      Hmm I’m kinda skeptical—25 minutes feels short for brownies with flour + cocoa. Did you use a dark pan or glass one? I always need like 35-40 mins or they stay too fudgy/soft in the middle.

    These came out fudgy and rich—exactly what I wanted. The Baileys really makes the flavor pop without tasting “boozy” if you bake them right. I did 28 minutes and got perfect moist crumbs. 10/10 would make again!

    I was nervous about the flour amount because it seems low, but it worked. Texture is more brownie-cake hybrid than super gooey, which I actually liked.

    Way too sweet for me. I love chocolate, but the sugar level plus the Irish cream made it a bit much. I’d reduce sugar next time or use dark cocoa.

      Totally get it—Baileys adds a lot of sweetness. I’ve tried cutting the sugar down (like by 1/4 cup) and swapping in darker cocoa and it helped a ton.

    Not bad, but I think 1/3 cup cocoa + 1/2 cup flour feels a little light for the amount of wet ingredients. I had a slightly more cakey texture than I wanted. Still tasty though!

      I get what you mean—Irish cream can totally tip things into “too sweet.” But I think in this recipe the cocoa + salt keep it from getting cloying. Also the booze kind of bakes off so it’s more flavor than sweetness.

      Mine were good, but I’m not sure about “chewy in the middle” — mine came out a bit more like fudge brownies and a little underbaked. I used room temp eggs though. Still ate them all lol.

      Ugh yeah, Baileys can be deceptively strong. Mine got boozy once too—next time I’ll either use a touch less (like 2–3 tbsp less) or reduce it slightly in a pan first so it bakes off more mellow. And totally agree on the eggs: if they’re not truly room temp the batter can thicken and the bake won’t set the same. Did you still bake 25–30 min? Mine firm up better when I pull them when the center is just set and still fudgy.

      Glad it still worked out! Dark cocoa can definitely push things toward richer (and sometimes sweeter-tasting). Next time you could try a tiny bit less sugar or reduce the Baileys just a splash. Also were yours maybe baked closer to 30 minutes? Slightly overbaking can concentrate sweetness too.
