Fattoush Salad

August 11, 2025

Fattoush salad is a colorful, tangy, and refreshing dish that comes from the Levant region, particularly popular in Lebanon and Syria. It is a type of bread salad, similar in concept to Italy’s panzanella, but with bold Middle Eastern flavors. The base is made from fresh vegetables like lettuce, tomatoes, cucumbers, radishes, and green onions, all chopped into bite-sized pieces. The unique element that sets fattoush apart is the addition of crispy fried or toasted pieces of pita bread, which soak up the dressing while keeping some crunch.

The dressing is what truly defines this salad. It typically features olive oil, lemon juice, and a generous sprinkle of sumac, a deep red spice that adds a tangy, slightly citrusy note. Some versions also include garlic, pomegranate molasses, or fresh herbs like parsley and mint for extra freshness. The combination of zesty dressing, crunchy bread, and juicy vegetables makes every bite bright and satisfying.

Fattoush is often served as part of a mezze spread, alongside dishes like hummus, baba ghanoush, and tabbouleh. It works beautifully as a side for grilled meats or fish, but it is also hearty enough to enjoy on its own as a light lunch. The mix of textures and flavors keeps it interesting from the first bite to the last.

One of the nice things about fattoush is its adaptability. While there are traditional ingredients, it is common for home cooks to use whatever seasonal vegetables they have on hand. This makes it not only a flavorful choice but also a practical one, reducing food waste by turning leftover bread and produce into something vibrant and delicious.

Beyond taste, fattoush brings a sense of comfort and community. In many Middle Eastern households, it is a regular feature on the table, especially during gatherings and Ramadan iftar meals. It is simple to prepare yet feels special, a dish that celebrates freshness, texture, and balance.

With its crisp vegetables, fragrant herbs, and that addictive crunch from the pita, fattoush salad is a true celebration of Mediterranean flavors. It is proof that healthy food can be full of character, satisfying, and anything but boring.

Hmm, not sure about the pita. I thought Fattoush was supposed to have fried bread, not baked!

I think it needs more seasoning. It was a bit bland for my taste. Maybe try adding some garlic?

I was skeptical about baking the pita (thought it’d get soggy), but it came out crispy. My oven runs hot though, so I watched it closely.

I’m not sure about the sumac. Does it really make that much difference?

  28. User avatar steve_maga says:

    2 stars
Idk why but mine got soggy fast. I added pita right away like it says, but I guess I should’ve waited. Still ate it, just wasn’t crunchy at all.

  29. User avatar diana.gibson44 says:

    4 stars
Sounds complicated, but I gave it a shot. Not bad! Gonna search for better dressing next time.

    5 stars
Simple and refreshing! I added some feta cheese, it was a great touch. Thanks for the recipe!

  31. 3 stars
I think the sumac is too strong. Maybe reduce it next time? 🤔

  32. User avatar clair.hauck49 says:

    2 stars
Not sure about the sumac… What’s it even taste like? I used regular spices instead, wasn’t great. ⭐⭐

  33. User avatar tamera.sawayn says:

Not a fan. My kids didn’t like it at all. I won’t make it again.

  34. User avatar lanell.funk1999 says:

    3 stars
Too many ingredients for a salad if ya ask me. Just throwin’ stuff together doesn’t make it fancy! 👎🏻

  35. 2 stars
Pita bread turns soggy too fast in the salad. Better to serve on the side maybe?

  36. 5 stars
Quick and easy! My kids didn’t help at all but they ate it! Happy with that! ⭐⭐⭐⭐⭐

  37. User avatar Hasimir Fenring says:

    1 star
Fattoush salad? More like ‘fat-a-nope’! Didn’t like it at all. Too many veggies!

    1. User avatar juan.adams76 says:

      4 stars
I think you’re missing out! Fattoush is all about fresh flavors. You can always tweak the veggies to your liking.

  38. User avatar myung.block49 says:

    5 stars
This is such a fresh, bright salad! The sumac + lemon dressing is the real star—made it taste like a restaurant version.

  39. User avatar celina.konopelski6 says:

    3 stars
I don’t understand the sumac. It’s hard to find where I live and kinda expensive! Could I use lemon zest instead? 🤔

  40. 3 stars
Where’s the feta? This salad needs cheese!

    1. User avatar bette.lowe28 says:

      3 stars
But Fattoush is about the fresh veggies, not cheese! Can’t just throw feta in every salad!

    2. 5 stars
I think feta would be great in this! Adds a nice creamy element. 😊

  41. 5 stars
Delicious! 👌 My family loved it, especially with extra pita!

  42. 4 stars
“Serve immediately” is true—leftovers got soggy fast. Still super good, just don’t prep it too early.

    1. 3 stars
Hmm “serve immediately” feels kinda annoying tho 😅 I tried it for lunch the next day and yeah… it was soggy. Maybe I’m doing something wrong—do people keep the pita separate?

    2. User avatar alessandra.sanford says:

      5 stars
Totally agree—pita gets soft quick. I bake the pita last minute and wait to toss it in until everyone’s ready to eat. Works great!

  43. 3 stars
I think lettuce is overrated. Just give me the toppings without it! 😂

  44. User avatar rickiestmorty says:

    5 stars
This salad is so fresh and tasty! Made it for a picnic and everyone loved it! ⭐⭐⭐⭐⭐

    2. User avatar ena.runolfsdottir2014 says:

One bowl would be enough if u eat fast! But yeah, I want more too, haha!

  47. User avatar juan.weimann says:

    4 stars
My mom used to make fattoush with stale bread, is this wrong? 🤔

  48. 4 stars
I replaced the pita with some tortilla chips to make it crunchier! 😄 It was awesome! ⭐⭐⭐⭐

    1. User avatar pasquale.bashirian63 says:

      4 stars
Sounds like a fun twist! I might try that next time! 😋

    2. User avatar Draugr Overlord says:

      2 stars
Tortilla chips? Really? That’s not Fattoush anymore, just a salad with chips. 🙄

  49. User avatar marlys.mckenzie59 says:

    5 stars
Sumac is new to me—turns out I love it. The salad is crunchy and not heavy at all. Would definitely make again.

    1. User avatar joe_banana says:

      5 stars
Totally agree—sumac is such a game changer! I love that tangy flavor without making the salad feel heavy. The crunchy pita boost is the best part.

  50. 5 stars
This salad is so refreshing! I can’t believe how easy it is to make. Definitely a keeper!

  51. User avatar antonetta.mosciski says:

I’m not a fan of cooking, but I gave it a try. Easy instructions, but boring.

    1. User avatar julene.schimmel1955 says:

      3 stars
Boring? Nah, it’s a fresh salad! Just need to spice it up with some feta or olives. Try it again!

    2. User avatar gabriel.lehner11 says:

      4 stars
I get what you mean! It’s super simple, but I guess it lacks that wow factor. Maybe add some grilled chicken next time?

  53. User avatar herbert.pouros94 says:

    4 stars
Yummy! I made it for my family and everyone loved it! Will make again.

  54. User avatar Gail Andrews says:

    4 stars
Not gonna lie, I’m skeptical about sumac. It sounded like it would be weird, but it actually tasted tangy and not too overpowering. Would make again.

    1. User avatar Piter De Vries says:

      3 stars
I’m still not convinced 😅 Sumac tastes kinda like… too sour? I used it once and it was overpowering. Maybe I’ll cut it down to like 1/2 tbsp next time. Also, do you toast the pita longer than 5 min? Mine always comes out soggy.

    2. User avatar kip.christiansen2012 says:

      5 stars
Same here—I was like “sumac… what is that even gonna taste like?” but the tang really works with the lemon. The salad actually feels fresh instead of weird. Definitely trying this again.

  55. User avatar shaneka.howe69 says:

    2 stars
This recipe is a bit off. I thought fattoush had garlic in it? 🤔

  56. User avatar rory.will46 says:

    4 stars
Pretty good! I thought 0.5 tsp salt might be low, so I added a pinch more and it tasted more balanced. Also, I used a little extra mint because I love it.

  57. 5 stars
Wow, who knew salad could taste this good! 5 stars for sure!

  58. User avatar hsiu.bashirian1970 says:

    2 stars
Too many ingredients for my liking, I prefer it simple. Just lettuce and tomato!

This salad is so fresh and flavorful! I’ve made it three times this week. Totally addicted! 😍

  60. User avatar Nella Metz III says:

    2 stars
I didn’t have sumac, so I used taco seasoning… it was NOT the same. 😂

  61. User avatar priscilla.schiller says:

    3 stars
The salad was tasty, but I ended up drowning it a bit with the dressing. Next time I’ll start with half the oil/lemon and add as needed. Otherwise great crunch.

    1. User avatar joe_banana says:

      5 stars
Totally agree—fattoush is easy to overdress. I did that once and everything turned soggy 😅 Next time I’m definitely starting light like you said.

    2. User avatar rene.nolan16 says:

      4 stars
I feel like the recipe should say “use all dressing” but you’re right, I also drowned mine. I might cut the lemon in half too—sumac can be pretty strong. Still tastes good though!

  62. User avatar joselyn.dare74 says:

    4 stars
I think Fattoush is actually Turkish…right? Anyway, it’s good.

    1. User avatar Shalonda Lehner says:

      5 stars
Actually, Fattoush is originally from Lebanon, but it’s enjoyed in Turkey too! Glad you like it!

    2. User avatar Shaddam Corrino IV says:

      4 stars
Who cares where it came from, it’s delicious! I’m making it tonight!

  63. 5 stars
This salad is a game changer! So fresh and delicious! 😍

  64. User avatar leonor.morar66 says:

    4 stars
Not gonna lie, 2 tablespoons lemon juice felt like a lot, but it balanced out with the olive oil. Still super good.

  65. User avatar marci.jacobs says:

    4 stars
Isn’t fattoush supposed to have pomegranate seeds? Just saying! 🤔

  66. 5 stars
Super quick to prepare. Perfect for lazy days! 🌿

  67. 4 stars
Pretty good, but I think I used too much onion. Next time I’ll slice it thinner or use a bit less red onion. Still a great summer salad though.

  68. User avatar tianna.dare says:

    5 stars
This is such a bright, fresh salad—love the lemon + sumac combo. The baked pita adds the perfect crunch without being too heavy.

Fattoush salad? I thought that was for goats! But after tasting it, I liked it a lot!

  72. User avatar billie.wilderman59 says:

    3 stars
Looks good but I personally hate cucumbers. Idk how folks can like it in anything.

  73. 3 stars
Honestly, it was okay, but I thought it would be more flavorful. Where’s the kick?

    1. 2 stars
What do you mean kick? It’s a salad, not a curry! 🎉

    2. 4 stars
I totally get what you’re saying! I had the same thought. A bit more spice or some chili flakes might’ve done the trick. 🤔

  74. 2 stars
I’m not a fan of sumac—tastes kinda like… dusty? But my wife liked it so I guess I’m outvoted. Veggies were super crisp though.

    1. User avatar rickiestmorty says:

      5 stars
If sumac tastes dusty to you, maybe you got old/musty sumac. Mine is always bright and lemony. Also, crisp veggies + warm pita is the whole point—this recipe nailed it!

    2. User avatar jenette.littel21 says:

      4 stars
Totally get that—sumac can come off a little “dusty” or dry-tangy. I usually start with half the amount or mix it with extra lemon so it doesn’t punch you in the face 😅 But glad your veggies stayed crisp!

  75. User avatar Hillman Hunter says:

    2 stars
I don’t get why people rave about this. It’s just a salad. 🤷‍♂️

  76. 4 stars
I don’t like salads much, but this one was alright. The pita made it crunchy.

    1. User avatar Great Moblin says:

      3 stars
Only alright? I think it’s more than that! Maybe you just don’t like salads enough to appreciate it.

    2. User avatar donya.williamson13 says:

      5 stars
I never liked salads either, but this one changed my mind! The pita adds such a great texture!

  77. User avatar curtis.braun1994 says:

    1 star
Just a salad, not impressive to me, sorry. 😩

  78. User avatar alleen.welch2003 says:

    5 stars
I made this exactly as written and it’s *so* fresh. The sumac + lemon combo is the star. Crispy pita stayed crunchy too—nice touch baking it for just 5 minutes.

    1. User avatar Siona Atreides says:

      5 stars
Yes!! That sumac + lemon really makes it pop. I also like adding the pita right before serving so it stays crunchy—otherwise mine gets soggy fast.

  79. User avatar hayley.fay66 says:

    3 stars
I tried this but I think I used too much lemon?? It was kinda sour…maybe less next time.

  80. User avatar Dusty Spencer says:

    5 stars
This salad is amazing! So fresh and light 😍
