This Simple Ground Beef Stroganoff is a quick and easy dinner option, combining tender ground beef with a creamy mushroom sauce served over egg noodles.
Ground beef stroganoff is a simplified version of the classic beef stroganoff, offering all the rich, creamy flavors of the original dish in a fraction of the time. It’s perfect for busy weeknights when you want something comforting, flavorful, and easy to prepare.
The dish starts with ground beef, which is browned and crumbled in a skillet. The beef is seasoned with simple ingredients like salt, pepper, and garlic powder, allowing the natural flavors to shine through. Once the beef is cooked, it’s time to build the sauce. The base is a combination of beef broth and sour cream, creating a rich, creamy texture that coats the beef and makes every bite indulgent. A splash of Worcestershire sauce adds depth and a hint of tang, while sautéed onions and mushrooms contribute savory richness and umami flavor.
To thicken the sauce and achieve the perfect creamy consistency, a small amount of flour or cornstarch is often added. This gives the dish that velvety, smooth texture that pairs perfectly with the beef. The sauce simmers gently, allowing the flavors to meld together and ensuring that the ground beef is fully coated in the creamy goodness.
Simple ground beef stroganoff is typically served over egg noodles, but it’s also great with rice, mashed potatoes, or even a side of steamed vegetables for a balanced meal. It’s a quick and easy meal that can be made in less than 30 minutes, making it ideal for hectic evenings when you want to enjoy a hearty, homemade dish without the fuss.
This version of beef stroganoff keeps the comforting essence of the classic dish but is made with accessible ingredients and a streamlined approach. Whether you’re feeding your family, cooking for a crowd, or craving a cozy meal for yourself, simple ground beef stroganoff is a delicious and satisfying choice that brings comfort to the table with minimal effort.

This was so good! I can’t believe how easy it was to make. My whole family loved it!
I don’t know, it just didn’t taste as good as I thought it would. Maybe I did it wrong?
I think maybe you overcooked it? The beef can get tough if you leave it too long. Also, did you use fresh mushrooms? That makes a difference!
Not sure what you did wrong, but I thought it was delish! Maybe try adding more garlic next time? Garlic always helps!
Simple and cheap meal! I made it with ground turkey instead of beef and it was still yummy. Thx for the recipe!
I’m not sure if I did it right, but the sauce was runny. Still tasted good.
I love this recipe! So easy and delicious. My family devoured it!
Not a fan. It was a bit bland. Maybe I’ll try adding some spices next time.
Bland? Really? I thought it was yum! Maybe you just don’t have the right taste buds? 🤔
I totally get that! A little dash of paprika or cumin might do wonders. It’s all about finding the right balance. 😊
Delicious! I added some extra garlic and it was fantastic!
Extra garlic sounds great! I love garlic in everything. I’ll try that next time!
Yeah but isn’t it kinda overpowering? I don’t know, I like it mild.
I used chicken instead of beef, still turned out great!
Wow, chicken sounds like a great twist! I bet it added a nice flavor.
This ain’t stroganoff! Where’s the mushrooms? 🙄
Actually, it has mushrooms! They’re in the ingredients list. Maybe you missed it? 😅
What do you mean? This is the right recipe. I think it’s good without a ton of mushrooms! 😋
I put in too much sour cream and it was like a soup. Lesson learned!
We’ve all been there! Just add more noodles next time and it should help.
idk… it was just kinda greasy even after draining. Maybe my beef was too fatty. Won’t rush to make again.
Ugh that’s disappointing. Even with draining, some ground beef can stay greasy if it’s very fatty. I’ve had better luck using 85–90% lean, and also draining twice (once after browning, then again after the onion/mushrooms cook down). Also—don’t let the sour cream boil or it can separate and feel kind of oily.
Yummy. Took me back to my childhood! Gonna make this again.
The directions are clear, but I had to re-thicken because my broth addition went too fast. If you stir constantly, it should be fine.
Couldn’t get the sauce to thicken. I probably didn’t add the broth slowly enough or the flour didn’t cook through. Flavor still okay.
This is the best stroganoff ever! So simple but packed with flavor. Definitely will make again!
I totally agree! I made this last week and my kids loved it too. So easy and quick!
It looks good, but maybe it’s too simple? I like stroganoff with a bit more spices or something. 🤔
Honestly I’m skeptical about only 1 tbsp flour—felt thin until it simmered longer. But by the end it was decent. Would tweak.
Totally get that—1 tbsp flour sounds like not enough at first. I’ve had to simmer a bit longer too until it finally thickens. Glad yours turned out decent!
This recipe is sooooo delicious! My family loved it! 😍
I used turkey instead of beef (healthy option) and it still turned out great.
Soo simple n quick! Wud make again for sure.
Made this tonight—super easy and honestly tastes like something from a diner. I used a little extra mushrooms and it was rich and creamy. Definitely keeping it in rotation.
Love hearing that! Diner vibes are the best kind of comfort food 😄 Did you use white button mushrooms or something fancier?
Meh. Thought it’d be better. It kinda tasted like… nothing.
This recipe is so easy and tasty! My family loved it. Definitely a 5-star dish!
Hmm, I found it a bit bland. Maybe it needs more seasoning or something? Not sure I’d give it 5 stars…
I’m glad you liked it! I made it last week and my kids cleaned their plates. Super easy too!
It came out kind of bland for me until I added more pepper and a pinch of paprika. Next time I’ll salt more aggressively.
Totally agree—mine was a little flat at first too. I usually go heavier on the salt early (right after the beef browns) and then adjust pepper at the end. Paprika is a great idea!
It was okay, but I found it a bit bland. Needs more spices maybe?
Beef and noodles…good enough for me!!
So easy! 💯 Will make for my family gathering this weekend!
Super easy and quick! Perfect for busy weeknights. Will make again.
This was too simple for me, I’m a chef! I need more complexity in my dishes
This isn’t real stroganoff, where’s the onions and all? This is just mish-mash!
This was mid for me. The sauce felt a little floury before it loosened up, and I couldn’t get it fully smooth. Also, I added salt at the end and still felt like it needed more.
Yummm!!! This is so good. I added some parsley on top.
Who needs fancy recipes? This is quick and straight to the point. I like it!
Pretty good, but I think I needed more broth. Mine got kinda thick after I added the sour cream, so next time I’ll loosen it up a bit. Still tasty though.
Sour cream makes everything perfect – thanks for this recipe! 😊
I tried this but the sauce was too thin. I think it needs more flour. Maybe I did it wrong?
I think you might have needed to add the flour earlier in the process! It helps with thickening. Don’t worry, it happens to everyone. Just adjust next time!
I thought the recipe was good, but it needs more spices. Maybe some paprika or thyme? Just my opinion.
My kids loved it! Super easy to make. Thanks!
Yum! I added some cheese on top and my husband loved it! Quick weeknight dinner!
Yummm! Comfort food at its best. Will make again for sure! 🍝
Easy peasy! But I forgot the sour cream, oops! Still edible.
Simple and quick! Noodles were perfect. Will make again!
Glad you liked it! It really is a quick meal. I add a bit of Worcestershire sauce for extra flavor!
I followed it exactly and mine was thicker than expected—maybe I boiled the sauce a bit by accident. Tasted great but texture was off.
Beef broth ain’t for everyone. I used chicken 🐔, came out nice.
Pretty good, but 0.5 cup onion feels a little light. I’m sure it’s fine, just my preference to have more onion/mushrooms.
I found it a bit too salty. Maybe reduce the salt? 🤔
I totally agree! I found it salty too. Maybe next time I’ll skip the added salt altogether! 🤷♀️
Nah, I think the salt is just fine. But I guess everyone has their own taste! 🤔
Really solid base recipe. I used half-and-half instead of sour cream (because that’s what I had) and it still worked, just a bit thinner.
Too easy, there’s no way it tastes good. My mom’s recipe is way better!
This is missing something… maybe Worcestershire or a bit of Dijon? It’s good, but feels more like creamy beef gravy than true stroganoff.
Wow, who knew it was this easy? My kids gobbled it up.
Eh, not great. My kids didn’t even want to try it. Guess I’m not a chef 😩.
This was super easy and honestly tasted like comfort food from scratch. The sour cream step is key—don’t boil it or it gets weird.
Made it for a weeknight dinner and everyone went back for seconds. I added a little extra mushrooms and it was perfect.
I followed it pretty closely, but mine was a little thick. Next time I’ll use a touch more broth. Still delicious though.
I messed it up somehow. The sauce was too thick and the beef was chewy. What went wrong?
Ground beef can be kind of bland, so I upped the seasoning. Salt/pepper plus garlic did help a lot. Would make again.
Totally agree—ground beef can taste a little flat until you really hit it with salt/pepper. Garlic + browning does wonders.
Wasn’t a fan. The flavor was kinda bland. Maybe more seasoning?
Ok so I forgot the garlic (oops) and it still tasted good 😂 Would probably be even better with garlic, but I’ll pretend I did it on purpose.
Meh, I prefer the one with cream of mushroom soup. This was too plain.
Not gonna lie, I’m skeptical about sour cream cooking like that. I was worried it would curdle, but simmering on low worked. The texture was nice, though I’d reduce the heat even more.
Hmm sour cream in a skillet? I tried that once and it turned all weird, like grainy. Maybe your low simmer saved it. I’d probably use less sour cream or stir it slower so it doesn’t split.
I was skeptical too! I always worry sour cream will curdle, but low heat + not boiling is the key. Glad it came out with a nice texture—next time I’ll try even lower heat like you said.
Made this tonight—so easy and actually tastes like something I’d order. The sour cream step is key. I added a pinch of paprika for extra depth.
