I used canned corn (because it’s what I had) and it was still tasty, just not as sweet. Also I forgot to grind pepper and it tasted kinda flat until I fixed it.
Good save—canned corn can work in a pinch! Yeah, it won’t be as naturally sweet, so the lime + cilantro probably need a little extra love. Also, flat flavor after forgetting pepper sounds about right. Next time try a pinch of salt too if it happens again.
