Cook pasta according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1 minute.
Add sun-dried tomatoes and sauté for another 2 minutes.
Stir in coconut milk, nutritional yeast, Italian seasoning, salt, and pepper. Simmer for 5 minutes, stirring occasionally.
Add spinach and cook until wilted, about 2 minutes.
Add the cooked pasta to the skillet and toss to coat with the sauce.
Serve immediately, garnished with additional nutritional yeast if desired.
