  • 8 oz Pasta Use your favorite type of pasta, such as penne or fettuccine
  • 1 tablespoon Olive oil
  • 2 cloves Garlic minced
  • 1/2 cup Sun-dried tomatoes Chopped
  • 1 cup Coconut milk Full-fat for creaminess
  • 2 cups Spinach Fresh
  • 1/4 cup Nutritional yeast For cheesy flavor
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon Salt To taste
  • 1/4 teaspoon Black pepper To taste

Instructions
 

  • Cook pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1 minute.
  • Add sun-dried tomatoes and sauté for another 2 minutes.
  • Stir in coconut milk, nutritional yeast, Italian seasoning, salt, and pepper. Simmer for 5 minutes, stirring occasionally.
