  • 1 cup brown sugar packed
  • 2 tablespoons instant coffee granules dissolved in 1 tablespoon hot water
  • 2 large eggs at room temperature
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Instructions
 

  • Preheat your oven to 350°F (180°C). Line baking sheets with parchment paper.
  • In a large bowl, beat the softened butter with granulated sugar and brown sugar until creamy.
  • Add the dissolved coffee, eggs, and vanilla extract; mix well.
  • In another bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until just combined.
  • Stir in chocolate chips.
  • Drop spoonfuls of dough onto the prepared baking sheets. Bake for 8-10 minutes until the edges are lightly golden.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
