Wild rice salad is one of those dishes that manages to be rustic, elegant, and incredibly satisfying all at once. It brings together earthy flavors, bright pops of freshness, and a hearty texture that makes it just as fitting for a festive table as it is for a simple weekday meal. At the heart of the salad is wild rice, a grain with a nutty aroma and a pleasantly chewy bite. Once cooked, the grains open slightly and reveal a tender interior that absorbs flavors beautifully, creating a perfect base for layers of color and crunch.
What makes this salad shine is the way it balances textures. Crisp vegetables like celery, sliced carrots, or thinly shaved red onion add freshness. Dried fruits, especially cranberries or chopped apricots, bring gentle sweetness that pairs naturally with the earthy rice. Toasted nuts, such as pecans or almonds, contribute depth and a warm crunch, turning the salad into a complete sensory experience. Herbs like parsley or dill brighten every bite, while a citrusy vinaigrette ties everything together with light acidity. The dressing soaks into the rice, giving it a lively, refreshing quality that improves even more as the salad sits.
This dish is beautiful as a standalone lunch, but it also works wonderfully as a side. Its sturdy texture and bold flavors complement rich proteins like grilled chicken, turkey, or grilled salmon. If you’re planning a holiday spread, wild rice salad fits right in, offering something hearty yet vibrant that contrasts heavier dishes. It also holds up well at room temperature, making it perfect for potlucks, picnics, or buffet style gatherings.
When it comes to drinks, a crisp white wine is a natural companion. Sauvignon Blanc enhances the herbal notes and citrus dressing, while Pinot Grigio highlights the salad’s delicate sweetness and fresh vegetables. For a slightly richer pairing, Chardonnay with subtle oak can echo the nuttiness of the wild rice.
Whether you’re hosting a gathering or looking for a fresh addition to your weekly meal rotation, this wild rice salad delivers color, nourishment, and a satisfying mix of flavors in every forkful. It’s simple, versatile, and always a crowd pleaser.

This is a salad??? Looks more like a side dish to me, but I guess if it tastes good, who am I to judge. 🤷♂️
I forgot to buy the parsley and it messed the whole thing up! 🤦♀️
This is just a bunch of veggies and rice, pretty basic 😒
Took me a while to cook the rice but it’s worth it! Mostly. 🙃
This salad is so refreshing! Perfect for summer picnics. 🌞
I totally agree! This salad is a great way to stay cool in the summer heat. 😍
But, like, wild rice? Isn’t that kinda weird for a salad? I usually just use regular rice. 🤷♂️
I don’t like wild rice, is there a substitute? 🤔
Not sure about the olive oil… it might be too much? 🤷♂️
I don’t understand what wild rice is… is it even normal rice? 😅
Soo good! I added feta cheese and it was even better. 😋
Delicious and easy to make! Def making it again! 👍
I tried this recipe last week, and it was a hit! So fresh and tasty. Can’t wait to make it again!
This wild rice salad was a big hit at my family gathering! Fresh and delicious, everyone asked for the recipe. Will definitely make again!
I tried this recipe but my rice didn’t cook right. 🙁 I think I did something wrong. Any tips?
Glad to hear it was a hit! I love how refreshing this salad sounds. Perfect for summer gatherings!
Came out perfect! I added feta for a little extra flavor, yum! 🧀
This wild rice salad is my go-to for summer picnics! So fresh! 🌞
This salad is amazing! I love the crunch of the cucumbers and the freshness of the parsley. I added some feta for extra flavor and it turned out awesome! 5 stars!
Wild rice? Sounds fancy! I substituted for regular rice and it still came out nice. Still confused by the vinegar part though.
I followed the directions but my rice turned out mushy… not sure what I did wrong. Any tips?
Mushy rice is usually from too much water or cooking it too long. Make sure to keep an eye on it next time! Also, did you cover the pot during cooking? That can trap steam and make it mushy.
I dunno, rice is tricky sometimes. I just use the instant stuff now. Much easier!
Salad is okayyy. I kinda just mixed it all together and it looked like a mess. Should’ve followed the instructions better. 1 star.
No one in my family likes wild rice 😒. Used white rice and tossed some grilled chicken in it. Way better!
Wild rice? What’s that? Never heard of it before. Is it like regular rice? I’m not sure about this recipe but might try it someday. 3 stars for now.
Kinda bland for me at first, so I definitely recommend tasting the dressing before mixing. After more pepper and salt it was much better.
Totally agree—mine tasted weirdly flat until I adjusted the salt/pepper. Next time I’m doing a quick dressing taste first like you said.
This salad taste like grass… not my favorite. No offense. 😂
Wow—this tastes fancy but it’s actually easy. I served it with grilled chicken and everyone asked for the recipe. The parsley amount is perfect.
Honestly, I wasn’t impressed. The wild rice was too chewy for my taste. I think I prefer a regular rice salad. Disappointed. 2 stars.
I dunno, I think you need more salt or something… kinda bland.
It was ok, but my family didn’t like the wild rice. Better luck next time?
Maybe wild rice isn’t for everyone! Have you tried using brown rice instead? It’s milder.
So refreshing and easy to make! Will definitely be making this again!
I made it too, and it was a hit at my picnic! Yum!
Not a fan of wild rice. It’s too chewy for me. My kids didn’t like it either. 🙁
So good!! I ate it for lunch two days in a row. The dressing clings really well to the rice.
Agreed—wild rice + that tangy dressing is such a great combo. I’m always surprised how well it clings after chilling too!
Two days in a row?? Bold 😄 I usually mess up the rice and it comes out too chewy. Do you rinse it right before cooking or after? Maybe that’s why the dressing sticks.
Good base recipe. I think 1/4 cup red onion is a lot for my taste, so next time I’ll cut it down. Also mine wasn’t fully tender at 45 min—maybe my rice was older.
Just made it! Had no red onion, used green instead. Still turned out fabulous! 🌿
Just made this for a summer picnic and it was a hit! The colors are so pretty and it tasted refreshing. I’ll definitely make it again! 4.5 stars!
LOL I didn’t even know wild rice existed before this! Made it for my party and everyone loved it. Who knew healthy food could taste good?
Lemon juice? I thought it was for fish or summtin. Don’t know about this salad stuff sometimes.
No offense but wild rice takes forever. By the time it’s done my motivation is gone lol. Still, the salad stayed great after chilling overnight.
Totally get that 😅 Wild rice really is a time investment. I usually start it earlier in the day (or even meal-prep it) and then the salad basically comes together while everything else is cooling. Glad the overnight chill worked out for you—that’s honestly when it hits best.
Yall know wild rice takes longer than normal rice, right? Not sure it’s worth the wait.
The instructions were clear, and the rice came out tender. I did need a splash more water near the end, but that could be my pot.
Eh, it was alright. I expected it to be more flavorful. Think I’ll add more spices next time.
This salad is amazing! Super fresh and tasty. I added some feta cheese and it took it to the next level. Definitely making this again!
The dressing is bright and simple, but I found it a bit oily with the full 1/4 cup olive oil. I used 2–3 tbsp instead and it felt more balanced.
This is a great potluck salad. I brought it to a BBQ and people kept asking for the recipe. I used scallions instead of red onion because I was out, and it still worked.
Yes! Wild rice salads are always a hit at potlucks. I also love that it’s not just “greens + mayo” vibes—your scallions swap sounds perfect. 🌿
Interesting. I’m skeptical about the cook time—45 min for 1 cup wild rice usually turns out kinda chewy for me. Did you rinse it like the recipe says? Either way, glad it worked with scallions!
Made this for lunch and it’s genuinely refreshing. The lemon + vinegar combo really pops, and the wild rice texture is awesome. I let it chill for an hour and it tasted even better.
Honestly I’d replace the wild rice with regular white rice (cooks way faster). Otherwise it’s fine, but 45 mins is too much for me. Also i used apple cider vinegar once and it was okay?
This looks super fresh and not too heavy. I love wild rice salads—nice tang with the lemon + red wine vinegar. Gonna try it with a little feta maybe.
Wild rice salads are the best 😍 The lemon + red wine vinegar combo sounds spot on. I’d definitely add feta too—just a little salty bite would make it pop!
I don’t get why people love wild rice—tastes earthy. Also my cucumber got watery after chilling, so I should’ve drained it.
I messed up the timing and only cooled it for like 10 minutes—ended up kinda lukewarm and the veggies felt softer than I expected. Still tasty though, just not the chill vibe.
Oof, I feel this 😅 Wild rice needs that proper cool-down—10 minutes is basically just “warm salad with hopes.” Softer veggies make sense too. Glad it still tasted good though!
Maybe you should’ve cooked the veggies longer? Like make it warm, then cool? Idk, I always just mix everything while hot and it’s fine 😂 Also 45 mins rice and then chill—do you mean chill in the fridge or just on the counter?
Weird question: can I use quick-cooking wild rice? I feel like the cooking time will change a lot. Otherwise looks tasty and colorful.
I wouldn’t. Wild rice salad is supposed to take forever lol. Quick rice will be too soft and then the whole thing gets soggy when you chill it. If you’re in a rush, maybe just use a different grain instead.
I think you *can* use quick-cooking wild rice, but expect less simmering time. Start checking early—maybe around 20–30 minutes depending on the brand—because regular wild rice really does take ~45. Also make sure it still has that chewy/tender texture so it doesn’t turn mushy in the salad.
Really tasty and refreshing, especially served chilled. I added a bit of feta because I’m me, but the base salad is already great.
Too complicated for me, I prefer just plain ol’ white rice with butter. But my neighbor tried it and loved. So yeah, whatever.
Wild rice in a salad is kinda weird to me… it’s like eating grass lol. But I admit the vinaigrette makes it better than I expected.
Made this for a potluck and everyone kept asking for the recipe. The lemon + red wine vinegar combo is super bright, and wild rice has that nice chewy texture.
One question: does “rinsed wild rice” mean soak it first or just run water over it? I did the quick rinse and it turned out okay, just curious.
Not sure I get the hype—wild rice takes forever and the salad felt a bit… too healthy? Like, no flavor punch unless you really season. But dressing helped a lot once I tasted and adjusted.
Tried it once and it was… fine. The salad is colorful, but it didn’t wow me. Maybe I used too little vinegar.
Simple, healthy, and fast-ish. I wish the recipe mentioned how to cool the rice quicker (like spreading it on a tray).
Yes! Wild rice can take forever to cool. Spreading it on a sheet pan (or shallow baking dish) really speeds things up and helps it not clump.
I think just dumping it straight in the salad is fine too, it’ll cool from the veggies? Also, wild rice is already like brown rice right? 😅
Just made this and it’s super fresh. The wild rice takes a while but the flavor is worth it—cucumber + lemon hits. I added a little feta and it was even better.
I followed it exactly and my rice turned out mushy. Maybe I cooked it too long or didn’t rinse (I did rinse though?). Not sure what happened, but the texture was off for me.
Wild rice takes forever 😅 but the result was worth it. Next time I’ll cook the rice earlier so I’m not waiting around.
Tasty, but I think 1 cup wild rice + 2 cups water might be a little tight for some stoves—mine took closer to 50-55 minutes. Still, the salad was solid and not bland at all.
I followed it pretty closely, but I think I used too much onion. Next time I’ll chop it smaller or use less. Otherwise it was tasty and crunchy.
Hmm I think 1/4 cup onion is already a lot 😅 maybe depends on the onion type? I’d also suggest rinsing/drying cucumber good so it stays crunchy. Wild rice takes forever though, mine was never done at 45 minutes…
Nice! I’ve done the same thing with onion—too much can overpower everything. Your idea to chop smaller or cut the amount makes sense. Glad it still turned out tasty and crunchy!
I followed it pretty much exactly. Loved the crunch from the cucumber and the freshness from parsley. Next time I’ll probably add a bit more salt though because my tomatoes were kinda watery.
Totally agree about the crunch—cucumber + parsley is such a good combo. If your tomatoes were watery, I think adding a little more salt (or even draining/seed-squeezing the tomatoes) would help a lot. Great note for next time!
Good flavor combo, but 45 minutes seems like it might vary by brand of wild rice. Mine took closer to an hour. Still worth it though!
