Ingredients
  

  • 1 package cauliflower gnocchi approximately 12 oz
  • 1 lb Italian sausage casings removed
  • 1 onion diced, medium
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 3 cups kale chopped
  • 1 cup heavy cream
  • 1 teaspoon red pepper flakes optional
  • to taste salt
  • to taste black pepper

Instructions
 

  • In a large pot, cook the Italian sausage over medium heat until browned. Remove and set aside.
  • In the same pot, add the diced onion and minced garlic. Cook until onions are translucent.
  • Pour in the chicken broth and bring to a boil.
  • Add the cauliflower gnocchi and cook according to the package instructions.
  • Return the cooked sausage to the pot and add the chopped kale. Simmer for about 5 minutes.
  • Stir in the heavy cream and red pepper flakes, if using. Season with salt and black pepper to taste.
  • Let the soup simmer for an additional 5 minutes, then serve hot.

    Not bad, but I expected more “tomato-y” Toscana flavor? There’s no tomatoes here, so it’s more like sausage cream soup. Still tasty though.

    Too many steps, too many dishes. Also I don’t get why you boil the broth first—why not just cook everything together? Might be okay but it’s a pain.

      I tried something similar and it turned out kinda watery, so I think next time I’ll cook the gnocchi a bit less and then add kale last. Also garlic… always more garlic 😂

    I messed up step 4 and boiled the gnocchi too aggressively. It foamed and then everything looked cloudy. Flavor was good, presentation… not so much.

      Cloudy soup is usually “too much starch” or you boiled it like pasta water. Also step 4 says cook to package instructions, but people miss that it might be like 2–3 min, not a full raging boil. Maybe lower heat + don’t stir too much so it doesn’t break.

      Oh no—boiling too hard can definitely make gnocchi go cloudy and foam-y. Next time try a gentler simmer (like a slow bubble) and add a splash less broth if it seems to over-expand. Glad the flavor still came through though!
