Grilled Steak and Veggie Breakfast Burrito

Ingredients
- 1 pound steak
- 1 red bell pepper sliced
- 1 red onion sliced
- 1 zucchini sliced
- 1 tbsp olive oil
- Salt and pepper to taste
- 4 eggs large, scrambled
- 4 flour tortillas large,
- 1/2 cup shredded cheddar cheese
- Salsa and guacamole for serving
Instructions
- Preheat grill to medium-high heat.
- Season steak with salt and pepper.
- Grill steak for 4-5 minutes per side or until desired doneness.
- Let steak rest for 5 minutes, then slice thinly against the grain.
- In a large skillet, heat olive oil over medium heat.
- Add bell pepper, onion, and zucchini to the skillet.
- Cook for 5-7 minutes or until vegetables are tender.
- Add salt and pepper to taste.
- Scramble the eggs in a separate skillet over medium-low heat until cooked through.
- Warm the flour tortillas in a dry skillet or on the grill.
- Divide the scrambled eggs, grilled steak, and sautéed vegetables among the tortillas.
- Top with shredded cheddar cheese, salsa, and guacamole.
- Roll up the tortillas tightly, tucking in the sides as you go.
- Serve immediately and enjoy!
