Ingredients
  

  • 1 cup shrimp peeled and deveined
  • 1 cup scallops cleaned and chopped
  • 1 cup mixed vegetables frozen or fresh
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon pepper to taste
  • 1 teaspoon Herbes de Provence optional
  • 1 sheet puff pastry thawed

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large skillet, melt the butter over medium heat. Add the flour, and whisk continuously for 1-2 minutes to create a roux.
  • Slowly whisk in the milk, ensuring there are no lumps. Cook until the sauce thickens, about 3-5 minutes.
  • Add the shrimp, scallops, mixed vegetables, salt, pepper, and Herbes de Provence to the sauce. Stir to combine and let cook for an additional 5 minutes.
  • Transfer the seafood mixture into a pie dish and top with the puff pastry, trimming any excess. Make small slits in the pastry to allow steam to escape.

      Ugh, I feel you—pepper can get out of hand fast. I usually start with like 1/8 tsp and then taste at the end. Also if your veggies were watery, sautéing them first (or even squeezing thawed ones) totally helps.
