Ingredients
  

  • 8 ounces spaghetti
  • 4 cloves garlic minced
  • 1/4 tsp red pepper flakes
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup parsley chopped fresh
  • salt to taste
  • parmesan cheese for serving

Instructions
 

  • Cook spaghetti according to package instructions until al dente.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes and cook until garlic is golden brown and fragrant, about 2 minutes.
  • Add cooked spaghetti to the skillet and toss to coat it in the garlic oil. Cook for an additional 2-3 minutes, until spaghetti is warmed through.
  • Remove from heat and stir in chopped parsley. Season with salt to taste.
  • Serve hot, garnished with grated Parmesan cheese.

      Honestly I get it—some people need more “pop.” But for classic aglio e olio, lemon and anchovies aren’t really part of it. If it tasted only okay, maybe your garlic just wasn’t browned enough (or you under-salted). Still, that garlic aroma is the whole point.

    Not gonna lie, I didn’t measure the salt and I think that’s why it was kinda bland. The olive oil and garlic flavor is there, but pasta needs seasoning.

      I usually don’t measure either and it comes out fine 🤷‍♂️ maybe you used too much oil or the garlic wasnt browned long enough? Also if your spaghetti was under-salted, that could make it bland fast. Just add a little more salt and pepper at the end.

      Yeah I’ve had that happen too—this one really lives and dies by the salt in the finishing step (and honestly the pasta water if you’re going that route). If you start light on salt, it can taste a bit flat even with the garlic and oil doing their thing.

    so good but i used pre-minced garlic and i think thats why it was kinda sharp. fresh garlic makes difference. also parsley helps a lot!

      Totally agree—2 minutes can be way too short depending on the pan and stove. I go medium-low and stir the garlic constantly. Golden, not brown 😅

      I always thought “golden” meant like, slightly toasted… but mine got bitter too once. Probably my oil was too hot. Lower heat is the move.
