Ingredients
  

  • 2 cups fresh spinach chopped
  • 1 cup cheese shredded, any melting variety like cheddar or Monterey Jack
  • 1 cup enchilada sauce red or green
  • 1 small onion diced
  • 8 pieces corn tortillas softened
  • 1 tablespoon olive oil for cooking
  • 1 teaspoon cumin powder
  • 1 clove garlic minced

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a pan over medium heat, add olive oil and sauté the onions until they are translucent.
  • Add the minced garlic and spinach to the pan and cook until the spinach is wilted.
  • Stir in the cumin powder and remove from heat.
  • Spread a small amount of enchilada sauce on the bottom of a baking dish.

      Ugh yeah—spinach + cumin can be super mild if you don’t punch it up. I usually add chili powder, a pinch of smoked paprika, and extra garlic/salt. Also letting the sauce soak in before baking helps a lot.

      Haha fair point 😄 I meant “any melting cheese” as in cheddar/Monterey Jack, or even a Mexican blend. Frozen spinach will totally work—just thaw and squeeze out extra water. For cook time, I’d keep it the same since the bake time is already melting the cheese, but you may need 1-2 extra minutes on the pan step to evaporate moisture.
