Autumn Squash Soup

September 30, 2024

Autumn Squash Soup is the ultimate comfort food for cooler weather, offering a rich, velvety texture and a subtly sweet, nutty flavor that perfectly captures the essence of fall. This hearty soup is made by simmering tender butternut squash with aromatic ingredients like onions, garlic, and a touch of ginger, then blending it all into a smooth, creamy bowl of warmth. Whether you’re looking for a cozy meal to enjoy on a crisp autumn day or a simple, nourishing dish for your weekly dinner rotation, butternut squash soup is a classic that never disappoints.

The key to this soup’s flavor is the butternut squash itself. Roasting the squash before adding it to the soup base brings out its natural sweetness and intensifies its rich, savory flavors. The caramelization that happens during roasting adds a depth of flavor that makes this soup feel extra indulgent, without being overly heavy. Once roasted, the squash is blended with a fragrant mix of onions, garlic, and a hint of ginger to create a smooth, silky base. A splash of vegetable broth or chicken stock helps to thin the soup to the perfect consistency, while a touch of cream or coconut milk adds richness and a smooth finish.

The beauty of butternut Autumn squash soup lies in its versatility. It can be customized with a variety of seasonings and toppings. A sprinkle of cinnamon, nutmeg, or curry powder can deepen the warmth and complexity of the flavors, while a drizzle of cream or coconut milk on top adds a luxurious finish. For texture and added flavor, you can top the soup with roasted seeds, crispy croutons, or fresh herbs like parsley or sage.

Butternut Squash Soup is not only a comforting meal but also a nutritious one. The squash is packed with vitamins, fiber, and antioxidants, making this soup a wholesome and filling option. It can be served on its own as a light lunch or dinner, or paired with a hearty salad, crusty bread, or a grilled cheese sandwich for a more substantial meal.

Whether you’re looking for a quick weeknight dinner or a dish to impress guests, Butternut Squash Soup is a comforting, flavorful, and easy-to-make choice that embodies the best of fall.

I used chicken broth instead of vegetable and it still worked. Honestly it’s hard to mess up squash soup.

That’s great to hear! Chicken broth swaps seem totally reasonable—broth is broth. I agree, squash soup is pretty hard to mess up.

Yum! I didn’t have heavy cream so I used coconut milk. Tastes better than I thought it would! 4 stars.

One star only because my blender nearly exploded when I used it in batches. Be careful, people.

Too bland for me—had to add more pepper and a pinch of cinnamon. Maybe I’m just missing something.

Sounds good, but who has time for all that chopping? I wish it came in a can.

Yummy soup! I like how the nutmeg gives it a different flavor.

    1. User avatar liberal.hero says:

      5 stars
Totally agree! Nutmeg really adds a nice twist to the flavor. I never thought of using it in soup before. I’ll definitely try it!

    2. 2 stars
I dunno, nutmeg in soup seems weird to me. Isn’t that for sweet stuff? Anyone else feel that way?

  17. User avatar genaro.dach97 says:

This soup is divine! Really creamy and flavorful. A perfect fall dish.

    1. User avatar kendal.muller17 says:

Looks nice, but how do you make it without an immersion blender? Can I just mash it?

    2. User avatar donald.murray67 says:

      5 stars
I tried this recipe and it was super good! Way better than store-bought soup. Thanks for sharing!

  18. User avatar elnora.homenick says:

Made this last weekend and it’s honestly so cozy. The nutmeg really makes it taste “real fall” instead of just sweet squash. I blended it smooth with my immersion blender—perfect texture.

  19. User avatar esteban.blanda says:

    5 stars
Yum! The nutmeg is a game changer. I didn’t add cream but still loved it.

  20. User avatar orville.douglas says:

Did I do something wrong? Mine turned out a bit chunky and not smooth like I expected. Help!

  21. User avatar johnathon.kiehn82 says:

    4 stars
Not gonna lie, I was skeptical about nutmeg in soup. But it ended up being the best part. Next time I’ll try roasting the squash first for more depth.

  22. 2 stars
I followed the recipe but my soup turned out runny. Do I need to cook the squash longer or something? 2 stars.

  23. User avatar morris.hammes14 says:

I tried this soup, but my blender broke. It was just chunks, yuck!

    1. User avatar rod.rowe1971 says:

      4 stars
Sounds like a bummer! Maybe try using a food processor next time or an immersion blender? It’s much easier!

  24. User avatar aurora.grant says:

    2 stars
Not gonna lie, I didn’t have nutmeg so I used cinnamon… now it tastes like dessert soup lol. Still edible, but I wouldn’t call it accurate.

    1. User avatar suspiciousCommentator says:

      3 stars
I mean… soup is soup. But cinnamon ≠ nutmeg. Nutmeg is more earthy/warm and cinnamon is sweeter, so yeah it’s not accurate. Did you maybe use too much cinnamon? I think 1/4 tsp would be closer.

    2. User avatar Yooden Vranx says:

      4 stars
Haha “dessert soup” is actually kind of funny 😂 I totally get it though—cinnamon changes the whole vibe. Next time, maybe a pinch of allspice or even a little ginger to mimic that warm nutmeg note.

  25. 4 stars
Pretty good, but I think 1/2 tsp black pepper is a lot for me. Next time I’ll cut it down. Still super creamy even without the cream.

  26. User avatar zena.corwin49 says:

    2 stars
Followed the recipe, but my soup came out kind of thin. Any tips on making it thicker?

  27. User avatar tasia.dubuque36 says:

    2 stars
Not a fan, found it too sweet. I thought squash was savory? Idk, just my opinion.

    1. 5 stars
Too sweet? Really? I love that it tastes sweet! Makes it cozy for winter. I don’t think it’s supposed to be super savory tho.

    2. User avatar melody.greenholt32 says:

      4 stars
I get what you’re saying! Squash can be sweet, but I think the nutmeg adds a nice touch. Maybe try adding more spices next time?

  28. User avatar tomeka.johnston42 says:

    5 stars
Just made it, and it was super easy! But what’s butternut squash? LOL

  29. 2 stars
Butternut squash soup? Not for me. Prefer tomato soup anyday.

  30. 4 stars
I made this soup with pumpkin instead and it turned out ok. 😂 Can I still call it squash soup?

  31. User avatar hilton.bosco51 says:

    2 stars
4 cups of broth seems too much, turned it watery. Not impressed.

  32. User avatar pearle.mueller says:

    1 star
Is heavy cream really necessary?? That seems too fancy for a soup.

    1. User avatar mathilda.senger24 says:

      4 stars
I think heavy cream adds a nice richness, but you could definitely skip it! The squash is already so creamy on its own.

    2. User avatar long.vonrueden48 says:

      2 stars
Fancy?! It’s just soup! Use milk or none if you want, why complicate things? 🤷‍♂️

  33. User avatar jesse.schiller1992 says:

    5 stars
OMG! Best soup ever!!! I could eat this every day!

  34. User avatar sang.jacobi says:

    2 stars
Not sure why you need heavy cream, it’s already creamy enough! Just use more squash.

  35. User avatar mathew.dooley2019 says:

    5 stars
Yummy! Added some cayenne for a kick. So good!

    1. User avatar sandi.bednar51 says:

      3 stars
I never thought of adding cayenne! Sounds interesting, but isn’t that a bit too spicy for a soup? 🤔

  36. User avatar wellRespected says:

    3 stars
This is fine, but I think “1 butternut squash” varies a lot. I ended up with a way thicker soup than expected. Should’ve added more broth maybe. Would recommend checking texture while simmering.

  37. User avatar Jessica Atreides says:

    4 stars
What’s a butternut? I just used pumpkin. Looked similar enough! Still yum.

  38. User avatar Yooden Vranx says:

    5 stars
I loved it, but my kids thought it looked weird. More for me! I’m making it again this weekend. 5!

  39. User avatar Selena Quitzon says:

    3 stars
I followed the recipe exactly, but the flavor was kinda bland. Maybe needs more spices?

  40. User avatar albertine.mosciski42 says:

    5 stars
This soup is so creamy and delicious! I added a pinch of cinnamon and it was a hit. Will make it again!
