This Habanero Watermelon Jam is great with biscuits, over cream cheese, or as a baste for pork when grilling. One friend describes this jam as a "Rodeo in your Mouth."

Ingredients
  

  • 5 habanero peppers retain the seeds from one pepper
  • 2 watermelons juiced with pulp, approximately 5 cups of juice/pulp
  • 4 cup sugar
  • 1 package low-sugar pectin

Instructions
 

Prepare the Watermelon Juice/Pulp

  • Juice the core of the watermelons, ensuring all seeds are removed
  • Use a juicer that keeps the pulp with the juice to avoid a two-step process and ensure proper setting of the jelly

Prepare the Habanero Peppers

  • Finely dice 5 habanero peppers, keeping the seeds from only one pepper

Combine Ingredients

  • In a large pot, combine 5 cups of watermelon juice/pulp with the diced habanero peppers and pectin

Cook the Mixture

  • Bring the mixture to a rolling boil over high heat

Add Sugar

  • Add 4 cups of sugar to the boiling mixture
  • Return the mixture to a rolling boil, stirring constantly
  • Check Consistency
  • Test the consistency of the jam using a cold spoon. If the mixture gels and holds its shape, it is ready for jarring

Jar the Jam

  • Ladle the hot jam into sterilized jars, leaving a small headspace
  • Clean the rims of the jars, place on the lids and rings, and process in a boiling water bath for 10 minutes

Cool and Store

  • Allow the jars to cool completely. Ensure the lids have sealed properly before storing

    This would not set for me. I used a different pectin once and it turned out watery. Maybe the low-sugar pectin is super picky about measurements—still, great idea.

      Good to know! Low-sugar pectin really can be measurement-sensitive—like, ratio matters a lot. Did you use the exact same brand/type and cook time? I’ve had that “watery jam” issue when the boil was too gentle or I didn’t reach the right temp.

      Good question. With low-sugar pectin you still need to follow the package instructions for boil time—jam/jelly won’t reliably set just from the ingredient list. I usually bring it to a full rolling boil, then time it per the pectin directions, otherwise it can stay runny.

    I tried something similar years ago and it turned out soupy because I didn’t get the pectin ratio right. If your 1 package low-sugar pectin is correct for 5 cups juice/pulp, then heck yeah.

      Yeah, that soupy result is almost always the pectin/sugar ratio or not boiling long enough. If the package says it sets for 5 cups and you truly have about 5 cups of juice/pulp, you should be in the right ballpark—just don’t eyeball it too much.

      I usually remove some of the seeds (or at least scrape a lot of them). You still get plenty of heat from the membranes, and it keeps the jam from tasting too harsh/bitter to me.

      I left the seeds in once… mistake 😅 It did get more heat, but the flavor felt a lil bitter and “sharp.” Next time I’ll seed most of them or do half and see. Bitter’s no good for jam.
