Buffalo Chicken Stuffed Peppers

September 20, 2024

Buffalo Chicken Stuffed Peppers are a bold and flavorful twist on the classic stuffed pepper. With spicy buffalo sauce, tender chicken, and a cheesy, creamy filling, these peppers are both satisfying and exciting, making them the perfect meal for those who love a little heat. The combination of spicy, savory, and creamy flavors, all tucked into a sweet bell pepper, creates a balanced and delicious dish that’s perfect for lunch, dinner, or game day.

What makes these stuffed peppers so special is how they blend the familiar, comforting taste of buffalo chicken with the wholesome crunch of a bell pepper. The filling is typically made with shredded cooked chicken, creamy cheese, and buffalo sauce, offering that familiar spicy kick with a rich, cheesy texture. The peppers themselves hold the filling perfectly, adding their own sweetness to balance the heat and ensuring every bite is satisfying.

This dish offers all the flavors of buffalo chicken wings but without the mess, making it a perfect option for those looking for a lower-carb or healthier alternative. The stuffed peppers are also incredibly versatile. You can adjust the level of spiciness by adding more or less buffalo sauce, and you can even make them milder with a dollop of ranch or blue cheese dressing on top.

Not only are they tasty, but Buffalo Chicken Stuffed Peppers are also a great make-ahead meal. The filling can be prepared in advance, and the peppers can be assembled and stored in the fridge until you’re ready to bake them. They also make for excellent leftovers, and the flavors continue to meld as they sit.

Whether you’re looking for a hearty weeknight dinner, a flavorful appetizer for a party, or a satisfying meal to serve at a gathering, these stuffed peppers deliver on taste and fun. The spicy buffalo chicken filling paired with the sweetness of the peppers creates a perfect balance of flavors that will keep you coming back for more.

I don’t know about stuffing peppers like this. Isn’t it just a bit too much? I mean, buff chicken is great but in a pepper?

Perfect for game day! Can’t wait to serve these at the next party!

I don’t know about using ranch dressing with buffalo sauce. Seems kinda weird to me.

  4. 2 stars
This looked so good, but I messed it up. Cheese burnt on the top, sad face. 😢

not a fan of peppers but needed to make dinner fast. They tasted alright but next time I’m just gonna use tortillas instead.

    1. User avatar Questular Rontok says:

I think you should give the peppers another try! They can be really good if cooked right. Maybe spice them up more next time?

Y’all gotta try this!! So good and easy to make, wow!

    1. 5 stars
I made this and it was awesome! Super easy and full of flavor! Thanks for sharing!

Does it have to be bell peppers? Can I use other vegetables? 🤨

    1. User avatar deonna.kub25 says:

      5 stars
You could totally use zucchini or even eggplant! Just cut them the right way. 👍

  9. User avatar melba.beier61 says:

Wow, I made these for a party and they were gone in minutes! Everyone asked for the recipe. Thx!

  10. User avatar oPandariaNo says:

Made these tonight and they were a hit. The peppers stay nice and tender, and the buffalo + ranch combo is perfect.

  11. User avatar anika.dubuque2014 says:

    1 star
Why not just use regular chicken instead of buffalo sauce? Sounds dumb.

  12. 5 stars
Not gonna lie, buffalo + pepper sounds weird, but my family ate it in like 10 minutes. Would definitely recommend.

  13. User avatar warren.okuneva60 says:

    3 stars
Not bad, but I think the sauce was a bit much. Maybe less buffalo next time?

  14. 1 star
Too spicy for me 😅 I also forgot the black pepper and it still tasted kinda fine? Weird.

  15. 3 stars
this recipe is not for me. i tried it and the peppers were still hard. maybe i did smth wrong? not sure. 3 stars.

  16. 3 stars
Mine came out kinda bland until I added extra salt—probably user error, but still. After that, it tasted way better.

  17. 4 stars
Pretty solid idea. I followed it mostly, but my peppers needed like 15 more minutes to get tender. Flavor was still great though—cheese + buffalo is always a win.

  18. User avatar anonymous_hacker says:

    3 stars
Too spicy for me. Couldn’t finish. Maybe less buffalo sauce next time.

  19. User avatar errol.lubowitz72 says:

    5 stars
These were amazing! Chicken and buffalo sauce together just works. Definitely making them again!

  20. 3 stars
1 tsp salt seems like a lot? I ended up under-salting. Still decent, but I’m not fully convinced.

  21. User avatar Dwarven Centurion says:

    5 stars
These turned out so good—juicy peppers with that spicy buffalo kick. I used extra ranch because I’m greedy, and it was perfect. Definitely making again.

  22. 4 stars
Yummy! My kids loved them too. I even added some extra veggies to the mix. 🙂

  23. User avatar lilli.rau1989 says:

    1 star
This is not healthy!!! Too much cheese and sauce. Don’t you guys think about the calories?

  24. User avatar rosalba.cartwright says:

    4 stars
The prep is quick, but 35 minutes total felt short for my peppers. I’d recommend checking tenderness earlier.

    1. User avatar yong.murray5 says:

      4 stars
I feel like 35 min is fine *if* the peppers are smaller… but yeah, large bell peppers can be firm. Maybe half-bake them next time? Otherwise they taste a little raw to me.

    2. 5 stars
Totally agree—mine always need a bit longer depending on how thick the pepper walls are. I usually start checking around 20-25 min for tenderness.

  25. User avatar jason.king12 says:

    4 stars
I accidentally used 1 cup ranch instead of 1/2 and… it was still good? Kinda creamy. Maybe I’m broken lol.

  26. 5 stars
I used brown rice and added extra garlic. Super filling and the cheese on top caramelized a bit. Would make again.

  27. User avatar christoper.veum1998 says:

    5 stars
Absolutely loved this recipe! 😍 The flavors are amazing and it was super easy to make. Will definitely make again!

  28. User avatar christoper.johnson says:

    4 stars
4 stars for flavor but I burned my mouth! Watch out with that buffalo sauce!

  29. User avatar noe.kerluke says:

    2 stars
Too much chicken! Should be called chicken with peppers, lol. Next time, I’ll use less chicken for balance.

  30. User avatar otha.conroy says:

    3 stars
Not bad, but 375°F feels a little low for halved bell peppers. Mine came out a bit firm. Also I accidentally used all the buffalo sauce at once… still tasty, just messier.

  31. User avatar richie.roob says:

    4 stars
Yum! I added some chopped celery for crunch, turned out great!

  32. User avatar emilio.quigley95 says:

    4 stars
Good idea, but mine were a little dry at 25 minutes + 10. Next time I’ll add a splash more buffalo sauce or cook the peppers slightly longer. Still tasty though!

    1. User avatar tasia.towne says:

      5 stars
Totally makes sense—those peppers can be stubborn at 35 mins. I usually add a few extra minutes or pop a little foil back on if they’re browning too fast.

  33. User avatar taylor.heidenreich78 says:

    4 stars
Garlic powder and onion powder are fine, but I think it needs something fresh too—like green onions. Tastes good though.

    1. 4 stars
I usually add diced celery or even a little lime juice at the end. Fresh makes buffalo taste less one-note. Wouldn’t even need much.

    2. User avatar Geraldine Langosh II says:

      5 stars
Totally agree—garlic/onion powder is great, but something fresh like sliced green onions would brighten it up. Glad you liked it though!

  34. User avatar Dr. Lilla Ryan says:

    5 stars
Yummy! Just made it!! But I forgot the olive oil, oops! Still came out fine. 😋

  35. User avatar devin.kirlin says:

    3 stars
Followed the recipe exactly and it came out bland until I tasted. I think 1/2 tsp salt might be low depending on your chicken/ranch/buffalo brand. Added extra black pepper and it woke up.

    1. User avatar wellRespected says:

      5 stars
This! Buffalo flavor can be punchy, but the peppers + rice definitely need seasoning. Glad the extra pepper helped.

  36. User avatar christia.botsford2015 says:

    2 stars
I don’t really get why you’d mix ranch and buffalo together… just seems like overkill. I’ll stick to my plain chicken, thanks.

  37. 2 stars
Ranch + buffalo in stuffed peppers sounds like a mashup of two good ideas… but I’m not sure it’ll be better than just eating wings. The recipe is okay though, just not my thing.

    1. 5 stars
Honestly I like this idea more than wings sometimes—stuffed peppers feel like a whole meal in one. The buffalo + ranch combo is undefeated.

  38. User avatar Prostetnic Vogon Kwaltz says:

    3 stars
So easy to make, but my kids didn’t like the buffalo sauce. They’re picky eaters… 🥴

  39. User avatar shad.lang1989 says:

    2 stars
Why use ranch AND buffalo? It’s too much dairy/heat for me. Flavor is okay, just heavy.

    1. 3 stars
Totally disagree a bit 😅 Ranch is like the “cooling” factor. But if you feel it’s heavy, you can use more buffalo and less ranch, or even use a lighter cheese. Still tasty though.

    2. User avatar stanton.green2018 says:

      5 stars
Yeah, I get what you mean. Ranch + buffalo can get super rich fast. I usually cut the ranch in half (or swap it for plain Greek yogurt) and it’s way lighter without losing the flavor.

  40. User avatar helena.jast37 says:

    5 stars
I loved it!!! So spicy and cheesy! 💖

  41. User avatar sarita.batz1998 says:

    2 stars
I thought it was too tangy, my kids didn’t like it at all. Won’t be making again.

    1. User avatar hellen.trantow1996 says:

      4 stars
That’s too bad! I love the tang, but I guess kids have different tastes! Maybe try reducing the buffalo sauce next time?

  42. User avatar elvis.kuphal1957 says:

    1 star
Blaah, too much work for stuffed peppers. Just order pizza instead.

    1. User avatar wellRespected says:

      4 stars
I totally get that! Sometimes cooking just feels like too much for a weeknight. Pizza is always a good fallback!

    2. 3 stars
Nah, stuffed peppas are way more tasty than pizza. Plus, you know what goes in ’em!

  43. 4 stars
Good recipe, but I used ground turkey instead of chicken and it was still yum.

  44. User avatar skye.stanton1967 says:

    4 stars
Used quinoa instead of rice and added some black beans. Delicious!

  45. User avatar Vroomfondel says:

    4 stars
One star… just kidding 😂 It’s actually really good. I used spicy buffalo and it slapped. My family ate them in like 5 minutes.

  46. User avatar robert.watsica says:

    4 stars
I don’t really like ranch, so I left it out and added more cheese. Still turned out great!

  47. User avatar israel.parker says:

    5 stars
These are amazing! My family devoured them! Will definitely make again.

  48. User avatar gale.west66 says:

    2 stars
Just okay. The peppers weren’t all that great? I don’t know, I didn’t like them. 🙁

  49. User avatar zoe.shields27 says:

    2 stars
Way too much buffalo sauce for my taste. Next time I’ll cut it in half and add more cheese. Otherwise the filling was fine and the bake time mostly worked.

  50. User avatar jimmie.hermiston says:

    1 star
Didn’t have ranch dressing, so I used mayo. It was kind of gross. Wouldn’t recommend that swap.

    1. User avatar alda.oconnell says:

      2 stars
I dunno, mayo can be good sometimes! I thought ranch was just a dressing anyway. Can’t be that bad.

    2. User avatar bree.boehm91 says:

      5 stars
Using mayo instead of ranch? That won’t work at all! Ranch has that tangy flavor that mayo just lacks. Best to stick to the recipe!

  51. User avatar long.wilderman says:

    3 stars
This is kinda spicy… like, I didn’t think it would be this hot with the buffalo sauce. My kids said “nope” but I ate the rest. Might reduce buffalo sauce next time.

  52. User avatar leda.hermann says:

    5 stars
Absolutely delicious! I made these for game night and they were a hit! Will definitely make again.

  53. User avatar reginia.pacocha82 says:

    5 stars
These are AMAZING! I could eat them every day. 😍

  54. User avatar dawne.braun says:

    5 stars
These are a great weeknight twist on buffalo chicken. I used regular hot sauce when I ran out of buffalo sauce and it still turned out awesome.

  55. User avatar vania.herman3 says:

    5 stars
    Love this! 🔥

    1. User avatar Thufir Hawat says:

      4 stars
Sounds good but wouldn’t 375°F make the peppers kinda soft? I feel like mine needs longer or I pre-blanch first. Still, gonna try it.

    2. User avatar Lucius Kshlerin says:

      5 stars
Right?! 🔥 The buffalo + ranch combo is seriously so good. I’ve made these with leftover chicken and they disappear fast.

  56. User avatar yevette.schimmel says:

    3 stars
Buffalo sauce plus chicken, cannot go wrong. But I’m not a fan of the peppers. I’d rather just eat the stuffing. 3 stars.

  57. User avatar abe.hoeger says:

    2 stars
Took too long to bake. I was starving! Next time, I’ll just order pizza.

  58. User avatar Leto II Atreides says:

    4 stars
Pretty solid idea. I’m not usually a pepper person but the chicken/rice filling worked great. Next time I might add some celery or green onions for crunch.

    1. 5 stars
Totally agree—buffalo + rice is a sneaky good combo. I’ve also added green onions before and it really wakes it up.

  59. User avatar Ganondorf says:

    1 star
This was nasty. Who put ranch and buffalo sauce together? Never again. 😤

  60. 5 stars
Who knew healthy could taste so good! Just wow, a party in my mouth!

  61. User avatar samira.ferry68 says:

    4 stars
My kids gobbled these up! Healthy and tasty, a win win. Plus, it made great leftovers!

  62. User avatar The Allitnils says:

    5 stars
Made this for dinner last night and it was a hit! Everyone loved it, will definitely be making again. 😍

  63. User avatar ross.wiegand38 says:

    4 stars
Pretty tasty, but I think 375F is a little low—mine took longer than 35 minutes to get tender. Still worth it though.

  64. 2 stars
Mine looked nothing like the pic. Maybe I did something wrong? What is ranch dressing anyway?

    1. User avatar marlin.ortiz2025 says:

      4 stars
Don’t worry! It happens to the best of us. Ranch dressing is just a creamy salad dressing, you can try it next time.

    2. User avatar suspiciousCommentator says:

      3 stars
Maybe you used the wrong kind of peppers? Ranch is like a white sauce with herbs, really confusing tho.

  65. User avatar mozell.predovic23 says:

    5 stars
Soo good! Quick meal for busy nights. Thanks for sharing!

  66. User avatar Falmer Spellsword says:

    4 stars
I’m skeptical about stuffed peppers with chicken + rice. But I tried it anyway and I was pleasantly surprised. The ranch helps a lot, not just heat.

  67. User avatar herman.marks98 says:

    4 stars
Pretty solid and easy. I was worried 25 minutes wouldn’t soften the peppers, but it worked out for my oven. Next time I’ll maybe par-roast them a bit longer for extra tenderness.

  68. 5 stars
These turned out so good—juicy peppers and that buffalo + ranch combo is perfect. I used a little extra cheddar on top and didn’t regret it.

  69. 4 stars
Super easy and the flavors really pop. Next time I’ll roast the peppers a few extra minutes first so they’re a bit softer.

  70. User avatar hyo.hickle says:

    3 stars
Tried this recipe and it turned out alright, but not really spicy like I hoped. Maybe add more buffalo sauce next time?

  71. User avatar Orange Dartwing says:

    2 stars
Didn’t work for me. Mine got all mushy and the peppers were kinda tasteless. Maybe I overcooked? 🤷‍♂️

  72. 4 stars
👍 Delish! Gonna make this for potluck. Bet everyone will love it!

  73. User avatar alphonse.botsford says:

    4 stars
I’m not usually a ‘stuffed pepper’ person, but this was pretty addictive. The ranch + buffalo combo is doing the most (in a good way).

    1. 5 stars
Okay this combo sounds dangerous 😅 buffalo + ranch is always a win. I’m definitely trying it!

  74. User avatar davis.denesik1990 says:

    4 stars
Not gonna lie, I thought it would be too spicy, but it balanced out with the ranch and cheddar. Still, I’d reduce buffalo sauce a bit if you’re sensitive.

  75. User avatar Trin Tragula says:

    5 stars
My kids ate them without complaining, which is basically a miracle. They said it tastes like “chicken wings but in peppers.”

  76. User avatar pamelia.ruecker58 says:

  77. User avatar wynona.kerluke says:

Wow, this is SO GOOD. Like, how did you even come up with this? Totally my new fav! 🥳

  78. User avatar NAFO.SUPREMACY says:

    3 stars
I dunno… I think these peppers need somethin’ else. Too spicy for my kids and not enough cheese.

  79. User avatar vesta.harber5 says:

    5 stars
These were AMAZING! My entire family loved them, especially my kids. Will definitely make again!

    1. 5 stars
So glad to hear your family enjoyed it! My kids are picky eaters, but maybe I should try this. What kind of chicken did you use?

  80. User avatar kizzie.crist says:

    5 stars
omg!!! so good, my kids loved them too; best meal ever! 🙂

    1. User avatar jewell.kessler25 says:

      2 stars
Really? I tried it and it was kinda bland for me. I expected more from the buffalo sauce honestly.

    2. User avatar neville.bednar81 says:

      5 stars
Yay! So glad to hear that your kids loved it! These stuffed peppers are a hit in my house too! 😄

  81. User avatar ariana.schmeler38 says:

    4 stars
Yummy! I put more ranch and less buffalo sauce. Very delish!

    1. User avatar bradly.raynor says:

      5 stars
Sounds yummy! I love ranch, too! Gonna try it your way.

    2. User avatar cornelius.walter says:

      3 stars
More ranch? I guess that’s a twist! But isn’t the buffalo sauce the main flavor? 🤔

  82. User avatar torrie.miller says:

    4 stars
These were pretty good, but why not use blue cheese instead of ranch? Seems more authentic.

  83. User avatar Hotblack Desiato's bodyguard says:

    3 stars
Easy recipe but I found the buffalo sauce way too spicy. Maybe I used too much?

    1. User avatar michale.sipes2004 says:

      4 stars
You might wanna try using less buffalo sauce next time! I think it can be really spicy if you’re not careful. But, the recipe sounds delish overall!

    2. 3 stars
Just eatin spicy food is good! If you like it mild, just don’t use too much. But buffalo sauce is the best yo!

  84. User avatar lisette.bernhard88 says:

    5 stars
These are winning!!! How did I not think of this before? Chicken and peppers = best combo.

  85. User avatar Spider Worker says:

    3 stars
I’m confused—does it really need 1 cup of cooked rice? I used less and it was kinda dry. Could be my fault though. Flavor was good either way.

  86. User avatar darrin.boyer73 says:

    5 stars
I had no ranch so I used Greek yogurt and it was actually decent. Still had that creamy tang—would make again.

    1. 5 stars
That’s awesome—Greek yogurt is such a smart swap for ranch. I bet the tang hits just right. 😄

  87. User avatar erasmo.dooley24 says:

    2 stars
My mom always said to not mix flavors like this. Too weird for me. Just stick to basic stuff.

  88. User avatar parker.greenholt says:

    2 stars
Why do people always mix ranch with everything? 😅 I guess it works here, but the flavor felt a little heavy. Still, the cheese topping is the best part.

  89. User avatar roxanna.kassulke59 says:

    3 stars
Not gonna lie, mine were kinda dry even with the extra buffalo sauce. Next time I’ll add a splash of chicken broth or more sauce.

  90. 3 stars
Not gonna lie, 1 cup cooked rice felt a little bland compared to the buffalo sauce. I added hot sauce and more garlic, and then it tasted right.

  91. User avatar houston.schaefer says:

    3 stars
I followed it exactly and mine didn’t get super bubbly. The cheese melted, but the top felt a little dry. Maybe my peppers were too big.

  92. User avatar fredrick.stracke says:

    3 stars
I followed the recip pretty closely but it was missing something. Maybe some additional spices or herbs would help.

  93. User avatar suspiciousCommentator says:

    5 stars
I’m not usually a pepper person, but these slapped. The ranch + buffalo combo is basically unbeatable. Would make again for meal prep.

I’m also not big on pepper, but the stuffing sounds like it’ll carry the whole thing. Gonna try this—meal prep vibes for sure.

Yes!! That ranch + buffalo combo is elite. I’ve made similar stuffed peppers and they always disappear fast 😄

These were amazing! The buffalo flavor was spot on, and the rice made them hearty. Definitely making again.

I was a bit skeptical about using ranch dressing in this, but it turned out surprisingly good! Nice blend of flavors.

I totally agree! The ranch dressing was a game changer for these peppers. Who knew? 😋

Really? Ranch in pepper? Sounds weird to me. I wouldn’t try that.

Love the concept! The instructions are straightforward, and the stuffing holds together well. Great weeknight meal.

Yum! Also, who needs to cook rice? Just use the microwave rice packets! Same thing, right?

Oh man these are so easy. I had to guess on the “large” pepper size cuz mine were more medium, but it still worked. next time I’m doubling the chicken.

Tried these tonight—so good. The buffalo sauce really soaks into the chicken and rice, and the peppers stay nice and tender. I used fresh shredded cheddar and it melted perfectly.

The prep is easy, but shredding the chicken took me longer than expected. If you’re short on time, rotisserie chicken works great.

I totally agree on the shredding—my arms were tired 😅 Rotisserie chicken saves so much time though. These turned out really good and the buffalo + ranch combo is perfect.

Interesting… I used pre-shredded chicken and it still took forever to mix. Also I might be doing it wrong, but mine felt a bit dry after 25 min. Any tips? Still tastes decent.

I think 1 cup cooked rice is too much? It made it a bit filling and the pepper flavor got lost. Next time less rice for me.

These turned out amazing—super flavorful and the ranch + buffalo combo is a win. I used leftover rice and it still tasted fresh. Will definitely make again!

Buffalo sauce in everything is my love language. The cheese got all bubbly like the pictures in my head. Easy weeknight meal.

Yes!! Buffalo + peppers is such a win. The bubbly cheese promise is real 😂

I followed the recipe but my peppers weren’t tender at all after 35 minutes. Maybe my peppers were extra thick? I’ll try par-baking them first.

    1. 4 stars
I think you nailed it with par-baking. Bell pepper thickness varies a lot, and with stuffing inside, they can stay crunchy even when the cheese bubbles.

    2. 5 stars
That sounds super frustrating. If your peppers were extra thick, 35 minutes might not be enough at 375°F. Par-baking 10 minutes (foil on) before stuffing is a great fix—just watch they don’t get too soft.
