Super Moist Banana Bread

May 14, 2025

There’s nothing quite like a slice of super moist banana bread, fresh from the oven. This recipe delivers a tender, flavorful loaf that is the perfect balance of sweet, fruity banana flavor and a melt-in-your-mouth texture. Whether you’re using overripe bananas or just craving a comforting baked good, this banana bread is sure to become a favorite.

To make this banana bread, start by mashing up some ripe bananas. The more ripe the bananas, the sweeter and more flavorful your bread will be. In a separate bowl, whisk together flour, baking soda, and a pinch of salt. In another bowl, cream together softened butter and sugar until light and fluffy. Add eggs one at a time, followed by the mashed bananas, and mix until well combined.

Next, fold the dry ingredients into the wet ingredients, mixing gently to avoid overworking the batter. For an extra layer of flavor, you can stir in some vanilla extract, cinnamon, or even chopped walnuts or chocolate chips. Pour the batter into a greased loaf pan and bake at 350°F (175°C) for about 60 minutes, or until a toothpick inserted into the center comes out clean.

The result? A loaf of banana bread that is incredibly moist on the inside with a golden-brown crust on the outside. The banana flavor shines through, and the texture is soft and tender without being too dense. It’s perfect for breakfast, an afternoon snack, or a dessert to enjoy with a cup of coffee or tea.

Super Moist Banana Bread is simple to make, but the outcome is nothing short of delicious. Whether you enjoy it fresh or toasted with a pat of butter, this banana bread is the ideal way to use up ripe bananas and indulge in a comforting, homemade treat.

Notes

Here are some tips and tricks for making Super Moist Banana Bread:

🍌 1. Use Overripe Bananas

The darker, the better! Bananas with black spots or fully brown skin are ideal—they’re sweeter and more flavorful, which adds natural moisture and richness.

🧈 2. Don’t Overmix the Batter

Once you combine the wet and dry ingredients, stir until just combined. Overmixing develops gluten and can lead to a dense or rubbery texture.

🥛 3. Add a Moisture Booster

A dollop of sour cream, Greek yogurt, or even applesauce helps make banana bread extra moist. Try replacing part of the butter or oil with one of these.

🍫 4. Fold in Extras Gently

If you’re adding nuts, chocolate chips, or berries, fold them in at the very end to avoid deflating the batter.

🌡️ 5. Bake Low and Slow

Bake at 325–350°F (160–175°C) for even cooking. Cover loosely with foil halfway through if the top browns too quickly.

🔍 6. Check for Doneness Properly

Insert a toothpick into the center. It should come out clean or with a few moist crumbs (not wet batter). Let it cool in the pan for 10–15 minutes before transferring to a wire rack.

I tried this recipe and it turned out kinda dry. Maybe I overcooked it? 🤔

    1. User avatar catheryn.stark81 says:

I think it might be the oven temperature. Sometimes those things can be off! Try baking it a little less next time. 😊

Dry? Hmm, maybe you need more butter? But I thought it was super moist! 🤷‍♂️

The flavor is good, but mine was a bit gummy in the middle. I think my bananas were too wet and I might’ve overmixed the flour. Still edible though.

    1. User avatar vicente.smith80 says:

      5 stars
That sounds really similar to what happens when bananas are a bit too wet or the flour gets worked too much—good save calling it edible though! Next time, maybe mash well and stop mixing once the flour disappears; also check for doneness a few minutes earlier since ovens vary.

  4. User avatar bethel.gibson1951 says:

Not really a fan of banana bread. This didn’t change my mind. Too sweet for me.

  5. 5 stars
This banana bread is seriously the best! So moist and delicious! Making it again for sure!

  6. User avatar Eddie the Computer says:

I used regular butter not unsalted and added a pinch of extra salt… oops. It was fine, but next time I’ll follow the recipe better.

    1. User avatar Dr. Nancy Huel says:

      5 stars
Honestly, that sounds like it still turned out great 😄 A pinch of extra salt usually won’t ruin banana bread—just changes the balance a bit. Next time, following unsalted butter + the exact salt amount should make it spot on. Thanks for sharing!

  7. 5 stars
This is the best banana bread recipe I’ve ever tried! So moist and delicious! 😍

  8. User avatar Questular Rontok says:

I only had brown sugar so I used that—turned out darker and extra caramel-y. Texture was still moist, not dry at all.

  9. User avatar chet.windler59 says:

I love this recipe. So easy! I made it 3 times already this week. Can’t get enough! 5 stars!

  10. User avatar norris.ondricka34 says:

Loved the simplicity. I used spotty bananas like the recipe said and it came out perfect at 60 minutes. Will make again.

  11. 3 stars
I dunno, I followed the recipe exactly but mine turned out a bit dry. Maybe I overbaked it? 🤷‍♂️

  12. User avatar val.effertz says:

Easy to make! Just mash, mix, and bake. What could go wrong? LOL.

  13. User avatar Bobby Wolf says:

Pretty good, but I think it needs more sugar. Just my opinion though.

    1. User avatar ulysses.adams1988 says:

      4 stars
I think it might be sweet enough as is, but I guess everyone has their own taste! Maybe try adding a tablespoon more next time?

    2. User avatar Falmer Shaman says:

      2 stars
More sugar? Seriously? It’s banana bread, not a candy! Just enjoy it the way it is!

  14. User avatar Eddie Schmidt says:

    5 stars
The instructions are super clear. I like that it’s just one bowl style-ish. Vanilla + banana is such a good combo. Would make again.

Banana bread? More like banana stone! Didn’t rise at all. What a waste of ingredients. 1 star.

  16. 3 stars
I’m skeptical about “completely smooth” — stirring flour until totally smooth makes me nervous. Still, it worked okay for me.

    1. 4 stars
I always do it like the recipe says—until smooth smooth—and it’s fine? But once my flour clumped and i was like “uh oh” lol. Maybe your bananas were more moist or the egg helped bind. Either way, banana bread forgives a lot.

    2. User avatar water buffalo says:

      5 stars
I get what you mean—“totally smooth” sounds scary. I usually just mix the flour until the streaks disappear and it still turns out super moist. Overmixing is the bigger worry than a few tiny lumps.

  17. User avatar marion.yundt12 says:

    4 stars
This was very moist but I think it needed walnuts. Still good without them tho! 4 stars.

    1. User avatar Ursula Kuhn says:

      5 stars
I totally agree! Walnuts would have been a nice touch. But honestly, it was still delicious! 😋

  18. 4 stars
I swapped sugar for brown sugar and it tasted like bakery bread. Also, I used salted butter once—oops—and it was slightly too salty but still decent.

  19. User avatar burl.hahn90 says:

    5 stars
Made this today and it’s seriously super moist. The banana flavor really comes through, and 60 minutes was spot on in my oven. I added a handful of walnuts and it didn’t mess anything up. Will bake again!

    1. 5 stars
Love hearing this! I’m glad the banana flavor really shines and that 60 minutes worked perfectly in your oven. Walnuts sound like a great add too—did you toast them first or just toss them in?

  20. User avatar oralee.smitham98 says:

  22. User avatar Feral Falmer says:

I followed the recipe, but my bananas must’ve been small? Mine took closer to 70 minutes. Still good though—nice flavor and not dry at all.

  23. User avatar cordell.lebsack says:

    3 stars
Nice banana bread! But too much butter for me, I felt kinda greasy. 3 stars.

  24. 3 stars
Mine came out a bit gummy in the middle after 60 min, but I think I underbaked. Next time I’ll check with a toothpick earlier and maybe tent with foil if the top browns fast.

  25. User avatar lupe.gorczany62 says:

    2 stars
Idk, it was okay. Like banana cake, not bread bread. Also my oven runs hot so I had to lower temp—kinda stressful.

  26. User avatar Hasimir Fenring says:

    2 stars
I don’t know what happened, mine came out really dense and tasted weird. Could have been my oven though. 2 stars.

    1. 4 stars
Maybe you used too many bananas? They can really change the texture if you overdo it. Also, make sure your oven is actually at the right temp! Good luck next time!

  27. User avatar renea.bernhard says:

    4 stars
Mine turned out a tiny bit dense, but still tasty. I think I overmixed the flour (oops) because I was impatient.

    1. User avatar clifton.dietrich says:

      5 stars
Oh no—overmixing flour can definitely make banana bread a bit dense. At least yours still tasted good though! Next time just mix the flour until it’s *barely* combined.

  28. User avatar viki.nicolas says:

    2 stars
Kinda easy but I think too much sugar. Shouldn’t bread be savory? I don’t know… 🤔

  29. 5 stars
This banana bread turned out sooo good! The texture is perfect and it’s super moist. Definitely a 5!

  30. User avatar Orange Dartwing says:

    5 stars
Made this last weekend—sooo moist! I used slightly less sugar (about 2/3 cup) and it still tasted great. Love how simple it is.

  31. 4 stars
5 stars lol — just kidding. It’s actually good! I made it with overripe bananas and it turned out perfect. Next time I’ll add choc chips.

    1. User avatar kay.lakin93 says:

      5 stars
Haha love the honest review 😄 Overripe bananas are definitely the move—might try adding chocolate chips next time too!

    2. User avatar wellRespected says:

      3 stars
I tried this once but my bread was kinda gummy? maybe I used too much banana? Also I baked it longer than 60 mins. Still tasted good though. Chocolate chips might fix it 😅

  32. User avatar ione.mohr1973 says:

    3 stars
Why do people put vanilla in banana bread? Isn’t it banana bread? Lol. Just saying. 3 stars.

  33. 2 stars
I followed the recipe but it fell apart when I took it out of the pan. Sigh. Maybe I did something wrong? 2 stars.

  34. User avatar matthew.johns says:

Banana bread? Never thought I’d like that! But this is amazing! Great with my coffee.

    1. User avatar oliver.pacocha1952 says:

      5 stars
I totally agree! I didn’t expect to like banana bread this much either. It’s like a warm hug in a slice. Perfect with coffee!

  35. 5 stars
This is the best banana bread I’ve ever made! So moist and tasty. Thank you!

    1. 5 stars

    1. 5 stars
I made this and it turned out great! Definitely the best banana bread recipe I’ve tried! 🌟

    2. 3 stars
Hmm, banana bread? Never liked bananas much, but I guess they might just taste good in bread? 🤷‍♂️

  37. User avatar yolonda.gulgowski says:

    2 stars
I don’t get it. My banana bread turned out too dense and soggy. Did I do something wrong?

  38. User avatar basementDweller says:

    4 stars
Pretty good! I was nervous about the 4×8 pan size, but it rose nicely and didn’t sink. Next time I’ll maybe cut the sugar just a touch because it’s a bit sweet for me.

    1. 4 stars
Hmm I think 3/4 cup sugar might be why it’s sweet, but 60 min always feels long in my oven. I usually check at 50. Also did you use super ripe bananas? Mine got really dark and sweet when they were almost black lol.

    2. 5 stars
Glad it worked for you! I also was worried about the 4×8—seems like that size holds the heat just right. Cutting the sugar a touch makes sense; banana bread can get sweet fast. 🌟

  39. 5 stars
This is my new go-to. I cooled it longer on the rack and it sliced way better. Also the smell while baking is insane.

  40. User avatar renate.medhurst says:

    5 stars
Not to be dramatic, but it smells like a bakery. The vanilla really rounds it out. Great weekday bake.
