Stuffed Bell Peppers with Ground Turkey are a versatile and delicious meal that offers a satisfying balance of flavors and textures. This dish is both comforting and nutritious, featuring bell peppers packed with a savory mixture of ground turkey, rice, vegetables, and spices. It’s perfect for busy weeknights, meal prep, or even a healthy dinner to serve guests.
The bell peppers serve as the ideal vessel for this dish. Their natural sweetness complements the savory filling, and their tender, slightly charred texture after baking adds depth to each bite. The ground turkey provides lean protein and a mild flavor that works beautifully with the other ingredients, making it a great alternative to beef or pork in traditional stuffed pepper recipes.
The filling is where the magic happens. Ground turkey is sautéed with onions, garlic, and a mix of spices such as cumin, paprika, and Italian seasoning. Add in some cooked rice, beans, or quinoa for extra texture and fiber. You can also mix in diced tomatoes, corn, and chopped spinach for added flavor and nutrition. For those who enjoy a bit of heat, a sprinkle of chili flakes or a dash of hot sauce can bring a welcome kick.
Once the peppers are stuffed, they are baked until the peppers are tender and the filling is cooked through. The result is a warm, satisfying dish with vibrant colors and layers of flavor. For an extra touch, sprinkle some shredded cheese on top of the peppers before baking, allowing it to melt into a golden, bubbly crust.
Stuffed Bell Peppers with Ground Turkey are not only flavorful, but they’re also a well-rounded meal. They’re packed with protein, veggies, and healthy grains, making them a great choice for those looking for a nutritious dinner that’s both filling and delicious.

Meh. Just meh. I expected more flavor. Maybe I’ll try something different next time.
Absolutely loved this recipe! The flavors all came together perfectly.
Idk what I did wrong. Seemed like too many ingredients, but I followed the steps. 🤷♂️
Idk, but I think you missed somethin’. It’s not just about following steps. Did you taste it, like seasoning?
Don’t worry! Stuffed peppers can be tricky sometimes. Maybe next time try a simpler recipe? Good luck!
Pretty solid recipe. The flavors (tomato + oregano + basil) are on point. I wish the directions said whether to cover the peppers the whole time, but foil did the trick.
Didn’t turn out like the picture. The peppers were hard, and the filling was bland. I added hot sauce to make it better!
These were sooo good! My kids devoured them! Definitely making again.
Too many steps for me. I just wanted something quick. 😩
Not my favorite. I think I prefer my peppers raw… the cooking kind of ruined them for me.
Not gonna lie, I was skeptical about the rice since it’s already cooked. But it worked—texture was nice and not mushy. Next time I’ll use fresh basil too.
Mmm, I think I would add beans next time. Sounds like a good idea, right?
Not the best I’ve made. The turkey was bland. More spices next time!
Not a fan of turkey, I used beef instead and it worked out fine. Still tasted good.
These were absolutely delicious! My family loved them. I will definitely be making these again!
Yumm! 😋 I used leftover quinoa instead of rice – turned out great!
Sounds delicious! 😍 I love using quinoa for a healthier twist. Will definitely try it next time!
Quinoa? Really? That’s not traditional. Rice is better in this, in my opinion.
This seems too healthy for my liking. Where’s the beef?
Meh. I expected more “wow” and it was just okay. Also the measurements feel a little vague like “salt and pepper to taste” is impossible for me 😅
These turned out so good—juicy peppers with a cozy, cheesy center. I used brown rice and it still worked perfectly. Will make again!
So glad they worked with brown rice! I always worry it’ll stay too firm, but your result sounds exactly right. Did you cook the peppers longer at all or keep the same bake time?
Not gonna lie, I was skeptical about using cooked rice—like it might be too mushy. But it actually worked out and the texture was nice. Family liked it!
Not bad, but I think the recipe needs more spice. It was a bit bland for my taste.
I totally get what you’re saying! Adding some chili powder or paprika can really kick it up a notch. I’ll definitely try that next time!
1 pound turkey for 6 peppers seems like not enough… I had extra filling and the peppers weren’t packed. But idk maybe my peppers were huge lol
Made these tonight—so comforting. The peppers came out tender, and the mozzarella got perfectly bubbly. I did add a pinch of chili flakes because why not.
Tasty and uncomplicated. Will make again for sure!
Totally agree! Super easy to make and so yummy! 😋
Quick and easy! I subbed ground beef for the turkey and it worked fine, too.
Really delicious! My kids even ate their veggies without fussing. 🥳
Good! Good! GOOD!!!
Stuffed peppers are great but I hate how they make such a mess. Gave it a 3.
My family loved these. My kids ate them without complaints (rare!). I might swap the mozzarella for cheddar next time for more sharpness.
Wow, love it! Even my hubby who hates peppers liked these! 👍
These are amazing! Loved the flavors and my kids ate them all!
Not sure if my kids would eat those. They can be picky. Is the turkey taste strong?
I’m so glad to hear that! These stuffed peppers are a hit with my family too. They love the cheese!
Yo, could I use chicken instead of turkey? Also, why gotta bake them for so long???
I dunno, chicken just ain’t the same. And 30 mins sounds long for peppers! They should be soft but not mushy, right? Seems weird.
Yeah, you can use chicken! Just cook it until it’s no longer pink like the turkey. And the baking time helps everything get nice and tender and flavors blend together. Trust the process! 😄
Absolutely delicious! My whole family loved them. I did add a bit of chili powder for some extra kick. Will definitely make again!
I think ground turkey is too dry. Next time I will mix with some chicken.
I followed it exactly and it was… okay. The filling tasted a bit bland even with salt/pepper. Next time I’ll add more seasoning or maybe a splash of tomato sauce.
I dunno, just tasted kinda bland to me. Maybe more spices next time?
I totally get what you mean! I added chili powder and it made a big difference. Definitely needs more flavor!
Wow, this is a healthy take on comfort food! It’s easy to make too. Love it!
I think there are too many ingredients. Seems like a lot of work for bell peppers, but I might give it a try.
I followed the recipe, but they turned out way too salty! Maybe less salt next time?
I had the same problem! I think the saltiness can really depend on the ingredients you use. Try using low-sodium options next time. It’ll help a lot!
Pretty solid recipe. The instructions are clear and the turkey/rice mix tastes great. I used brown rice and it needed like 5 extra minutes, but still delicious.
Yummy! I added some jalapeños for a kick. Will definitely make again!
Uhm, can you use beef instead of turkey? My husband don’t like turkey…
Absolutely! Beef would work just fine. Just make sure to drain the fat after cooking it. My hubby loves it that way!
I tried this recipe but it turned out too soggy. Did I do something wrong?
Maybe you added too much liquid with the tomatoes? I always drain mine well.
Soggy? I dunno, they always turn out fine for me! Did you follow the timings right?
I think 375°F is too low for peppers—I baked mine and they still felt underdone. I ended up bumping temp and it helped. Otherwise, good idea.
Stuffed peppers? More like stuffed regrets! Tasted fine but took too long to make. Never again.
This recipe is super easy and delicious! My whole family loved it!
But how can you call this easy? It takes forever to chop all that stuff! And what if you don’t like turkey?
I totally agree! These are super easy to make and my kids gobbled them up. It’s a win in my book!
These came out so good! The peppers were sweet and the turkey filling was super flavorful. I added a pinch of chili flakes too—highly recommend.
Just made this for dinner and it turned out terrible! The turkey was all dry and peppers too crunchy. Not a fan. 😒
I tried this but my peppers were kinda crunchy. Maybe I should’ve cooked them longer?
Yeah, maybe try baking them a bit longer next time! They should be soft, not crunchy.
I’ve always cooked mine for 45 minutes, so maybe that’s why they’re soft for me? Just a thought!
Pretty solid weeknight dinner. I did find the filling a tiny bit dry after draining, so next time I’ll keep a little tomato juice in the mix. Still tasty though.
Totally agree—those peppers can come out a bit “meh” if the mix is too dry. Keeping a splash of the drained tomato juice makes a big difference. I also sometimes don’t fully drain the tomatoes just to keep it saucy.
I dunno. I burned mine. 😩 Maybe I did something wrong? Help!
Not sure about the 30 minutes—my peppers were still crunchy at that point. I ended up baking closer to 50 minutes total. Flavor was good once they softened.
Mine were crunchy at 30 min too. Maybe parboil the peppers first? Idk tho, I followed the recipe exactly and it was like eating pepper hard mode 😅
Good call—oven temps and pepper size can really change cook time. I’ve found bigger/thicker peppers usually need closer to 45-55 minutes too. Glad the flavor still came out great!
I followed it exactly but my peppers were still crunchy after 30 + 10. Maybe my peppers were thicker? Would par-cook help?
Par-cook could help, sure. Like boil/steam them 5-8 min so they start tender, then bake as written. I once had crunchy ones too and my onion mix was more watery, so check you drain the turkey after cooking.
Yeah, thicker peppers definitely need more time. I’d try covering longer next time—like 40 minutes total—before uncovering. Also make sure they’re cut so the flesh is evenly exposed.
I followed it pretty much exactly, but my peppers were still a bit crunchy after 30 minutes. Maybe my peppers were huge—next time I’ll pre-bake or cook longer.
Totally get that—bell peppers can be stubborn. If yours were really big/thick, 30 min can leave them a little crunchy. Next time I’d slice them a bit thinner or add 10-15 more minutes (or partially bake them covered first).
These are amazing! I swapped the turkey for beef and it turned out great!
The flavor is good, but 1 tsp oregano + 1 tsp basil feels like a lot when it’s the only seasoning. I’d add cumin or paprika for more depth.
These came out really flavorful! The mozzarella topping was perfect and the peppers stayed tender. I used brown rice and it still worked great.
Stuffed peppers are my fave! These were great, but I subbed black beans for the turkey. So good!
I love that you used black beans instead of turkey! It sounds delish and a great way to make it vegetarian. I’ll have to try it that way next time!
Black beans? Really? Seems kinda weird for stuffed peppers, but whatever floats your boat, I guess.
Pretty solid recipe, but 30 minutes felt a little short for my peppers (they were thick). I ended up baking closer to 45 minutes total and they finally got tender.
My peppers were never gonna be ready in 30—thick ones take forever 😅 Next time I’ll bake longer like you. Also I used slightly more cheese and it was way better.
Thanks! That actually makes sense—thicker peppers definitely need longer. I’ve noticed time varies a lot with pepper size. Glad you got them tender at 45!
Stuffed peppers are the best dinner dish ever. I can’t stop eating them!
I totally agree! Stuffed peppers are so versatile and delicious! I love adding different spices to mine too.
Really? I find them kinda boring… It’s just peppers with stuff. I don’t get the hype.
lol I forgot to drain the turkey and it got kinda watery. Still tasted decent though, just not as “filled” looking. Next time I’ll drain—promise.
Meh. Also I dont have dried basil so i used Italian seasoning and it turnt out kinda weird (still edible tho). Maybe reduce the cheese next time? 375 oven for 30 min was fine i guess.
Not gonna lie, I was skeptical about the amount of rice. But it actually made it hearty instead of soupy. Ground turkey + mozzarella combo is great.
They were okay, but my husband said they tasted weird lol. Maybe I did something wrong? 🤷♀️
I tried it but it felt bland to me. Maybe I under-salted? Also, I’m not a fan of draining “excess liquid” because the turkey can get dry. Would tweak seasoning next time.
Totally get that—bell peppers + turkey can come out kind of flat if the seasoning isn’t aggressive enough. I’d try adding more salt (and maybe a pinch of red pepper flakes). Also, you’re right about draining: if you drain too much, it can dry out. I usually only drain if there’s a lot, otherwise I just simmer a minute to thicken.
Uhm I didn’t have ground turkey so I used chicken and it was basically the same. Also I used 2 bell peppers only because thats all I had. Still turned out great lol.
Mine turned out a bit watery. I think I didn’t drain the turkey enough after cooking, so the filling was loose. Still tasty though, just messier.
The prep was a little annoying (seed removal takes forever), but the end result was worth it. I added chili flakes and it tasted like comfort food restaurant style.
