Chicken and Cabbage Skillet

April 9, 2024

If you’re looking for a quick, healthy dinner that’s full of flavor but light on ingredients, chicken and cabbage skillet is your go-to dish. This one-pan meal is not only simple and fast to make, but it’s also packed with juicy chicken and tender cabbage that soaks up all the savory seasoning. It’s the perfect low-carb option for a busy weeknight.

To start, season your chicken breasts or thighs with your favorite spices, a simple mix of garlic powder, paprika, salt, and pepper works wonders, or you can add a pinch of dried herbs like thyme or oregano for extra flavor. Sear the chicken in a hot skillet with a little olive oil until golden brown on both sides. Once the chicken is cooked through, set it aside and keep it warm.

In the same skillet, add thinly sliced cabbage and onions. The cabbage wilts down as it cooks, soaking up all the delicious flavors left in the pan from the chicken. You can add a splash of chicken broth or a squeeze of lemon juice to help deglaze the pan and give the dish a bit of extra moisture. Toss in some garlic and cook until fragrant, then return the chicken to the pan to heat through and let all the flavors meld together.

This dish is incredibly versatile, you can toss in some carrots or bell peppers for extra color and sweetness, or even throw in a handful of fresh herbs like parsley or dill right before serving for added freshness. If you like a bit of heat, a sprinkle of red pepper flakes adds a nice kick.

Serve your chicken and cabbage skillet on its own or pair it with a side of rice, quinoa, or mashed cauliflower for a well-rounded meal. It’s a great option for meal prep too, as it stores well in the fridge and reheats beautifully.

Simple, healthy, and full of flavor, chicken and cabbage skillet is a meal that proves deliciousness doesn’t have to be complicated. It’s easy to make, packed with nutrients, and guaranteed to satisfy your hunger!

Not bad, but it felt a little bland until I salted more. Also parsley is easy to skip if you don’t have it.

Really? Who puts cabbage with chicken? This doesn’t sound right. Cabbage is for salads! 🥴

Meh, didn’t find it that tasty. And my chicken was dry, what did I do wrong?

Followed the steps but my chicken was a little dry. I think next time I’ll flatten the breasts first so they cook more evenly.

Good call! Flattening (or butterflying) the breasts really helps them cook evenly—dry chicken is usually over-thickness or a minute too long. Next time try pounding to an even thickness and also pull it as soon as it’s just cooked through (no more carryover than needed).

Hmm 5–7 minutes on each side might be too long depending on pan heat. Mine stays juicy but I slice the chicken right away and add it back only at the end. Flattening sounds smart though—maybe also cover the skillet so it doesn’t dry out.
