Instructions
Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
In a small saucepan, bring water, butter, and salt to a boil. Add flour all at once and stir vigorously until mixture forms a ball. Remove from heat.
Beat eggs in one at a time, beating well after each addition; beat in cheese.
Drop rounded tablespoonfuls of batter onto prepared baking sheet.
Bake in preheated oven until puffed and golden brown, 20 to 25 minutes. Serve warm.
