avatar nova.jaskolski1980 says:

Wow, I cannot believe how quickly they baked! Perfect for my family dinner. Thanks!

  18. 5 stars
SO GOOD!! I added some spices and they were amazing!! 🧀

  19. 2 stars
I didn’t have Gruyere so used Cheddar… Does that count? They still puffed up but tasted weird.

    1. 3 stars
Weird taste? Maybe the cheddar was too sharp? I think it’s worth trying again with Gruyere.

    2. 4 stars
Cheddar is great, but it won’t be the same as Gruyere! I guess it still worked out for you though.

I tried this and they didn’t puff like yours. Maybe I did something wrong? How can I fix it next time?

  21. 2 stars
IDK, they didn’t puff up for me. Followed the recipe exact, but it just turned into cheesy pancakes.

  22. User avatar vivian.ankunding says:

I followed the steps closely and the dough felt right after cooking the flour into a ball. Mixing the eggs took a little time, but the choux texture was worth it. Would make again.

  23. 1 star
Gougères? More like gooey messes! I couldn’t even get them off the sheet. What a bummer.

So easy to make! I didn’t think I could do it, but they came out perfect.

Wow, that sounds delicious! I’m definitely gonna try making them this weekend. Thanks for sharing!

  29. 5 stars
These came out super puffy and golden—exactly like the little bakery ones. The Gruyère smell while baking is unreal. I served them with soup and everyone went back for seconds.

  30. 2 stars
Kinda mid. Too much fuss for cheese puffs. My kids liked them anyway, but I probably won’t make again soon.
