The Perfect Ramen Eggs

September 15, 2025

Ramen eggs, often called ajitsuke tamago or shoyu tamago, are one of the most beloved toppings in Japanese cuisine, and for good reason. These soy-marinated eggs bring a depth of flavor and texture that transforms a bowl of ramen into something truly special. With their slightly firm whites and custard-like yolks, they strike a delicate balance that feels both comforting and indulgent. The glossy, amber-stained surface and golden center make them as visually appealing as they are delicious.

What sets ramen eggs apart is the marinade. Typically made with a blend of soy sauce, mirin, sake, and a touch of sugar, the mixture infuses the eggs with layers of umami. As the eggs rest in this savory bath, they soak up a combination of salty, sweet, and tangy notes, all of which seep into the whites and enhance the richness of the yolks. The longer they marinate, the deeper the flavor and color become, making each egg a customizable experience depending on preference.

The texture is where the true magic lies. The whites remain delicate yet firm enough to hold together, while the yolks sit right at that perfect point between soft-boiled and jammy. When sliced in half, they reveal a golden center that oozes slightly without being runny, adding a luxurious element to any dish. This unique consistency makes them ideal for ramen, where they meld with the broth to create bursts of creaminess with every spoonful.

Although ramen eggs are most often enjoyed in noodle bowls, their versatility extends well beyond that. They can be served over rice, tucked into bento boxes, or sliced onto salads and grain bowls. Their umami-rich flavor complements almost any savory dish, making them a staple for those who love bold, satisfying bites.

Part of their charm lies in the ritual of eating them. Cracking into the soft center and letting the yolk mingle with noodles or rice is a small but memorable moment of joy. Ramen eggs remind us how simple ingredients, when treated with care, can be elevated into something extraordinary. They are the finishing touch that turns a good meal into an unforgettable one, delivering comfort, richness, and pure satisfaction.

I followed the recipe but my eggs were still too runny. What did I do wrong? 😕

Why do people love these eggs so much? They are just eggs dipped in sauce! Pretty overrated if you ask me.

  3. 5 stars
These ramen eggs are AMAZING! I made them for dinner last night, and they were a hit! Can’t wait to make them again!

    1. User avatar berneice.thompson says:

I’m so glad you loved them! They really are a game changer in ramen. 😂

They look great, but I always mess up the boiling part. Any tips?

  4. User avatar norris.swaniawski72 says:

    4 stars
Not bad, but the soy sauce flavor was a bit overpowering for me. I think I’ll dilute it more next time.

  5. User avatar ken.hamill96 says:

    5 stars
So easy to make! Even my kids enjoyed them. I didn’t have mirin so I used rice vinegar instead. Still turned out great!

  6. 5 stars
    Eggs! Yum! 🥚🥚

how long does it take for the have good flavors? Can’t wait!

    1. User avatar rene.kuhn60 says:

      5 stars
The flavors really start to develop after about 12 hours, but leaving them longer is better! You’ll love it!

    2. User avatar Dwarven Centurion says:

12 hours? That seems like a long time. Can’t just eat them right away? 🤔

I followed the 6-minute boil and they were perfect—runny yolks, tender whites. Only thing: peeling was kinda stressful, but worth it.

    1. User avatar sibyl.runolfsson14 says:

      5 stars
Yes!! 6 minutes is the sweet spot. I’m always scared about peeling but the runny yolks make it worth it 😄

    2. User avatar Yiga Clan says:

      4 stars
Mine were good but i guess i overcooked mine? yolks a little less runny and my peeling was a mess lol. Still tasty tho—next time i’ll do ice bath longer.

  9. 5 stars
These ramen eggs are fantastic! I love how simple the recipe is. I’m definitely making these again.

  10. User avatar monty.brakus says:

    4 stars
Quick tip! If you drop eggs in boiling water too fast, they crack! Learned that the hard way. 😂

  11. User avatar jannet.mueller says:

    4 stars
Wow, I made these for my family and they loved them! Better than the ones at my favorite ramen shop!

  12. User avatar ShanksOnePiece says:

I followed the recipe exactly, but my eggs turned out rubbery. Not sure what I did wrong.

    1. User avatar liberal.hero says:

      3 stars
Rubbery eggs? That’s weird. I thought they was supposed to be soft and creamy. Maybe you didn’t use fresh eggs? 🤔

    2. User avatar quincy.kautzer says:

      4 stars
Sounds like you might have overcooked them! 6 mins is key, maybe try 5 next time.

  13. User avatar Mr. Edwin Douglas says:

    4 stars
I followed it pretty closely, but my eggs were a little too salty (used dark soy). Next time I’ll dilute more with that optional water.

  14. 4 stars
I always add garlic to my marinade, gives the eggs a kick! This recipe still rocks.

    1. User avatar melvin.spencer96 says:

      5 stars
Garlic in the marinade? That’s genius! I gotta try that next time.

    2. User avatar cristobal.witting38 says:

      2 stars
Not sure about the garlic. Eggs are good as they are, don’t mess them up!

  15. User avatar rickiestmorty says:

    1 star
Ramen eggs? Is that a thing? Sounds weird but I guess I’ll try it??

  16. User avatar moses.gulgowski2004 says:

    2 stars
Honestly I don’t trust the “perfect” part lol. My eggs leaked marinade and the bag got messy, but they were still tasty. Would make again, maybe in a container.

    1. User avatar Ok Breitenberg says:

      2 stars
Wait so you boiled 6 minutes then marinade overnight? Mine always ends up too salty when I do it like that. Also I think the bag leakage might mess up the soak time.

    2. User avatar mammie.wunsch39 says:

      4 stars
Lol same—“perfect” is a marketing word 😂 I’ve had bags get all grimey too. Container definitely helps, and mine still tastes great even when messy.

  17. User avatar chandra.langosh47 says:

    2 stars
I don’t get why people like these so much. They tasted just okay to me. Seems overrated.

  18. 2 stars
Too salty for my taste. Any advice on reducing the soy sauce?

  19. User avatar mohammad.witting says:

    5 stars
Holy moly! How did I live without this recipe? They add so much flavor to my ramen!

  20. 5 stars
Plastic bag method is genius. Cleanup was easy and the eggs soaked evenly. Sesame seeds added a nice vibe.

    1. User avatar derrick.hirthe says:

      5 stars
So glad he loved them! Ramen eggs are such a treat! 🌟

  22. User avatar shaquita.schulist62 says:

    2 stars
Meh. 1/2 cup soy + 1/2 cup mirin seems too intense. Mine tasted more like straight marinade than ramen eggs.

  23. User avatar rubie.heller says:

    2 stars
Took too long to prepare. Is there an easier way? 😒

  24. User avatar morgan.cronin1972 says:

    3 stars
I’m skeptical about using a whole 1/2 cup mirin with that much soy, but it worked. Could be a bit salty for me though—might dilute with a bit more water next batch.

  25. 3 stars
I messed up the peeling lol. The whites tore a little, so the marinade kinda got everywhere. Taste is good regardless. Next time I’ll peel under running water like my grandma says.

  26. 4 stars
I’m not usually picky with eggs, but wow. The marinade actually tastes legit in ramen. I added the chili flakes and it kicked.

    1. User avatar wilton.heaney69 says:

      5 stars
Yes! The chili flakes really wake it up—glad you tried it in ramen. 😄

  27. User avatar clair.rice59 says:

    5 stars
These ramen eggs were delicious! Perfectly soft and flavorful. Definitely a keeper!

    1. User avatar jaye.mcdermott says:

      2 stars
Yeah right, ramen eggs are just boiled eggs with soy sauce. How can they be that special? I’ve had better eggs in my omelet.

    2. User avatar glady.block32 says:

      5 stars
I’m so glad you enjoyed them! It’s amazing how something so simple can taste so good. Can’t wait to try your version!

  28. User avatar Daedric Prince says:

    3 stars
Didn’t have mirin, used apple cider vinegar instead. 🤷‍♀️ Not great.

  29. User avatar yuriko.volkman says:

    4 stars
My bag leaked a tiny bit in the fridge and I panicked, but they still turned out surprisingly good. Sesame seeds next time—didn’t add them this round.

  30. User avatar Saruman the White says:

    3 stars
I tried this recipe but the eggs were too salty, maybe less soy sauce next time? 🤔

  31. 5 stars
Tried these with my instant ramen and the yolks came out perfectly jammy. Soy-mirin balance is spot on. Will do again for sure.

    1. User avatar eusebio.schaefer79 says:

      5 stars
Nice! That jammy yolk is the whole point 😄 What’s your sweet spot—12 hours or closer to 2-3 days?

  32. 3 stars
Soo hard to peel the eggs! 😤 I ended up wasting a couple. Any tips?

  33. User avatar Lucien Ankunding says:

    5 stars
These turned out fantastic! My ramen has never been better! ⭐⭐⭐⭐⭐

  34. User avatar antone.deckow1955 says:

    5 stars
Just 6 mins? Aren’t they gonna be runny? I left mine a minute longer. They was perfect tho <3

    1. 5 stars
I thought the same! But they turned out soft-boiled and delicious. Nice to know your timing worked too! <3

  35. 4 stars
Okay but 6 minutes is kinda scary 😅 I’ve overcooked eggs before. Still, the method worked—cooling in ice bath saved me.

  36. User avatar maribel.bartoletti says:

    4 stars
Pretty easy, but I think 6 minutes is a little too long for my eggs? Mine were more custardy than runny. Still tasty though.

    1. User avatar rey.beatty15 says:

      3 stars
Wait 6 minutes is long?? I always do 3-4 min for runny yolks lol. But hey if it’s custardy and tasty, that’s the main thing. Mine usually float in the bag too, so I shake it mid-marinate.

    2. User avatar everette.cole5 says:

      5 stars
Good catch! 6 min definitely depends on how hot your boil is and the size of the eggs. If yours came out custardy, that sounds like it’s closer to “jammy but set.” Next time I’d try 5 minutes and adjust from there.

  37. User avatar leatha.ankunding93 says:

    1 star
Eggs! Meh. Not for me. ⭐

  38. 4 stars
Very good! The soy sauce and mirin combo work so well together.💖🥚

    1. User avatar lana.dooley says:

      5 stars
I’m glad you liked it! The flavors really do meld beautifully. Have you tried it with any other recipes?

  39. User avatar diana.considine2024 says:

    4 stars
Pretty solid. The 6-minute boil gave me the exact custardy center I wanted. I did notice the eggs were a bit salty without diluting, so next time I’ll add the optional water like suggested.

  40. User avatar donnette.hammes says:

    3 stars
I don’t get why people love these so much… it’s just eggs in soy sauce. Still, the texture is pretty great.

    1. User avatar lindsy.armstrong says:

      5 stars
Fair point—it sounds simple, but the soy-mirin soak is what makes the flavor really sink in. Also the jammy yolk + seasoned whites is the whole magic 😅

  41. User avatar cami.miller72 says:

    1 star
I don’t get why people like these eggs so much. They taste kinda funky to me.

  42. User avatar ashton.marks says:

    3 stars
Honestly, I thought this was gonna be complicated, but it’s just boiling eggs! I think I’ll stick to eating out instead. 😂

  43. 2 stars
kinda bland? like i followed it but it didnt pop. maybe my soy was weak?? idk

  44. 5 stars
Perfect ramen eggs are all about the timing! 6 minutes was spot on. Thank you!

  45. User avatar santina.ryan89 says:

    2 stars
I think 6 minutes is too long. I did 4 minutes and it was better for me. Also I skipped chilli flakes because I’m not trying to suffer.

  46. 3 stars
I followed the recipe but my eggs came out too salty. Maybe I used too much soy sauce? Not sure if I’ll make them again.

  47. User avatar daron.steuber says:

    5 stars
10/10 would recommend. Made some for my friends, they loved it! 😍

  48. User avatar randy.reichert says:

    2 stars
Ramen eggs? Who even eats that? I prefer my eggs scrambled! 😛

    1. User avatar King Vegeta says:

      5 stars
Ramen eggs are amazing! They add a burst of flavor to ramen. You should give them a try!

    2. User avatar glynis.lemke60 says:

      4 stars
Scrambled eggs are fine, but have you even tasted a ramen egg? It’s a whole different experience! 😋

  49. User avatar MAGA2024.Trumpster says:

    2 stars
I tried making these for the first time, but I messed up the boiling time… can the eggs still be good? Asking for a friend.

  50. 5 stars
These eggs turned out amazing! I’ve never made ramen eggs before, but this recipe was super easy to follow. I will definitely be making these again!

  51. User avatar Hasimir Fenring says:

    4 stars
Pretty solid. I didn’t have mirin so I used a sweet cooking wine thing—still tasted decent but not the same. Would recommend using mirin if possible.

  52. User avatar lolita.stark45 says:

    4 stars
    Eggs good! Yum! 👍

  53. User avatar felisa.kirlin says:

    2 stars
I tried this and my eggs turned out kinda brown-ish and the flavor was too sweet. Maybe I used less soy or the mirin was different? Not for me, sadly.

    1. User avatar elroy.huels says:

      2 stars
Ahh sorry it didn’t work for you 😕 Brown-ish eggs can happen if the boil time is a bit longer or if your marinade is stronger/has more sugar. Next time try diluting the mirin with a little extra water, or reduce mirin/soy to taste. Also double-check you used whole eggs, not pasteurized liquid eggs or anything.

    2. User avatar noe.stoltenberg2019 says:

      4 stars
Hmm too sweet is exactly why I never do 1/2 cup mirin 😅 I cut it way down (like 2–3 tbsp) and add a splash more water. Also, boil 6 min is tight—if it’s closer to 7–8 they get darker. Not for me either? I get it. Next batch, less mirin prob fixes it.

  54. User avatar Pizpot Gargravarr says:

    3 stars
Not bad, but mine came out a little too salty even with the optional water. Next time I’ll dilute more or use less soy sauce.

    1. 4 stars
Mine got salty too 😅 I thought the mirin would balance it but nope. Next time I’m gonna try like less soy sauce for sure (or add more water right away).

    2. User avatar johnie.gleichner4 says:

      5 stars
Good tip—soy sauce can vary a lot by brand. I usually start with the water and maybe even a bit more than optional if I’m using a darker/stronger soy. Glad yours still tasted good!

  55. User avatar eldridge.schuster says:

    5 stars
These are the best ramen eggs ever! I added a little garlic powder just for kicks, and it worked great! 🥚❤️

  56. 3 stars
Not bad, but the mirin makes it a little sweet for my taste. I’ll probably cut the mirin in half next batch.

    1. User avatar freddy.harber40 says:

      5 stars
Yeah, totally get that—mirin can push it sweet fast. Cutting it in half is a solid move. You might also try adding a splash more soy (or a tiny bit more water) to keep it balanced.

  57. User avatar cecile.kuhic says:

    4 stars
6 minutes felt risky, but it worked. I added chili flakes and sesame seeds like the recipe says and it tasted like ramen-shop quality.

    1. User avatar arnold.altenwerth says:

      2 stars
6 minutes? Mine were still kinda soft, like not set at all. Also I didn’t have mirin so I used sugar water (don’t judge). Flavor was okay but not “ramen-shop.” Maybe I should’ve boiled longer?

    2. User avatar joe.collins76 says:

      5 stars
Honestly I was nervous too—6 min eggs sound like they could turn into raw yolk soup 😅 But I tried it and yep, perfect jammy center. Chili flakes + sesame is the move!

  58. User avatar Ilban Richese says:

    5 stars
This is my new go-to. I added the chili flakes and sesame, and now my ramen nights feel like restaurant quality.

  59. User avatar helen.fahey88 says:

    5 stars
These eggs are dangerously good. The yolks turn so jammy—perfect with ramen. I did 13 hours and it was spot on.

  60. User avatar mozell.daniel1983 says:

    4 stars
Wasn’t sure about the mirin, but it really adds something special. Just don’t leave them too long in the marinade or they get mushy.

  61. User avatar Granville Schaefer says:

    3 stars
Serious question: do you boil them hard-boiled then marinate, or is it more like soft boiled? Mine set weird at 6 min but maybe my stove runs hot.

  62. User avatar Future Trunks says:

    4 stars
The ice bath step saved me—peeling was way less stressful. Also, using a zipper bag worked great, no mess.

    1. User avatar mae.shields says:

      5 stars
Yes!! The ice bath trick is the real MVP for ramen eggs. I used to struggle so much with the peeling—now it’s smooth every time.

    2. User avatar riley.conroy says:

      3 stars
Huh I tried ice bath but mine still kinda stuck to the shell 😅 maybe I boiled too long? Also I used a ziplock and it was messy somehow—guess I didn’t fully submerge.

  63. User avatar kristel.hartmann says:

    5 stars
I followed it exactly and the flavor was super legit. I added extra chili flakes and it kicked. Would make again.

  64. User avatar Todd Turner says:

    4 stars
Not sure why people say ramen eggs are hard—this is straightforward. Also my kid ate them without complaining (rare).

  65. User avatar mao.kassulke1996 says:

    3 stars
umm i boiled them 6 min but i guess my eggs were tiny? yolk was kinda firm. still good, but not “perfect” for me.

  66. User avatar ALTplusF4 says:

    5 stars
    One word: Perfect.

  67. User avatar Lumberjack says:

    2 stars
Maybe I did something wrong? Mine were hard-boiled, not jammy at all. I think my eggs were really cold or my boil wasn’t rolling.

  68. User avatar Ms. Hosea Altenwerth says:

    2 stars
6 minutes is too short for me—my yolks were more set than jammy. Maybe my stove runs hot? Otherwise the seasoning is great.

    1. User avatar jesus.nikolaus2004 says:

      4 stars
Good catch—6 minutes can vary a LOT by stove and egg size. I usually do 7–8 minutes for more jammy, especially if my burner runs hot.

    2. User avatar dewey.douglas says:

      2 stars
Maybe you overboiled? 😅 I did 6 min once and mine were like hard eggs, not jammy. I think the water was already boiling hard and I dropped them in too fast.

  69. User avatar suspiciousCommentator says:

    3 stars
Not bad, but 1/2 cup soy sauce + 1/2 cup mirin feels kinda salty/sweet to me. Next time I’ll dilute more than 1 cup water.

    1. User avatar drew.bahringer76 says:

      5 stars
Totally get that—soy sauce + mirin can be pretty intense. If you’re sensitive to salt/sweet, try scaling down one of them or adding more water like you said.

  70. User avatar Mordekaiser says:

    4 stars
6 minutes is scary exact. I did 7 because I got distracted and the centers were slightly less custardy, but still good flavor.

  71. 3 stars
Not bad, but the instructions don’t say how full the ice bath should be 😅 Mine cooled unevenly. Flavor is solid once they chilled.

  72. User avatar duncan.ullrich says:

    3 stars
Mine were a little too salty even with the optional water. Next time I’ll dilute the marinade more, but flavor was still good.

    1. User avatar winfred.conroy says:

      4 stars
Good to know! I’ve had that happen when I don’t add enough water—next time I’ll follow your “dilute the marinade more” idea.

    2. 3 stars
Mine always come out salty too, so I started doing like… 1/2 cup soy + 1/2 cup water and it helps. Still tastes amazing though. Maybe 6 min boil too? idk 😅

  73. User avatar candice.simonis says:

    3 stars
I don’t have mirin so I used sweet rice vinegar + a tiny bit of sugar. It wasn’t the same, but honestly it worked for my pantry.

  74. User avatar jenette.brekke76 says:

    5 stars
I let mine go about 2 days and they got so flavorful. My partner said they taste like restaurant eggs. 10/10.

  75. User avatar jake.buckridge99 says:

    4 stars
I followed it pretty closely, but my eggs were a bit too firm at 6 minutes. Next time I’ll try 5:30. Still tasty though!

    1. 5 stars
Nice—6 minutes sounds right for a jammy center, so 5:30 is a solid adjustment. Glad they were still tasty!

    2. 3 stars
Ugh eggs get firm way faster than recipes say. Maybe your water was boiling harder? I do 4-5 mins usually or they’re rubbery. But yeah, still good!

  76. 4 stars
Not bad at all! I forgot the ice bath timing once and they were a little too set, but the soy-mirin flavor was still awesome. Next time I’ll be more careful.

  77. User avatar nikia.metz says:

    4 stars
I don’t get why people obsess over “perfect” eggs—egg is egg. But ok, this marinade is legit. Would make again.

  78. User avatar Bowerick Wowbagger says:

    3 stars
I’m skeptical about 6 minutes being ‘perfect’ for everyone. My eggs were slightly overdone even with a timer, and the marinade seemed strong after one day. Still edible though!

Totally get that—6 minutes can vary a lot with egg size and how vigorously the water is boiling. I usually start checking at 5.5 mins if my stove runs hot. Also yeah, 1:1 soy/mirin can taste intense after a day, so diluting a bit helps.

These turned out perfectly jammy—like restaurant quality. I did 6 minutes exactly and the yolks were still luscious. The soy-mirin combo is spot on.

Terrible. My whites got all weird and tore when peeling. I used fresh eggs and everything… maybe I boiled too hard? Anyway, not for me.

These ramen eggs turned out jammy and super flavorful. The mirin + soy combo is spot on—love how they upgrade basic noodles.

5 stars just for the ice bath tip. I learned that trick in cooking school lol. Jammy yolks every time now.

Okay but question: I usually boil eggs 10-12 min and they still come out kinda jammy?? Maybe my timing is off. Either way, I’m trying your way next time lol.

Love hearing this—ice bath really is the make-or-break step for jammy yolks. 🙌 I do 6 min too and it never fails.

The flavor is good, but the peeling was a pain. I cracked a couple whites. Maybe I need fresher eggs? Not sure.

Mine were a little too salty even though I added water—next time I’ll reduce soy sauce. Still tasty though!

    1. 5 stars
Good catch—soy sauce can vary a lot by brand/salt level. Next time try 1/4 cup soy sauce + 1/4 cup water (or skip the extra water if you already diluting). Glad they were still tasty though!

Huh mine never get salty… but maybe my soy sauce is less salty? Also did you measure the soy sauce “packed” or straight from the bottle? I’d cut back the mirin too if it’s strong.

These came out jammy and flavorful—exactly what I wanted for ramen. The mirin + soy combo is so good. Mine sat overnight and it was perfect.

    1. 5 stars
Yes! These are the best—overnight is the sweet spot. The soy + mirin really makes them taste like restaurant ramen eggs.

Ok so I used less chilli flakes and it still has a nice flavor. 1 tbsp sesame seeds felt a bit much, but the aroma was awesome.

The ice bath step really matters. I rushed it once and the whites were kinda rubbery. This time: perfect.

Tried this for my ramen tonight—those jammy yolks are unreal. The soy/mirin combo tastes super legit. Only tweak: I used a little less chilli flakes. 100% doing again.

I left them for 3 days and the color got super dark. Flavor was intense but kinda overwhelming for me—maybe 1 day would be better.

Tried these with my usual ramen and the yolks came out perfect—jammy like I wanted. The overnight chill is the real magic.

These came out insanely jammy. I did 6 minutes exactly and the yolks were perfect. The marinade flavor is legit—my ramen suddenly tasted “restaurant.” Will make again.

Why bag them?? I just layered them in a container and poured the marinade over. It worked fine. Also I did only 12 hours—still strong flavor.

The instructions are pretty straightforward. Only thing: peeling 7 eggs was a pain (some whites tore), but it still tasted great. Looks a little rough, tastes 10/10.

Yes! The 6-minute boil + ice bath combo is the key. I’ve had the same “torn white” issue if I peel too soon—waiting longer helps a lot. Still, those flavor levels are unreal.

Wait—7 eggs? I always peel mine right after the ice bath but maybe that’s why my whites look all ragged. Also I used ramen seasoning instead of mirin once and it was kinda salty… but your 10/10 line convinced me to try the marinade proper.

I followed the timing and cooling, but peeling was annoying—some whites tore. Still tasted great though, so I’ll try again with fresher eggs.
