  • 2 large eggs beaten

Instructions

      I don’t think it’s “too much” butter—casserole needs fat for the texture. But 1/3 cup + 1/2 cup is confusing; why not just say 5/6 cup total? Also I’m pretty sure you bake it longer than 30-35 min for sweet potatoes to set.

      I did walnuts once and thought it tasted fine tbh. Maybe your casserole got a little more “earthy” than “sweet”? Next time try adding an extra splash of vanilla or a pinch of cinnamon so it’s closer to pecan flavor.

    My topping clumped—maybe I didn’t use soft enough butter. Still tasted good, just looked rustic. I’d make again and just break up the butter more.

      Hmm I don’t know… I feel like using melted butter in the casserole might make it wetter and then the topping clumps anyway? I usually bake without the flour in the streusel—more like just pecans + brown sugar + butter. Still, rustic is fine lol.

      I made it too, but mine turned out kinda sweet-soupy. Maybe I didn’t mash the potatoes well? Still tasty though—streusel saved it. Next time I’ll bake it a couple more minutes.
