Buffalo chicken meatballs are a bold and flavorful twist on a classic party favorite, combining the zesty heat of Buffalo wings with the comforting bite of tender, juicy meatballs. Perfect for game day, casual get-togethers, or even weeknight dinners, they bring all the excitement of a crowd-pleasing appetizer in a bite-sized, mess-free form.
The heart of these meatballs lies in their flavor profile. Ground chicken provides a lighter alternative to beef or pork while still being rich enough to soak up spices and seasonings. Garlic, onion, and a hint of paprika often build the savory base, while the star of the show is, of course, the Buffalo sauce. Tangy, spicy, and buttery, it clings to the meatballs, coating them in a fiery glaze that delivers just the right level of heat.
Texture is just as important as taste. A good Buffalo chicken meatball is tender and moist on the inside with a slight crispness on the outside, allowing the sauce to grip without making them soggy. Each bite is a satisfying mix of juicy meat, bold spice, and that unmistakable Buffalo kick. For those who love a creamy contrast, ranch or blue cheese dressing is the natural companion, offering a cooling balance to the heat.
These meatballs are also incredibly versatile. Serve them as a centerpiece appetizer with toothpicks for easy grabbing, or build them into sliders for a fun spin on game day food. They pair beautifully with celery and carrot sticks, echoing the traditional Buffalo wing platter, but can also be enjoyed over rice, stuffed into wraps, or tossed into salads for a lighter meal with plenty of flavor.
What makes Buffalo chicken meatballs so appealing is their ability to take something familiar and reimagine it in a new way. They carry the spirit of a beloved American classic but make it portable, shareable, and just a little easier to eat. Whether you’re serving a crowd or just treating yourself, these fiery little bites are a surefire way to bring energy and excitement to the table.

I dunno, they didn’t really taste like buffalo chicken to me. Maybe too much bread crumbs?
I found them really bland too. You sure you used enough buffalo sauce? I used like, double and they turned out way better!
I disagree! I thought they were delicious! The buffalo sauce really made it pop. Maybe you just need to adjust the recipe a bit.
Made these for my kids. They devoured them! Will definitely make again. 😍
Yummy!!! 😋 My husband loved them. Thank you!
Super easy to make. I love chicken and this is just yum!
Taste very well! But I forgot garlic… 🤦♂️
Meatballs? More like dustballs! Flavor’s okay, but needed more kick. 🥵
This is not how you make Buffalo anything. In Buffalo we use real sauce, not that store bought stuff!
Had no celery sticks, used carrots instead. Still tasty!
Carrots are a great swap! Glad you liked it! 😊
These were awesome! Perfect spice level.
The recipe was easy to follow, but my meatballs fell apart! Should I add more egg?
Nah, I think it’s cuz of the chicken. Chicken can be tricky. Maybe mix in some more bread crumbs instead?
You might want to add another egg or try using some grated cheese to help them stick together. Good luck!
I’m skeptical about baking instead of frying. Buffalo meatballs sound like a gimmick, but honestly they were decent. Would maybe crisp them under the broiler next time.
These meatballs are amazing! The buffalo sauce gives them such a kick. Will definitely make again!
Why 400°F? I tried 375 once and they were fine, but this time they browned fast. Flavor was great, just watch them near the 20-minute mark.
bleh
I’m usually skeptical of baked “buffalo” stuff, but wow. The flavor is legit and the cook time was spot on for my oven.
I tried these and they were honestly bland until I added more buffalo sauce after baking. The seasoning is fine, but I’d bump up garlic and pepper or use a hotter buffalo sauce next time. Still, easy to make.
WOW! My kids loved them, especially with ranch instead of blue cheese!
Pretty tasty, but I think my meatballs dried out a bit. Next time I’ll maybe do closer to 20 minutes and not overbake. Still definitely keeping this recipe though.
These meatballs were a hit at the party! Everyone loved them. Will def make again!
I didn’t think they would be that good, but wow! Super simple and very tasty! My whole family loved them.
WOOO! These are spicy!! Loved it, but prob too spicy for my grandma lol. I used extra blue cheese dressing yum!
I made these for game night and they disappeared in minutes! Best meatballs ever!
Really? They went that fast? I’m not sure about that, just chicken and sauce? Hmm…interesting.
I’m so glad to hear that! I made a similar recipe and my friends loved them too. Buffalo sauce really is the secret weapon!
IDK, they were kinda dry. I suggest adding a bit more egg or sauce. Just my opinion.
I think they turned out fine! Maybe you just overcooked them a bit? Adding more egg is a good tip though!
Instant pot? no. oven works tho. Easy football food. Kids liked it.
These meatballs are absolutely delicious! I made them for a game day snack and they were gone in minutes. Will definitely make again!
These were okay but kinda salty to me. Maybe my buffalo sauce was already salty, so I’d start with less salt next time or choose a milder sauce.
Meatballs are ok but I added cheese inside. way better. also, I use turkey meat instead, Cuz I’ve heard chicken is bad for health. 😜
I think turkey is healthier, but chicken is fine too! Adding cheese sounds interesting, I might try that! 😋
Cheese? Really? That changes everything! I don’t know if turkey’s that much better than chicken tho.
Easy to follow! My kids ate them all up without complainin, which is rare! Thanks!
Yum! I added more buffalo sauce than required and it was so good, spicy but good! 🙂
These meatballs are a game changer! So flavorful and easy to make!
I think this recipe is a bit confusing. Should I add the sauce before cooking? And where’s the cheese? 🙁
Eh.
These came out juicy and flavorful—400°F for 22 minutes felt spot on. I tossed them in extra sauce and served with celery and blue cheese like the recipe says. Definitely making again!
Meatballs? I thought this was a chicken recipe?? Lol.
Solid recipe. I used panko instead of plain bread crumbs and added a pinch of cayenne for a little extra kick—turned out great. Next time I might bake 2-3 minutes less since my oven runs hot.
OMG this is the best recipe! I can’t believe how simple it is! 10/10!
Never thought chicken meatballs could be this good. Will make again for sure!
I followed the recipe pretty closely and they turned out pretty bland. Maybe needs more spices?
I agree! I think adding more spices could help a lot. Maybe some paprika or cayenne for heat?
Bland? I thought they were great! But everyone’s taste is different I guess.
Made these for game night and they disappeared fast. The buffalo sauce in the mix gives great flavor even without extra. Loved the texture—juicy but not greasy.
Super easy and quick! Even the kids helped make these meatballs. Great family activity!
Not bad, but mine felt a bit dry even though I didn’t overbake. I think 25 minutes was too long for my meatballs. Also, I didn’t have enough buffalo sauce, so the tossing step was kinda sad.
Hmm 20-25 is kinda forever for chicken meatballs, but 25 should still work if they’re small. Maybe your oven runs hot? Or your bread crumbs were drier than expected. Also you only used 1/4 cup in the mix and then tossed—if you don’t have more sauce, yeah it’ll feel sad. I always add extra sauce and bake time by feel, not timer.
Sorry yours turned out dry 😕 I’ve noticed 25 minutes can be a lot depending on meatball size—mine usually hit “done” closer to 20. Also, if the mixture seems dry, a couple extra teaspoons of buffalo sauce in the mix helps keep them juicy. Next time I’d also toss them right after baking with enough sauce to really coat.
I don’t understand how people can call this recipe Buffalo Chicken Meatballs when it’s just ground chicken with a lil sauce. They need more flavor!
I totally get what you mean! I think adding some spices or maybe even some cheese would make them taste better. It’s just too plain as is.
But it’s called Buffalo Chicken Meatballs for a reason. It’s meant to be simple, not a whole flavor explosion. I love them just the way they are!
I think buffalo sauce is overrated. This recipe was alright, but I wouldn’t make it again.
Bad directions in my opinion: ‘toss with buffalo sauce’—okay but how much? I dumped it and got kinda soggy. Still good, just not my favorite texture.
Totally get that. “Toss with buffalo sauce” is vague—next time I’d pour a little at a time. Even 1–2 tbsp can change the texture fast.
Maybe you over-sauced? I usually bake, then brush sauce on top instead of tossing, so they don’t get soggy. Also let them cool 2 mins before sauce.
Meatballs came out too dry for me, followed the recipe exactly. Maybe I should try a different kind of meat.
I hear ya! Ground chicken can be kinda dry if you don’t add enough moisture. Maybe try adding some cheese or more sauce next time? Just a thought!
I don’t know what to tell you. I made these and they were juicy! 🤷♂️ Maybe your oven’s temp is off?
Uhm… 1 lb of chicken and only 1/2 cup crumbs?? I think mine fell apart a little (maybe I made them too big). But the flavor was good.
Lived up to the hype! Perfect for a party. Everyone kept asking for the recipe!
Just ok 😐. They fell apart in the oven. Not sure what I did wrong.
I don’t know, but I think there’s too much buffalo sauce. Can it be spicy without it?
I think you could just leave out the buffalo sauce and maybe add some BBQ sauce. But it won’t be the same, will it? 🤷♂️
Buffalo sauce is what makes them buffalo meatballs! You could try using a mild hot sauce if you’re not into spicy stuff. Just don’t call ’em buffalo then! 😂
These were so good! The buffalo flavor really came through without being too messy. I served them with celery + a little extra blue cheese and it was a hit at my game night.
I was a bit skeptical at first, but these turned out surprisingly tasty! I’ll give them a 4.
Easy peasy! I swapped the buffalo sauce with BBQ sauce and my kids loved it! Yum!
I did it with ground turkey instead and added cheese. So good! 10/10!
Meh. Felt like buffalo-flavored chicken balls. Would eat again maybe but not chasing it.
Totally get that—mine came out pretty “buffalo-y” too. I think next time I’ll add a little extra seasoning or even a splash of hot sauce + a touch of honey to balance it.
These came out really juicy and flavorful. I added a little extra garlic and they still weren’t too spicy. Next time I’ll broil for the last 2 minutes to get more browning.
Mine were good but kinda bland. I followed it exactly, so idk. Maybe my buffalo sauce wasn’t spicy enough? Also I broiled once with chicken and it got too dark fast… but 2 minutes sounds safer. Gonna try again.
Yes! I love that these stay juicy—mine always turn out a little dry with other meatballs. Extra garlic sounds perfect. I haven’t broiled them yet, but I’m totally doing that for the browning.
Pretty solid and easy, but mine came out a little dry at 25 minutes. Next time I’ll check at 18-20 and maybe add a touch less bread crumbs.
I don’t understand the hype. They were way too spicy for my taste and I barely added any sauce!
I totally get you! They can be too much for some folks. Maybe try dialin’ down the sauce next time?
I followed it pretty closely, but mine needed closer to 28 minutes. Flavor was great though—my family still ate them all 😅
I don’t trust chicken meatballs without cheese in the mix 😅. I followed it anyway and they were okay, but I was missing that rich, melty thing. Might try adding blue cheese into the mixture next round.
Not gonna lie, I didn’t have celery so I used cucumber slices. Still tasted awesome. Also, the blue cheese is a must… otherwise it’s just chicken balls lol.
I might be doing something wrong, because mine were a little bland. I followed it exactly but didn’t toss with extra sauce. Maybe that step is doing the heavy lifting.
Not for me. Too spicy/too tangy—like, I couldn’t balance it with the blue cheese enough. My kids wouldn’t touch it.
Doesn’t taste like buffalo chicken. More like flavorless balls of chicken. Not good.
Had a hard time forming the meatballs. Mine turned out flat 😔. Help?
These turned out so juicy for baked meatballs—love the buffalo kick. I tossed them in extra sauce and served with celery + blue cheese and it was basically game-day heaven.
Way too spicy for my taste. I should’ve used mild buffalo sauce. Also I forgot to preheat and they came out dryer than expected.
Not gonna lie, I’m skeptical about buffalo sauce in the mix—thought it might get too wet. But it worked! They held together well.
I was skeptical too, but “held together well” is exactly what I needed to hear. Going to try it—love buffalo flavors, just hate soggy meatballs.
Idk… 1/4 cup buffalo sauce still seems like a lot. Maybe if you use thick sauce? Mine last time got kinda wet inside, but maybe oven time matters.
I tried to “toss” them after baking but it made them a bit sticky and messy (still delicious though). Tip: sauce lightly, not dunk.
Pretty tasty, but next time I’ll add a little chopped celery or even some shredded cheese inside. The flavor is there, just wanted more texture.
I’m skeptical about the bread crumbs ratio—mine felt a little bready instead of juicy. I might try crushed crackers or even almond flour next time.
The instructions are fine, but I wish it said how many meatballs you’ll get. Also 1 inch is hard lol. Still tasty though, just messy rolling.
I’m skeptical about bread crumbs with chicken, but wow—worked. I used hot sauce since I didn’t have buffalo sauce and it still tasted awesome.
These came out super juicy and flavorful. The buffalo sauce really permeates the meatballs—great game-day vibe. I served them with celery and a nice drizzle of ranch/blue cheese and everyone went back for more.
I followed the recipe exactly and they cooked through fine, but 20 minutes was a little short for my oven. I bumped it to closer to 25 and they were perfect.
Mine took way longer too 😅 I swear my oven runs cold. Next time I’ll start checking at 20 and just go to 25-30. Thanks for the tip!
Nice! I think oven temps vary a lot—25 minutes sounds like the sweet spot. Glad they came out perfect.
Really good game-day snack. Next time I might add a pinch of cayenne for more heat, but the garlic/onion powder balance is nice.
Good idea, but my meatballs fell apart a bit. I think my bread crumbs were too dry—next time I’ll use panko or add a splash more buffalo sauce to bind.
Need more sauceeee. Mine were kinda bland until I drowned them in extra buffalo.
Not sure about the bread crumbs amount—mine were a little dry and kind of crumbly. Could be my oven or the brand of crumbs, but still tasty with the buffalo sauce.
Yeah, if your crumbs came out a bit dry/crumbly, that can definitely make the meatballs tighter and less juicy. I’ve found 1/2 cup is kind of “depending” on the brand—trying adding an extra splash of buffalo sauce (like a tablespoon) or even a teaspoon of water/milk to help bind. Also, don’t overbake past the 20-minute mark if they’re smaller meatballs.
Good idea, easy prep. I used gluten-free breadcrumbs and it was still solid. Would definitely make again for parties.
I followed it exactly and they turned out decent. Not mind-blowing, but good for a weeknight. The prep was easy and they reheated well too.
Super easy. My kids ate them (which is rare). I did use Frank’s buffalo and it tasted authentic enough for me.
