Stuffed Bell Peppers with Ground Turkey

Ingredients
  

  • 6 Bell peppers
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 ounces, drained
  • 1 cup shredded mozzarella cheese
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove the seeds and membranes.
  • In a large skillet, cook the ground turkey, onion, and garlic over medium heat until the turkey is no longer pink. Drain any excess liquid.
  • Stir in the cooked rice, diced tomatoes, oregano, basil, salt, and pepper. Cook for an additional 5 minutes.
  • Fill each bell pepper with the turkey and rice mixture. Sprinkle with shredded mozzarella cheese.
  • Place the stuffed bell peppers in a baking dish and cover with foil.
  • Bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  • Serve hot and enjoy!
