Yeah, I think cooking a bit longer would help. 10 minutes might not reduce enough for a thicker sauce—mine thickened more after simmering closer to 15–20.

Not gonna lie, 10 minutes felt a little short to me, but it still tastes good after chilling. I used slightly less sugar and it was tangier (in a good way).
Maybe 10 mins is ok but you gotta not overdo the blender? I did it like 2 times and it got too spicy. Also I think vinegar brand matters. Tastes weird if it’s cheap vinegar lol.
