Coconut and Date Bliss Balls

April 2, 2026

If you’re looking for a healthy snack that tastes like dessert but is made with simple, nourishing ingredients, coconut and date bliss balls are the answer. These no-bake treats come together in minutes and are the perfect bite-sized energy boost to enjoy on the go, after a workout, or as a sweet little afternoon pick-me-up.

Made with just a handful of ingredients, mostly dates, shredded coconut, and nuts, these bliss balls are naturally sweet, chewy, and satisfying. The dates add rich caramel flavor and a dose of fiber, while the coconut gives them a tropical twist. A handful of almonds or cashews adds texture and healthy fats, and you can customize the mix with extras like chia seeds, cocoa powder, or vanilla extract to match your cravings.

The process couldn’t be easier. Simply add pitted dates, nuts, and shredded coconut to a food processor and blend until the mixture forms a sticky dough. If it’s too dry, a small splash of water or coconut oil brings it together. Then roll the mixture into small balls, coat them in extra shredded coconut if desired, and pop them in the fridge to firm up.

What’s great about bliss balls is how versatile they are. You can keep them nut-free by using sunflower or pumpkin seeds, add protein powder for a post-gym boost, or toss in spices like cinnamon or cardamom for extra flavor. Store them in an airtight container in the fridge and they’ll stay fresh for up to a week, though they rarely last that long.

Whether you’re meal prepping snacks for the week or need a healthier option to curb sugar cravings, coconut and date bliss balls are a simple and satisfying choice. They’re proof that wholesome ingredients can still create something truly indulgent.

I get that! Maybe try chilling the mixture a bit longer before rolling them? That helped me a lot! 😊

Um, why do we need cocoa powder? I thought these were coconut and date balls, not brownies! 😕

    1. User avatar kendra.oconnell says:

      4 stars
I can see how it might be too sweet for some! Maybe try swapping the dates for less sweet dried fruit like apricots? But nuts add a nice crunch!

  18. 2 stars
I followed the recipe, but mine turned out too sticky to roll into balls. Not sure what went wrong.

  19. User avatar jean.hudson59 says:

    5 stars

I don’t have a food processor, can I just mix it by hand? 🤔

    1. User avatar clarence.kohler91 says:

      5 stars
You can definitely mix it by hand! It might take a bit more effort, but just make sure to chop the dates and nuts really fine first. 😄

    2. User avatar winford.sanford1972 says:

      2 stars
I dunno, isn’t a food processor kinda important for blending? Mixing by hand sounds risky. 😬

  27. User avatar daren.wisozk10 says:

    3 stars
So easy to make. You just mix and roll, but do we really need that much coconut? It’s almost too much. But they nice.

    1. User avatar judie.wehner says:

      4 stars
I totally agree! The coconut is a bit overboard. Maybe half a cup would be better?

Good, but a bit too sweet for my taste. Maybe reduce the dates next time?

  31. User avatar liberal.hero says:

    2 stars
I don’t know about those. I think dates are too sweet and the coconut is a bit weird. Not my thing.

    1. User avatar Nolan Bashirian says:

      4 stars
I get that! They’re definitely not for everyone. Have you tried substituting the dates with something else? Maybe less sweet fruits?

  32. 1 star
I don’t get it.. Why is it called bliss? They are just balls with dates and nuts, lol.

  33. User avatar greg.fahey38 says:

    2 stars
Coconut oil smells so strong, I think I put too much. Not sure if I would try again.

    5 stars
Wow! These are so delicious! And healthy too. My kids love them. Thank you!

  45. 2 stars
Easy recipe but my balls didn’t stick together. I think I must’ve messed up the dates.

  46. User avatar rodney.mccullough70 says:

    5 stars
These are absolutely divine! I made them for a party and they were gone in minutes. Will definitely make again!

  48. User avatar jacque.oreilly says:

    5 stars
    Yummy! 💖

  49. User avatar louetta.spencer20 says:

    3 stars
I found the coconut overwhelming. I think it’s better with less coconut next time.

  50. User avatar seth.fadel11 says:

    4 stars
Do we really need the cocoa powder? I thought it would make it too chocolatey. But I tried it and it was fine.

  51. User avatar Hotblack Desiato says:

    4 stars
WHY DO WE HAVE TO ROLL THEM? Can i just slab it into a bar? still scrumptious tho.

  52. User avatar Hillman Hunter says:

    4 stars
Easy to make, my kids loved them! Perfect snack for their lunch boxes.

  53. User avatar tomas.kreiger40 says:

    1 star
I dunno about these. I don’t usually like coconut and this didn’t change my mind. Sorry, not for me. 🥴

  54. User avatar jessica.metz29 says:

    3 stars
I don’t know, the flavor was a bit off for me. Maybe I should’ve added more coco?.

  55. User avatar Helen Highwater says:

    5 stars
I make these for meal-prep snacks. They’re sweet enough, but still feel “clean.” I’d call them dessert-adjacent.

  56. User avatar sergio.funk2008 says:

    5 stars
These are amazing! I can’t believe how easy they were to make. Will definitely be making again.

  57. 4 stars
Mine turned out a little crumbly at first, but I just pressed the mixture together and chilled longer. Next time I’ll probably grind the nuts more finely. Still tasty though.

  58. User avatar leola.schuppe1957 says:

    5 stars
Yummy! I added some nuts and they turned out great! Can’t stop eating them!

    1. User avatar sergio.okeefe says:

      5 stars
Sounds delicious! I love the addition of nuts for extra crunch. Will definitely try it!

    2. User avatar stephine.padberg says:

      2 stars
Nuts? I thought it was just coconut and dates… not sure about that. They look too sweet.

  59. User avatar Paula Nancy Millstone Jennings says:

    4 stars
Delicious and healthy! My kids love these! A great way to sneak in some nuts.

  60. User avatar Draugr Thrall says:

    4 stars
Pretty good! I had to add a tiny splash of water because mine wouldn’t really come together in the processor. After chilling, they firmed up fine. Next time I’ll watch the consistency.

  61. User avatar Barry Manilow says:

    1 star
I think i did something wrong. I’m not even sure what they were supposed to taste like.

  62. User avatar marcelo.predovic13 says:

    5 stars
Superb! 🤤 I made these for a party and they were gone in seconds. Will add chopped chocolate next time!

  63. User avatar filiberto.marks36 says:

    4 stars
I can’t process mine for long because it clumps and sticks to the processor blade. Ended up rolling anyway with wet hands. Flavor is good, but the method needs patience.

    1. User avatar adrianne.weimann says:

      4 stars
Ugh I totally get that—date/coconut can turn into a sticky paste fast. What helps for me is pulsing instead of running continuously, and scraping the sides every 20–30 seconds. Also chill the processor bowl for a bit before blending. If it still clumps, adding a teaspoon of coconut oil (or more shredded coconut) can fix the texture—just a little at a time.

  64. 5 stars
Yum! Made these for my friend’s party, they disappeared in minutes!

  65. 5 stars
Super easy and no baking—love that. I swapped almonds/cashews for whatever nuts I had and it worked. Chill time matters!

  66. User avatar tracy.schmeler2008 says:

    5 stars
Honestly I was skeptical about the date/cocoa combo, but they taste like a healthier treat. Loved the texture—chewy inside, kinda fudgy. 10/10 snack.

    1. 4 stars
Healthy treat? Maybe 😅 Dates are still sugar though. I made something similar and mine turned out crumbly because I didn’t chill long enough—1 hour is real. Still, cocoa with coconut works surprisingly well.

    2. 5 stars
I get the skepticism too—dates + cocoa sounded weird to me at first. But “chewy inside, kinda fudgy” is exactly what I want from a snack. Gonna try these!

  67. User avatar lon.greenfelder says:

    3 stars
Coconut is not my fav, but these were okay. I guess they’d be great for coconut lovers!

  68. User avatar maryanne.rowe97 says:

    4 stars
Super simple and quick! Not sure if they’re bliss, but they’re definitely a nice snack!

    1. User avatar Antony Keebler III says:

      4 stars
I totally agree! They’re more like a healthy treat than bliss balls, but super yummy and easy to make!

  69. User avatar casey.lubowitz95 says:

    4 stars
4 outta 5 from me! Maybe a little too sweet? But who doesn’t love a bit of sweetness, right?!

  70. User avatar kevin.jacobs says:

    3 stars
I followed it pretty closely but my mixture was super sticky, like I couldn’t roll it cleanly. Still ended up tasting great though—maybe my dates were extra juicy?

    1. User avatar Ramallo says:

      5 stars
Totally relate—date dough can be super sticky if the dates are extra soft. I usually chill it longer (like 2 hours) and lightly wet my hands or dust with a tiny bit of coconut so they roll easier.

    2. User avatar howard.paucek says:

      3 stars
I think you might’ve processed it too much? If it gets like paste it sticks. Next time try less blending and add a little more coconut if it won’t form. Also, maybe you used medjool dates but called them “extra juicy” lol.

  71. User avatar sheree.koepp2026 says:

    4 stars
Really nice flavor, but I wish it had more vanilla. Also, the coconut oil amount seems tiny—still okay though.

    1. User avatar Super Saiyan Goten says:

      5 stars
Glad you liked the flavor! I totally get the vanilla note—mine are definitely more “coconut/date” than “vanilla” forward. If you want, try 2 tsp next time (or even a splash more).

    2. User avatar lavon.treutel80 says:

      4 stars
Vanilla could be more yeah… but tiny coconut oil seems normal? I use less stuff like this all the time and it still sticks from the dates. Maybe grind longer if they won’t firm up.

  72. User avatar miles.barrows1974 says:

    2 stars
i followed it exactly but they came out too mushy. idk whyyyy

  73. User avatar Kathaleen Haley III says:

    5 stars
These are absolutely amazing! I can’t believe how simple the ingredients are. They taste like pure heaven. Will definitely make again!

  74. User avatar w00d_ch0p says:

    3 stars
Honestly, it’s okay. I expected them to taste like actual candy bars. They’re more coconut-forward than chocolate-forward to me.

  75. 3 stars
Pretty good, but I felt like they needed something… maybe a bit more sweetness or some spices. Not bad overall.

  76. User avatar Colin the Security Robot says:

    4 stars
Pretty good! I used a little less cocoa because I’m not a big chocolate person, but the coconut/date combo is still great. Next time I might add a pinch of cinnamon.

  77. User avatar shannon.sanford1979 says:

    3 stars
Great idea, but tastes a little healthy. Could use more sugar maybe?.

    1. 2 stars
More sugar? That’s not the point! These are meant to be healthy and taste great the way they are. Just give them a chance!

    2. User avatar Bret Stamm says:

      4 stars
I thought it was perfect without extra sugar! The natural sweetness from the dates is just enough. Maybe try using less sweetener next time if you want healthier options.

  78. User avatar CTRLplusW says:

    4 stars
Easy to make, and the texture was exactly what I wanted—kind of fudgy but still bite-sized. Next time I’ll add a tiny bit more vanilla because mine tasted a touch muted.

  79. 3 stars
i did not have parchment so i used wax paper and they stuck a bit. but otherwise pretty tasty. Would make again!

  80. User avatar Effrafax of Wug says:

    5 stars
These are so delicious! I love how easy they are to make. My kids devoured them!

  81. User avatar Supreme Kai says:

    2 stars
I tried it and it was too sweet for me. 😒 Might skip the dates next time, idk…

    1. User avatar deandrea.corkery65 says:

      4 stars
I get what you mean! They can be really sweet. Maybe try half the dates or add some nuts to balance it out next time? 😊

  82. User avatar Terrance Barrows says:

    3 stars
I got confused with the amounts, are we really supposed to put that much cocoa? Seemed a bit too chocolaty.

  83. User avatar Ryuu Shenlong says:

    3 stars
Coconut + dates + cocoa is a tasty idea, but the measurements feel a little vague. Like is 1 cup coconut packed or loose? I ended up with a mixture that barely stuck together.

    1. 5 stars
Totally agree—“1 cup coconut” is ambiguous. I pack the shredded coconut pretty firmly and it comes out more like sticky dough for me. Loose scoops won’t bind as well.

  84. User avatar timika.romaguera2 says:

    5 stars
Just rolled em in coconut. YUM!! Everybody needs to try this recipe!

  85. User avatar arnita.mccullough says:

    2 stars
Bliss balls? More like blissful mess! Nothing stuck together for me.

  86. 4 stars
Super easy recipe! I swapped out cashews for peanuts and still worked fine! 😋

    1. User avatar Emily Saunders says:

      5 stars
Glad to hear it! Peanuts are a great alternative. I might try that next time. 👍

  87. User avatar yuri.kassulke2022 says:

    1 star
Honestly, who has time to roll balls? So much work!

  88. 3 stars
Are you sure these are healthy? Sounds like a lotta sugar to me 🤔

  89. User avatar chance.funk52 says:

    4 stars
Question: is 1 inch in diameter too small? Mine were bigger and they took longer to set. Also I used sweetened coconut by accident—still worked, just sweeter.

  90. User avatar Reg Nullify says:

    3 stars
Not bad, but mine came out too dry/crumbly. I followed the ingredient list exactly, so maybe my dates were drier? Would love a suggestion for troubleshooting.

    1. User avatar w00d_ch0p says:

      3 stars
Hmm I dunno… if you followed it exactly and it’s crumbly, maybe you over-processed? Or like, your oven/gr fridge too cold? Mine always needs “some time” in the fridge but I also add honey sometimes, not in the recipe tho 😅. Try adding a bit of water or oil and see. If it’s dry, it’s dry.

    2. User avatar elsy.fisher62 says:

      5 stars
Sounds like your dates might be the culprit. If they’re extra dry, the processor can’t get them sticky enough. Next time, try soaking the dates in warm water (5–10 min) or microwaving them with a splash of warm water before blending. Also, you can add 1–2 tsp more coconut oil if the mix won’t hold together. Hope that helps!

  91. User avatar giuseppe.block81 says:

    5 stars
So good! I made them for the office and they disappeared fast. Next batch I’ll try adding a little cinnamon because why not. Five stars.

  92. 5 stars
These are dangerously snackable. The chocolatey-cocoa vibe with the dates is perfect—no added sugar needed. I chilled them a bit longer and they firmed up beautifully.

  93. 5 stars
Super easy and no-bake—love that. I used almond flour once instead of chopping nuts and it was still fine. Definitely will make again for snack prep.

  94. User avatar louann.kunde90 says:

    3 stars
Not sure I get the ‘bliss balls’ hype. They’re tasty, but I found them a little dense and the cocoa flavor didn’t pop. Maybe I needed to toast the nuts first.

    1. 5 stars
Bliss balls are life 😅 I don’t even bother toasting, I just smash everything in the processor and chill longer. If the cocoa “didn’t pop,” maybe your dates were too sweet? Try using less coconut and a little more cocoa next time!

    2. 4 stars
I totally get what you mean—mine were a bit dense too the first time. I think toasting the nuts helps a ton, and I also add a splash more vanilla when the cocoa feels flat. Did you measure the cocoa powder level?

  95. User avatar orville.hauck26 says:

    2 stars
Way too chocolatey for me. 2 tbsp cocoa powder is a lot—next time I’ll cut it in half. Also mine stuck to my hands even after chilling.

  96. User avatar Will Wynn says:

    2 stars
Mine fell apart when I tried to roll them. I might’ve over-processed the nuts/coconut? Or I didn’t chill long enough. Tasted good, just ugly.

As someone who hates dates, I still had to admit these are good. It’s more of a chocolate-coconut bite than a straight date thing. I might try adding shredded coconut on the outside.

That’s honestly the best endorsement 😂 If they’re more “choc-coconut” than “date,” I’m in. I’m definitely stealing the shredded coconut-on-the-outside idea!

Wait… dates in there? I tried something similar once and it turned into paste. Did you mean to add water or a little milk? Also cocoa powder usually tastes bitter—maybe increase it?

Wow. This is better than I expected. I thought refrigerated balls would be hard, but they stayed soft. Will definitely make again.

These are dangerously good. Sweet but not too much, and the cocoa + coconut combo tastes like a dessert bar. I chilled them overnight and they were even firmer!

Idk man… seems like a lot of work for balls that are basically raw dessert. Also food processor needed or it will be a mess. Still, they smell amazing.

Yeah it’s definitely not “one-bowl and done.” I do like that you refrigerate them though—makes it less messy than trying to roll right away.

Idk, I made something similar w/o a food processor… it was a crumbly mess lol. Smell is great but I guess I’ll need better equipment 😅

I didn’t have cashews so I swapped walnuts. The texture got slightly grainy, but still yummy. Husband approved, which is all that matters.

    1. User avatar easter.kuvalis says:

Omg this is exactly the kind of swap I do too—walnuts are such a good stand-in. Grainy sometimes just means they need a bit more processing or a touch more coconut oil. Love that your husband approved 😄

    2. 3 stars
Not gonna lie, grainy texture makes me nervous 😅 Dates are sticky but walnuts can be kinda bitter. Maybe next time toast them first? Or add a little extra cocoa? Still glad it worked though!

My kid wouldn’t stop stealing them 😂. I used almond flour instead of nuts (didn’t have cashews) and it still worked. 10/10 snack for after school.

This is a solid recipe for anyone trying to cut sugar. Dates are still sweet, but at least it’s natural. I ate three and felt fine, so that’s a win in my book.

I followed the recipe but mine were a bit too crumbly at first. I ended up adding 1 more tbsp of coconut oil and that fixed it. Flavor is still great though.

Healthy-ish I guess, but $ vibes. Dates and cashews are expensive here. Also, I don’t like cocoa in sweet snacks—tastes kinda like dirt to me, sorry.

    1. 4 stars
Totally get the cocoa take 😅 I’m sorry it reads “dirt-y” to you. I actually like how the cocoa balances the sweet dates, but you could skip it and add a little extra vanilla/coconut if you’re more of a pure-coconut person. Also yeah dates + cashews can be pricey—almonds alone might work too.

  106. 4 stars
Not gonna lie, I’m skeptical of “bliss balls” being worth the hype. This one surprised me. Texture is dense but in a good way.

    wow so good

Really easy and no-bake, love that. I had to pulse a bit longer to get a sticky dough, but once it came together, rolling was simple. The texture after chilling is perfect.

These are wicked. I made them for my kid’s lunch and he kept asking for more. I added a pinch of cinnamon because why not 😅

  110. User avatar Alyssa Considine says:

I think the food processor part is key. If you don’t process long enough, the dough won’t come together. Mine looked dry at first but turned into a sticky mass after a few extra minutes.

  111. 5 stars
Tried these today—so rich and chocolatey without being overly sweet. The dough is super sticky but rolling got easier once I chilled it a bit longer. Will make again!

These are dangerously good. The cocoa + dates make them taste like dessert without feeling heavy. I rolled mine a little smaller and they set up perfectly after chilling.

    1. User avatar alyson.torp29 says:

      5 stars
Right?! I had the same experience—sweet enough to feel like dessert but not that heavy “sugar bomb” feeling. I also found rolling them smaller helps them firm up faster.

    2. User avatar jesusa.sauer79 says:

      3 stars
Okay but… how do they not taste super dry? I did everything but mine kinda fell apart after the fridge. I might’ve pulsed too much or my dates were too old? Still, they were tasty, so I’ll try again.

These are dangerously good. The dates make them super sweet without tasting fake, and the cocoa + coconut combo is legit. I added an extra pinch of salt because I like that contrast—10/10 snack.

  114. User avatar liberal.hero says:

I followed it exactly, but mine didn’t really form a “dough” in the processor—more like sticky bits. Still tasted fine though. Maybe my dates were drier?

  115. 3 stars
Not bad, but I found them pretty rich. Cocoa flavor is nice, but I could use less cocoa or fewer dates. My balls were also sticky to roll—maybe I didn’t refrigerate long enough.

  116. User avatar vida.johnson2007 says:

Honestly, the ingredient list looks too simple. Like, how can dates + coconut + cocoa be this good? I mean… it is.

  117. User avatar ernie.ward26 says:

    3 stars
Not bad but I’m not sure it’s “bliss” worthy. They’re more like a rich, dense energy bite. Would be better with a pinch more salt or maybe a little cinnamon.

  118. User avatar eldridge.nader says:

I followed it exactly and they didn’t firm up after an hour in the fridge. Ended up needing like 3 hours. Taste was good, but the timing was annoying.

  119. User avatar King of Red Lions says:

Healthy-ish snack propaganda, but okay 😂. I’d still rather eat a cookie than a ball of oats-less stuff. However, the ingredients are clean, so points for that.
