Chicken Paella

October 24, 2024

Chicken Paella is a flavorful and vibrant Spanish dish that brings together tender chicken, fragrant saffron rice, and a variety of vegetables, all simmered in a savory broth. Paella, a traditional Spanish dish originating from the region of Valencia, is known for its rich flavors and colorful presentation. While seafood paella is popular, chicken paella offers a delicious, hearty alternative that’s perfect for family meals or special occasions.

What makes chicken paella so appealing is the depth of flavor it achieves through the combination of ingredients. The chicken is browned to perfection, creating a golden, crispy exterior, while the rice absorbs all the aromatic flavors of saffron, garlic, onions, and bell peppers. Saffron, the star spice of paella, infuses the rice with its distinctive floral, earthy flavor and vibrant yellow color, giving the dish its signature look and taste.

The dish is traditionally cooked in a wide, shallow pan called a paellera, which allows the rice to cook evenly and develop a slight crispy crust on the bottom, known as “socarrat.” This golden, crispy layer adds a delightful texture contrast to the tender chicken and soft rice. While chicken is often the main protein in this version of paella, you can easily incorporate other proteins like chorizo, pork, or even vegetables for a vegetarian option.

Paella is not only delicious but also incredibly versatile. The recipe allows for modifications based on your preferences or what you have on hand. You can add peas, tomatoes, artichokes, or even a few olives for extra flavor and color. The use of a rich broth, either chicken or vegetable, helps the rice absorb all the flavors, making each bite satisfying and full of depth.

This dish is perfect for sharing with family and friends. Paella is traditionally served straight from the pan, and the communal nature of the meal adds to the experience. Whether enjoyed at a festive gathering or a cozy dinner at home, Chicken Paella is a comforting, crowd-pleasing meal that offers both warmth and sophistication in every bite.

  • 2 tablespoons olive oil
  • 1 pound chicken thighs boneless, skinless
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 medium onion chopped
  • 1 bell pepper red chopped

  • 0.5 teaspoon saffron

  • Add the rice to the skillet and stir to coat the grains with the vegetable mixture.
  • Pour in the chicken broth, smoked paprika, and saffron. Stir to combine.
  • Nestle the chicken thighs into the rice mixture, cover the skillet, and reduce the heat to low. Cook for about 25-30 minutes, or until the rice is tender and the chicken is cooked through.

  • Serve hot and enjoy your Chicken Paella.

Notes

Tips for the Best Chicken Paella

🔥 Brown the Chicken Well:
Start by browning the chicken pieces in the pan to develop rich, savory flavor. This adds depth to the dish and creates a nice texture for the chicken.
🔥 Use Homemade Chicken Stock:
If possible, use homemade chicken stock instead of water for more flavor. The stock will infuse the rice with a deeper, richer taste.
🔥 Add Saffron for Authentic Flavor:
Saffron is a must in traditional paella. Soak it in warm water before adding it to the pan to release its full flavor and vibrant color.
🔥 Don’t Overcrowd the Pan:
Use a wide, shallow pan to allow the rice to cook evenly and absorb all the flavors. Overcrowding the pan will lead to uneven cooking.
🔥 Let the Paella Rest:
Once the paella is done, let it rest for about 5–10 minutes before serving. This helps the rice set and lets the flavors develop even more.
🔥 Ensure a Crispy Bottom Layer (Socarrat):
To get the signature crispy layer of rice (socarrat), cook the paella at the end on medium-high heat for a few minutes. Don’t stir the rice to allow it to form.

Can I use basmati rice instead? I don’t have the short grain stuff. 🥴

Not sure if I did it right, but my chicken came out a bit dry. Maybe I’ll skip the browning next time?

    1. 3 stars
I think chicken can get dry if overcooked too. Make sure to check the time. Hope it goes better next time!

    2. User avatar werner.schmitt45 says:

Browning is really important for flavor! Maybe try reducing the heat a bit next time instead of skipping it.

This recipe is amazing! The saffron really adds a nice touch.

  4. User avatar Miss Kirk Effertz says:

Mine turned out a bit bland until I added more salt at the end. I also didn’t have saffron so I used turmeric and it was… fine, but not wow.

    1. User avatar eugena.williamson says:

      4 stars
Good call on the salt at the end—paella really needs that final seasoning. Turmeric instead of saffron can work, but yeah, it won’t have that signature aroma.

  5. User avatar willetta.oconner1959 says:

    4 stars
Good, but I found 2 cups rice to be a little much for 4 cups broth depending on your pan. My rice took longer than 30 minutes, still tasty though.

    1. User avatar antione.howell58 says:

      5 stars
Totally agree—2 cups rice to 4 cups broth feels heavy unless your skillet runs hot and evaporation is limited. I usually start with closer to 1.5 cups and it turns out better for me.

  6. User avatar penni.williamson says:

    3 stars
My chicken browned nicely, but I forgot to cover the skillet at one point and the rice got a little dry. Tasted fine though—just not as saucy.

Can’t believe I made this! So good!!!

Yummy! but where’s the shrimp?? I thought this had seafood too. LOL!

I don’t know… Paella without seafood feels wrong.

  10. User avatar colin.cartwright says:

Looks nice, but I have a feeling it will turn out mushy. Why not just use regular rice?

    1. User avatar remedios.swaniawski58 says:

      4 stars
Mushy? Nah, I’ve made paella before, it comes out great. Short grain rice is the key here!

    2. User avatar serafina.wintheiser says:

      5 stars
I think using short grain rice adds to the texture! Regular rice might not absorb the flavors as well. Can’t wait to try it!

  11. 5 stars
This dish was awesome! The saffron really made it special. Will make again for sure!

  12. User avatar kelli.king77 says:

    4 stars
Pretty good, but mine got a little dry by the time the rice was done. I think I should’ve used a slightly wider skillet or kept an eye on the simmer. Still tasted great though.

    1. User avatar imogene.schmitt says:

      5 stars
Yeah, that sounds like a classic paella skillet issue. A wider pan helps the rice cook more evenly and not steam-dry. I also usually keep it just at a gentle simmer and don’t let it aggressively bubble the whole time.

    2. User avatar robert.lakin1966 says:

      4 stars
Dry rice usually means too much evaporation or not enough heat control. Next time maybe add a splash more broth near the end (like 1/4 cup) or check earlier than 30 min. Still—glad it tasted great!

  13. User avatar courtney.hudson1950 says:

    4 stars
Not traditional paella, but who cares—this is comfort food. I added a pinch of chili flakes and it was a nice kick. Would make again for sure.

    1. 4 stars
Paella is paella… but honestly if it tastes good, who cares 😅. I might add a bit more paprika next time and maybe less broth? Thoughts?

    2. User avatar suspiciousCommentator says:

      5 stars
Love that it’s more “comfort paella” vibes—chili flakes are such a good idea. Did you still get a nice tender rice texture with the extra kick?

  14. User avatar judson.bednar62 says:

This feels like a real paella, not that sad “one-pan rice” stuff. I browned the chicken well and didn’t rush the sauté step. Great balance of seasoning.

    1. User avatar edris.lesch83 says:

      5 stars
Yes!! Browning the chicken makes a huge difference—love that you didn’t rush the sauté either. This recipe’s seasoning balance is legit.

Easy to make and tasted good! My kids liked it, which is a win in my book.

  21. 4 stars

  22. User avatar ashleigh.borer says:

    3 stars
I don’t see why everyone likes this so much. It was just okay for me.

  23. 2 stars

I’m so glad you loved it! Chicken Paella is always a winner in our house too!

    2. User avatar Goku Black says:

      3 stars
It was okay but I thought it could use more flavor. Maybe some extra spices?

  28. 2 stars
Easy to follow, but I accidentally used brown rice instead of short grain. Did not turn out great.

    1. User avatar dottie.skiles42 says:

      3 stars
I dunno, maybe brown rice could be good too? I’ve used it before for paella and it was fine. Just have to be patient with the cooking time. But hey, don’t stress too much, next time will be better!

    2. User avatar ronda.hamill1978 says:

      4 stars
Using brown rice instead of short grain? That sounds like an adventure gone wrong! Brown rice takes longer to cook, so that’s probably why it didn’t work out. Stick to the short grain next time! 😊

  29. 2 stars
I don’t see how this is paella, where’s the seafood? Disappointed.

  30. User avatar royce.erdman47 says:

  33. User avatar elaina.feil96 says:

Quick question—does paella *always* have seafood? Because I thought this was supposed to be chicken and it tastes like it should be for dinner, not Spain.

    1. User avatar maria.rowe36 says:

      5 stars
Nope—paella doesn’t always have seafood. It’s more about the rice/seasoning style, and there are tons of versions. This one sounds like a chicken paella take, so you’re good!

    2. User avatar roseanna.conroy says:

      4 stars
I get why you’d think that, but Spanish paella is kind of a category not one single ingredient. There’s valencian chicken options too (and mixed). If it says chicken paella and it tastes right, I’d trust the recipe.

  34. User avatar basementDweller says:

    2 stars
Chicken thighs? Why not use chicken breast? thighs are fatty!

  35. User avatar joe_banana says:

What’s the deal with using chicken in a paella? My Spanish grandma would be rolling in her grave. 😒

    1. User avatar ocie.will says:

      4 stars
I get what you mean! Traditional paella usually has seafood, not chicken. But hey, it’s all about what you like, right? 🤷‍♀️

  36. User avatar janyce.blick25 says:

    3 stars
So… I followed it, but somehow my chicken got a little dry. I think I left it too long in the skillet after browning. Still edible.

  37. User avatar stacy.parker29 says:

    3 stars
Got a lil confused with the steps. Do I cook the chicken before or after adding broth?

  38. 5 stars
So simple and delicious! My kids loved it! Will make again.

  39. User avatar marcell.lebsack2012 says:

    3 stars
Umm, is it supposed to be this soggy? Maybe I added too much broth?

  40. 2 stars
Uh, saffron? That’s super expensive! Can’t believe you need that just to make chicken and rice!

  41. User avatar ike.kirlin25 says:

    5 stars
Made this last night, and it was a hit! Everyone loved it. Thanks!

  42. User avatar johna.barton59 says:

    3 stars
I followed it exactly and somehow my rice was undercooked at 30 minutes. Next time I’ll add a splash more broth or wait longer. Chicken was juicy at least!

    1. User avatar francesco.koepp says:

      4 stars
Glad the chicken stayed juicy though! I always find paella/risotto-style rice undercooks when the heat isn’t truly low or if the lid doesn’t seal. Did your skillet simmer the whole time?

    2. User avatar florencio.ledner5 says:

      4 stars
Ugh, that’s frustrating! Rice can be super picky—30 minutes might be a little short depending on the brand and pan thickness. Next time, try checking at 30, then give it 5 more minutes with the lid on (no peeking). And a splash more broth sounds like it would help too.

  43. 3 stars
Looks like a traditional dish but I prefer mine spicy, this recipe is too mild for my taste!

  44. User avatar crystle.runte says:

This recipe was so easy to follow! My family loved it. Will definitely make again!

  45. User avatar deb.ebert says:

Made this tonight and it turned out really flavorful. The saffron smell is amazing—even with the measurements staying simple. I cooked mine closer to 32 minutes, but it was worth it.

    1. User avatar lula.prohaska33 says:

      5 stars
Yes!! I love when the saffron comes through like that. I’ve done it with closer to 30 too—totally worth it. 😋

    2. User avatar hosea.goldner says:

      4 stars
32 minutes makes sense—mine usually needs a little extra time for the rice to really get tender. Next time I’m adding more saffron though (if that’s even allowed).

  46. User avatar barry.morar says:

    5 stars
The smoked paprika + saffron combo is weirdly wonderful. I was skeptical about saffron in this budget version, but it actually tastes legit.

  47. User avatar russ.crooks says:

    4 stars
Looks easy but I was skeptical about 2 cups short grain rice with just 4 cups broth. Turned out fine though—just needed to keep it at a gentle simmer, not boil.

    1. 4 stars
I was worried too about the ratio, but I found if you don’t boil it aggressively, the rice actually absorbs evenly. Good call on simmering.

    2. User avatar ShanksOnePiece says:

      5 stars
Totally agree—keeping it at a gentle simmer makes all the difference with short grain rice. Nice save!

  48. User avatar Sand-Dial says:

    5 stars
This was surprisingly easy and super flavorful. The smoked paprika + saffron combo really makes it taste “restaurant-y.” I used a regular pinch of saffron and it still worked.

  49. User avatar gala.christiansen says:

    5 stars
This turned out really flavorful—especially with the smoked paprika and saffron. I browned the chicken a bit longer and it gave the rice so much depth. Will make again!

  50. User avatar perry.yost says:

    4 stars
I don’t have smoked paprika so I subbed regular paprika and it still tasted great. Also, 4 cups broth for 2 cups rice feels a bit much but it ended up perfect for me.

    1. User avatar suspiciousCommentator says:

      5 stars
Glad it worked out! Regular paprika can still bring a ton of flavor—smoked is just more “extra.” That broth amount sounds spot-on depending on your rice brand; paella-style dishes can be a little forgiving.

  51. 1 star
Chickens gotta be cooked longer!!! I made this and we ended up sick.

    1. User avatar cristobal.stokes82 says:

      4 stars
It sounds like you might not have cooked it long enough, but I’m sorry to hear you got sick. Chicken needs to be fully cooked to avoid issues like that.

  52. 2 stars
I dunno, I didn’t think it was that great. Tasted kinda bland to me. Might need more spices.

  53. User avatar joe_banana says:

    3 stars
Wot if I don’t have saffron? Is it even worth making without it?

  54. User avatar eusebio.schmeler says:

  56. User avatar Samwise Gamgee says:

  57. User avatar Falmer Archer says:

Not gonna lie, saffron is expensive. I used a tiny amount and it was still good, but I can’t compare to the real thing. Couldn’t really tell it from smoked paprika.

    1. User avatar butterfly says:

      4 stars
Totally feel you on saffron prices—paying for threads is rough. But a pinch can still add that distinct aroma that paprika won’t. If you used smoked paprika too, it probably masked some of the difference for you.

  58. User avatar carlo.lockman3 says:

    4 stars
Yum! So much flavor. I added some shrimp because that’s how my grandma made it!

  59. User avatar kanesha.harvey71 says:

Easy weeknight recipe. I didn’t have saffron so I used turmeric and… it was still good? I know it’s not the same but it satisfied my craving.

    1. 5 stars
Honestly, turmeric works in a pinch—glad it still satisfied your craving! The aroma and color won’t be identical, but it’s still a solid weeknight version.

  62. 5 stars
This tasted like proper comfort food. The saffron smell while it cooked was unreal. I used a regular pinch more paprika and it came out flavorful without being too heavy.

    1. User avatar elna.bergnaum says:

      5 stars
Yes!! That saffron aroma is everything. I love when it comes out flavorful but not heavy—great call on the paprika.

    2. User avatar Champions says:

      4 stars
Comfort food for sure, but I’m curious—did you toast the saffron or just add it in? I tried once and it was super subtle.

  63. User avatar rodger.hodkiewicz1993 says:

    4 stars
Saffron? Really? Isn’t that super expensive? Can’t I just use turmeric instead?

  64. User avatar ronald.jacobson55 says:

    3 stars
I followed it exactly and got a nice aroma, but the paella was more like chicken rice than a true paella (not enough toasty crust for me). Next time I’ll try a wider pan and higher heat at the end.

  65. User avatar darron.larson says:

    4 stars
Tasty! But a bit salty for my taste. I will cut the salt next time. 😊

  66. User avatar jene.konopelski48 says:

    2 stars
Not bad but I think 0.5 tsp saffron is kinda overkill. Mine tasted a little too “medicinal” even though I didn’t use much. Maybe my saffron is old.

    1. User avatar dollie.monahan1956 says:

      4 stars
Hmm I’ve never needed that much either. 0.5 tsp sounds like a lot unless your saffron is super weak. Mine always tastes best when I soak it in hot water/broth 10 minutes before adding.

    2. User avatar jamaal.bashirian18 says:

      5 stars
Totally get that—saffron can go from “lovely” to “medicinal” fast. I usually start with less (like 1/4–1/3 tsp) and bloom it in a splash of warm broth first. Old saffron definitely tastes sharper.

  67. 2 stars
I tried to make this and the rice got kinda crunchy. I think I kept the heat too high after adding the broth. Still edible, just not perfect.

  68. 3 stars
I think I messed up—my chicken came out kind of dry. Maybe I cooked it too long after browning? The rice part was great though, so I’ll try again carefully.

Just okay. Didn’t wow me, but it was edible. Might add more spices next time.

    1. User avatar anonymous_hacker says:

      2 stars
Why add more spices? It’s paella, not a curry! Maybe your taste buds are just too fancy. 😆

    2. 4 stars
I think you should definitely try adding some more spices! I use cayenne and it really kicks it up a notch. 😉

  73. User avatar kacey.wilkinson says:

    3 stars
Not bad at all, but 2 cups of short grain rice for 4 cups broth seems like a lot of liquid? Mine was a little soupy. Might be my skillet size though.

Totally fair question—2 cups rice to 4 cups broth is a bit higher-liquids than some paella takes, but short grain rice can handle it. If your skillet is wider/shallow, it’ll reduce faster; if it’s deeper or the lid doesn’t seal, it can stay soupy. Next time try 3 cups broth or cook a couple minutes longer uncovered at the end.

I tried this but couldn’t find saffron, so I used turmeric instead. Still turned out alright, I guess.

This is the best paella recipe I’ve ever tried! So flavorful and the chicken was juicy.

I totally agree! This recipe is a game changer. My family loved it!

    2. 3 stars
Looks good, but isn’t there supposed to be seafood in paella? Not sure about chicken.

Looks delicious! Gonna try it this weekend. Hope mine turns out just like the pic!

Good luck! I hope it’s as yummy as it looks. Let us know how it goes!

  77. 3 stars
I think paella is supposed to have seafood, not just chicken. Just sayin’.

It was okay. The rice didn’t cook right for me, maybe I added too much broth?

    1. User avatar NAFO.SUPREMACY says:

      4 stars
I had the same issue! I think the broth measurements can be tricky sometimes. Maybe try using less broth next time? It really helps!

  79. 5 stars
I followed it pretty closely and it came out great—nice texture and not mushy. Next time I might toast the rice a minute or two for extra nuttiness.

Pretty good overall, but my rice didn’t quite get as tender as I wanted after 30 minutes. I think my broth was simmering a little harder than low heat. Still tasty!

    1. User avatar keeley.fisher says:

      4 stars
Yeah, that sounds like the heat was the issue. If it’s simmering too hard, the rice can stay a bit firm even though the flavors are still good. Next time, I’d try closer to a gentle simmer and maybe add a splash more broth if it looks dry.

I dunno, I’m not into peas. Can I leave them out? Don’t wanna ruin the whole dish.

    1. 5 stars
You can totally leave out the peas! It won’t ruin it, just adjust the cooking time a bit. I’ve made paella without peas before, and it was still delicious!

  82. User avatar jamika.rodriguez82 says:

    5 stars
Yummy! Chicken was tender and the spices were perfect. Will definitely make again!

  83. User avatar margorie.mcglynn2010 says:

Pretty good! My only issue was the rice took closer to 35 minutes, but that might’ve been my skillet. Texture was nice and the peas were a great finish.

This paella is amazing! So flavorful and the chicken is so tender. Loved it!

I’m not sure about using frozen peas late—mine went a little mushy. Also, I accidentally used regular paprika and it still tasted okay, but not the same vibe.

  86. 1 star
Awful sorry—my whole skillet burnt. Also I used cauliflower rice and it was a disaster lol.

  87. 3 stars
I dunno, I think saffron is overrated. Couldn’t taste it much. Rice turned out sticky.

  88. User avatar Falmer Warmonger says:

    5 stars
This was honestly so flavorful. The saffron really makes it taste “real” somehow, and browning the chicken adds depth. I’ll be making this again.

  89. 5 stars
This recipe is amazing! I made it for my family and they loved it. Tastes just like the one from my grandma’s kitchen!

  90. User avatar leopoldo.hayes32 says:

I don’t understand why it has saffron in the recipe. Is it really needed? Mine turned out just fine without it.

  91. 4 stars
Turned out good, but my rice took longer than 30 minutes—had to add a splash more broth. Still, the browned chicken made it worth it.

  92. User avatar vania.kessler says:

Boring. Just another chicken recipe. Nothing special about it.

I was skeptical about using short-grain rice with this method, but it worked. The flavor is solid even without seafood. Family asked for seconds.

  94. 1 star
My grandma always made paella with shrimp, so this chicken version just feels wrong to me.

  95. User avatar Jarvis Tremblay says:

Super easy and quick! Made this in about 40 minutes. My kids even helped!

    1. 4 stars
That sounds amazing! I love when meals are quick and the kids can get involved. Do you think it would taste good with shrimp too?

  96. 4 stars
Yum! I just used normal rice, and it still worked. Better than leftovers!

  97. User avatar steve_maga says:

I don’t usually cook with saffron because it’s expensive, so I skipped it (yeah, I know). Still tasted okay, just less “fancy”.

  98. User avatar Duncan Idaho says:

I don’t know about “paella” since it’s more like chicken rice than Spanish paella with seafood and all that… but it tastes good. My family ate it fast.

  99. 5 stars
The seasoning is on point. I added chopped fresh parsley at the end and it popped. Would make again for sure.

Fresh parsley is such a good move—like adding that last little zing. Glad it turned out great!

The smoked paprika + saffron combo? Wow. My whole kitchen smelled like something fancy. I served it with lemon wedges and everyone went back for seconds.

  101. User avatar Spider Worker says:

Meh. Tasted more like chicken rice than paella. No wow factor for me, and I didn’t get much color. Maybe I should’ve added more saffron?

Made this last night and it was seriously comforting. The saffron smell is so good—even though I was worried I’d mess it up. I used a bit more paprika and it turned out flavorful.

    1. 5 stars
Love hearing this! The saffron really is the star—glad it still smelled amazing even with your tweaks. 😊

Comforting is the word. I always worry saffron is “too fancy,” but it somehow comes out cozy and fragrant. Nice job using extra paprika!

  103. User avatar vicki.fahey32 says:

My family loved it. The saffron smell while it cooks is unreal. I added a squeeze of lemon at the end and it totally perked everything up.

  104. User avatar ethyl.daugherty87 says:

Made it exactly as written and it was honestly a win. Chicken browned great, and the veggies stayed nice. Next time I might add a squeeze of lemon at the end.

  105. User avatar gayle.roberts66 says:

Absolutely delicious. My family asked for seconds, and I didn’t even tell them it was from a recipe online. Great comfort food.

  106. User avatar Samwise Gamgee says:

I’m skeptical about the frozen peas part—usually I add them at the end for texture, but 5 minutes might be too long. Mine turned a bit soft. Next time I’ll add later.

  107. 2 stars
It was okay but not “paella” to me. No chorizo, no saffron kick, and I didn’t see any socarrat. Kinda bland, sorry.

  108. User avatar danilo.ebert81 says:

Chicken paella? More like chicken rice skillet, haha. Jokes aside, it’s delicious. I’d definitely make again, especially for meal prep.

The smoked paprika + saffron combo is awesome. I used regular paprika once and it wasn’t the same. Solid weeknight paella vibes.

  110. 3 stars
I followed it exactly and it turned out pretty bland until I tasted and added more salt. Once I adjusted, it was solid. Not super complex, but works.

  111. User avatar Hasimir Fenring says:

I accidentally used long-grain rice once and it went weirdly mushy. With short grain like the recipe says, it’s way better—learned my lesson 😅

    1. User avatar Loonquawl and Phouchg says:

      5 stars
Yes!! Short-grain is key for that nice, creamy/softer texture. Long-grain just doesn’t absorb the broth the same way—mushy is exactly what happens 😅

    2. 4 stars
I did the same but blamed my broth lol. Next time I’m definitely using short grain. Also 25-30 min feels a little quick—did you keep it totally covered?
