Habanero watermelon jam is an exciting twist on traditional fruit preserves, bringing together the sweetness of ripe watermelon and the fiery heat of habanero peppers. It’s the kind of jam that dances on your taste buds, offering a unique balance of flavors that is both refreshing and bold. This jam is perfect for adventurous food lovers who enjoy that sweet heat combo and are looking to spice up their pantry.
Watermelon, with its juicy and mildly sweet flavor, serves as the perfect base for the jam. It’s hydrating and fresh, making it a wonderful summer fruit to preserve. But when paired with the vibrant, intense heat of habaneros, it takes on a whole new depth. The heat from the peppers doesn’t overpower the fruit but instead enhances its natural sweetness, creating a jam that is at once comforting and exhilarating.
The texture of habanero watermelon jam is thick and spreadable, with small bits of fruit still intact, which makes it perfect for spreading on toast, stirring into yogurt, or even glazing meats like chicken or pork. The acidity of the watermelon, combined with a touch of sugar and lemon, provides just the right balance to tone down the heat, making the jam both tangy and spicy without overwhelming the palate.
One of the best things about this jam is how versatile it is. Use it as a topping for cheeses, spread it on grilled sandwiches, or add it to a charcuterie board for an unexpected kick. For a fun twist, you could even serve it alongside ice cream or drizzled over pancakes.
Habanero watermelon jam is an ideal way to capture the essence of summer in a jar, infusing your pantry with both sweet, juicy fruit and a fiery kick. It’s the perfect condiment for those who love a little adventure with their food and want to share something unique with family and friends.
This recipe is made by Barry Bryant.

Ingredients
- 5 habanero peppers retain the seeds from one pepper
- 2 watermelons juiced with pulp, approximately 5 cups of juice/pulp
- 4 cup sugar
- 1 package low-sugar pectin
Instructions
Prepare the Watermelon Juice/Pulp
- Juice the core of the watermelons, ensuring all seeds are removed
- Use a juicer that keeps the pulp with the juice to avoid a two-step process and ensure proper setting of the jelly
Prepare the Habanero Peppers
- Finely dice 5 habanero peppers, keeping the seeds from only one pepper
Combine Ingredients
- In a large pot, combine 5 cups of watermelon juice/pulp with the diced habanero peppers and pectin
Cook the Mixture
- Bring the mixture to a rolling boil over high heat
Add Sugar
- Add 4 cups of sugar to the boiling mixture
- Return the mixture to a rolling boil, stirring constantly
- Check Consistency
- Test the consistency of the jam using a cold spoon. If the mixture gels and holds its shape, it is ready for jarring
Jar the Jam
- Ladle the hot jam into sterilized jars, leaving a small headspace
- Clean the rims of the jars, place on the lids and rings, and process in a boiling water bath for 10 minutes
Cool and Store
- Allow the jars to cool completely. Ensure the lids have sealed properly before storing

This Habanero Watermelon Jam is great with biscuits, over cream cheese, or as a baste for pork when grilling. One friend describes this jam as a “Rodeo in your Mouth.”Nutrition

Isn’t habanero really hot though? How will it taste with watermelon??
I followed the instructions but it didn’t set. What did I do wrong?
Ok, but 5 habaneros?? 😅
Five habaneros?! I’ll believe it when it sets. I feel like the pectin will fight for its life 😂
Honestly it depends how hot your habaneros are 😅 but yeah, five sounds wild. I’d start with 2–3 and adjust next batch.
Just. Wow. I put this on nachos, it’s awesome! The sweet with the spicy is just perfect, really brings out flavors. 🤤
That sounds amazing! I never thought of using it on nachos. I’ll have to try it! 😊
Your step about “juicer that keeps the pulp” is key. I used a blender instead and my jam didn’t set right. Lesson learned: follow the process.
Sounds amazing with cream cheese on toast or even on grilled chicken. Watermelon + peppers is such a good combo. I’d definitely try it—my only concern is getting it to set right.
Yummy yum! I only had one watermelon and used 3 habaneros. It’s nice and sweet with just a hint of kick. Good on toast with cream cheese!
Isn’t this dangerous? Like, what if it’s too spicy?
Wow, habanero + watermelon sounds wild (in a good way). I like that it uses pulp so you don’t have to do extra steps—less mess, more flavor.
Wait, “retain the seeds from one pepper”?? I’m not sure I trust that lol. Also the instructions say remove seeds from the watermelon—good—but I think this could turn super bitter if you keep habanero seeds.
This is such a cool flavor combo. I love when the heat sneaks in at the end—habanero jam sounds dangerous (compliment).
This sounds dangerously good. Habanero jam on watermelon feels like summer chaos in a jar 😄 Anyone know if it’s sweet-sour or more spicy than I’d expect?
Isn’t habanero too spicy for jam? I don’t know about this…
I thought the same thing at first! But the sweetness of watermelon balances the heat. You should give it a try!
This sounds like something you’d spread on cream cheese and then immediately get compliments. I’m in.
I followed it exactly, but I’m confused: it says 5 habanero peppers yet only “retain the seeds from one pepper.” So did you add chopped pepper or just pulp? Mine tasted off at first.
Made it for a brunch and people kept asking what it was. It’s sweet, fruity, then bam—heat. I served it on biscuits and it absolutely worked.
Watermelon and habanero? Seriously? I thought ppl were kidding. I tried it and it was surprisingly good! Who knew!
Notes: I removed seeds like instructed (carefully—habaneros are no joke). Also, I swear my juicer got more pulp than “5 cups,” so I had to adjust sugar a bit. Came out great anyway.
Five habaneros?? That’s not jam, that’s a dare. I’d probably use like 1–2 peppers first and taste as I go. But I respect the commitment.
The ingredient list reads like it’s missing steps. “Retain the seeds from one pepper” but then the instruction says core juice ensure seeds are removed… whose seeds are we talking about? Confusing, but I’m intrigued.
Wait… is this jam or jelly? And the seeds part is messy. Like, why would you remove seeds from the *watermelon* core but then keep habanero seeds? I’d rewrite it before making. 😬
I think it means: keep the seeds from ONE habanero (the spicy flavor) and remove seeds from the other 4. That “core the watermelons…” line is definitely a weird mismatch though 😅
Yum! I mixed it up with some BBQ sauce and it was awesome. Thanks for sharing!
I didn’t have a juicer that keeps pulp, so I did the two-step thing and it still came out fine. Maybe don’t stress too much as long as you get enough pulp.
Five habaneros is too much for me. I’d do like 1–2 peppers and still keep the flavor. But the concept? Solid.
Hmm I used 5 once for jam and it was… wow. Like, spicy-sweet but borderline too hot. Next time I’ll start with 2 and add more at the end if I’m feeling brave 😅
Totally get that—5 habaneros sounds like a dare. 1–2 definitely keeps the flavor without blowing out your taste buds. Glad you still liked the concept!
Five habaneros for one batch is kinda wild. Like, could be fire or could be regret. I’d recommend gloves for sure.
Lol yeah 5 habaneros is definitely “turn the smoke alarm on” territory. Gloves are non-negotiable with this one.
I tried something similar once—way too hot. I’d start with 1-2 habaneros and taste the juice while it’s still raw, then adjust. More isn’t always better.
Habanero and watermelon? Sounds like they don’t belong together. I’ll pass.
I made this but used 5 cups exact and it didn’t set at first. I think I didn’t boil long enough—got it right on the second try though. Heat level was no joke!
This is the weirdest recipe I’ve ever seen but I’m intrigued! Gonna try it!
I thought the same! Habanero and watermelon? Sounds crazy but could be amazing! Can’t wait to see how it turns out for you.
I did 5 habaneros and it was way too hot at first bite, but after it sat overnight it mellowed. Still spicy though. Next time I’ll try 3 peppers. Flavor is weirdly amazing.
Low-sugar pectin in watermelon always makes me nervous because watermelon’s so watery. Still, the pulp step is smart.
Easy recipe but I think they forgot about the part where u should let it cool, huh?
Haven’t tried yet but sounds interesting. My cousin said that watermelon is not for jam. But I like to go against the grain. Gonna give it a shot anyway!
I’m not a fan of spicy sweets, this just sounds weird to me!
How much pectin? I didn’t see it listed right. Also, is there a way to make this without pectin? My jelly’s runny. 😩
Made this last weekend, and wow! It was a hit at the BBQ. Everyone loved it!
Sounds amazing! I gotta try this at my next gathering. 🥳
It tasted like spicy fruit candy at first, but after cooling it mellowed a lot. Still, wow, the habanero really shows up.
Totally agree—mine started shockingly sweet + spicy, then after it cooled it turned way more mellow. The habanero lingers in the best way though.
I tried it but maybe I did something wrong—my “jam” was more like syrup. Also I only used like 1 habanero and it still felt TOO hot 😅 next time I’ll follow the seeds part exactly.
Too spicy for me!! I couldn’t even take a full bite. Might be better without so many peppers.
My family thinks I’m crazy for putting hot peppers in fruit things, but I’m willing to try. The low-sugar pectin helps too since I’m watching sugar.
I’m with you—habanero + fruit is such a good combo. The heat plays really nicely against the watermelon sweetness.
Pectin not enough? maybe burn. idk. 😅
Y’all are crazy, who puts peppers in jam? Stick to strawberries lol!
This sounds like a wild combo! Can’t wait to try it out!
I used to grow habaneros and I gotta say… 5 peppers might be intense depending on size. Maybe start with 2 if you’re not trying to sweat.
Just put in the habaneros without the seeds! Way better taste!
Why do you need the seeds? Isn’t that bad for you? Maybe I read it wrong but I don’t like this.
This would not set for me. I used a different pectin once and it turned out watery. Maybe the low-sugar pectin is super picky about measurements—still, great idea.
Good to know! Low-sugar pectin really can be measurement-sensitive—like, ratio matters a lot. Did you use the exact same brand/type and cook time? I’ve had that “watery jam” issue when the boil was too gentle or I didn’t reach the right temp.
The instructions are super short—like, where’s the boiling time? I can’t tell when it’s done setting. Still, the idea is interesting and I’d try it if I could find a timing guide.
Totally get it—“when it’s done setting” is the missing piece. I’d look for a boil until it thickens, but yeah, this recipe is missing the key timing step.
Way too hot for me. I only used 1 habanero and it was still kind of spicy. The flavor was good though, just not “jam” level mild.
Totally get that—5 habaneros is a lot. I’d start with like 1 pepper (or even none) if you want it “jam” mild. Glad you liked the flavor though!
I think you did it right and it still turned out hot… that’s wild. Maybe those habaneros were extra potent? Next time remove seeds from the one you use and cut it in half.
Ok but… does it actually jell? I don’t see boil time in the instructions. Like i get the pectin, but without temps/timing it might be runny.
Good question. With low-sugar pectin you still need to follow the package instructions for boil time—jam/jelly won’t reliably set just from the ingredient list. I usually bring it to a full rolling boil, then time it per the pectin directions, otherwise it can stay runny.
Wow, this sounds wild! Can’t wait to try it.
Huh, not what I expected. Not really my taste.
I was a bit skeptical at first, but this turned out really well! Just make sure you taste as you go. I didn’t put as many peppers in and it was perfect for my fam.
Really? You didn’t put in all the peppers? I think that kinda defeats the point of the jam! But hey, if it worked for you, that’s cool. I guess everyone has their taste.
I’m glad you enjoyed it! The sweetness of watermelon combined with the heat of habanero is a game changer. I added a bit more sugar and it was a hit!
Okay, habanero in watermelon jam is absolutely unhinged (in a good way). The warning about removing seeds makes sense—those little guys would ruin the whole batch for sure.
Made this for a BBQ and people loved it! I’ve never seen grown adults cry from the heat before. I will add extra watermelons next time!
Why add sugar if watermelon is sweet? Seems unnecessary to me.
I tried something similar years ago and it turned out soupy because I didn’t get the pectin ratio right. If your 1 package low-sugar pectin is correct for 5 cups juice/pulp, then heck yeah.
Yeah, that soupy result is almost always the pectin/sugar ratio or not boiling long enough. If the package says it sets for 5 cups and you truly have about 5 cups of juice/pulp, you should be in the right ballpark—just don’t eyeball it too much.
I love the idea, but 5 habaneros sounds *wild*—still, that habanero heat with watermelon is such a good combo. I might start with 2 and add more if it’s not spicy enough.
I think the seeds in the watermelon might be bad? Are we sure we wanna keep them?
This sounds amazing! I love spicy jams! Can’t wait to try it!
I like that it tells you to keep the pulp in the juice—less work, better texture. Mine was thick like jam, not like juice.
Low-sugar pectin usually requires exact amounts of sugar—so calling for 4 cups sugar makes me wonder if it’s really low-sugar. Still, the method with pulp is smart.
I don’t get why ya would mix watermelon and spicy peppers. Just don’t seem right. To each their own, I guess. Not for me.
Tried something similar once and it was killer… but I burned the habaneros a bit. Make sure you don’t rush this. Also wear gloves lol.
I think I did “fast” once and it turned out weirdly bitter… maybe that was the pectin? Also 5 habaneros sounds like a lot, like my mouth would file a complaint lol. Gloves though—good call.
Oof, burning habaneros is exactly what I worry about 😅 I always go slow—thanks for the reminder not to rush. Do you remove the seeds after all, or keep them in for extra heat?
Not sure about the habanero amount—5 peppers feels like a dare. If you want subtle heat, maybe start with 1-2 and taste as you go.
Totally agree—5 habaneros is definitely a dare 😅 Starting with 1-2 and tasting is the sane move. Jam should be sweet first!
I used 5 once and it was like drinking fire. But I also didn’t remove enough seeds, so maybe that’s on me. I’d still try less than 5 next time.
