In a large bowl, beat the softened butter with granulated sugar and brown sugar until creamy.
Add the dissolved coffee, eggs, and vanilla extract; mix well.
In another bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until just combined.
Stir in chocolate chips.
Drop spoonfuls of dough onto the prepared baking sheets. Bake for 8-10 minutes until the edges are lightly golden.
Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
