Sausage casserole is a classic comfort food that combines the rich, savory flavors of sausages with tender vegetables, herbs, and a flavorful sauce. This one-pan dish is beloved for its simplicity, heartiness, and the fact that it can be customized with ingredients you have on hand. Whether served for a cozy family dinner or as a meal prep option, sausage casserole is sure to be a hit with anyone looking for a filling, satisfying meal.
At the heart of sausage casserole are the sausages themselves, which bring a deep, savory flavor to the dish. Whether you use pork, chicken, or vegetarian sausages, they become perfectly browned and caramelized when cooked, releasing their juices into the casserole and infusing the dish with flavor. The vegetables typically include staples like onions, carrots, potatoes, and bell peppers, all of which soften and absorb the delicious sauce as they cook.
What makes sausage casserole stand out is the sauce that ties everything together. Depending on the recipe, the sauce can be made with broth, tomatoes, mustard, or even cream. It’s seasoned with herbs like thyme, rosemary, or bay leaves, giving the casserole a fragrant, warming taste. Some variations even include a dash of wine or balsamic vinegar to add a little extra depth and complexity to the flavor.
The beauty of sausage casserole lies in its versatility. You can add a variety of vegetables to the mix – zucchini, peas, or spinach are all great options, or include a layer of cheese on top for an indulgent touch. For those who enjoy a bit of heat, a sprinkle of chili flakes or a dash of hot sauce can be added to kick up the flavor profile.
Not only is sausage casserole easy to make, but it’s also great for meal prep. It keeps well in the fridge for several days and can be easily reheated, making it a perfect option for busy weeknights or when you need a comforting meal ready to go. Plus, it’s a crowd-pleaser, both kids and adults love the rich flavors and hearty ingredients.
Whether you’re looking for a quick weeknight dinner or a dish to feed a crowd, sausage casserole has all the right elements to satisfy. It’s flavorful, filling, and sure to warm you up on any occasion.

Simple and fulfilling. I like when recipes don’t have too many ingredients. Good job!
I followed the recipe but it turned out too watery. Maybe less broth next time?
Sausage, potatoes, and tomatoes? YUM!!! I didn’t have chicken broth so I used vegetable broth and it turned out fine. Would make again!
Sounds delicious! I’m glad the veggie broth worked for you. Can’t wait to try it myself!
No offense but this recipe seems basic. I was expecting more flavors. Just a bunch of veggies and sausage. 2 stars.
It’s okay but my kid didn’t like it. He said it was too mushy and didn’t taste good. Will stick to pizza next time.
Not bad, but my potatoes were still hard after 45 minutes. Might try longer next time.
Yummy! 😋
This casserole was a hit at my family dinner! Everyone loved it. I used spicy sausage and it added a nice kick. 5 stars!
I’m glad to hear it was a hit! Spicy sausage sounds like a great idea! I might try that next time.
I followed the recipe exactly and it was… fine. Not bad, just not “wow.” I think it needs more seasoning—like extra thyme or even a bay leaf.
Maybe your sausages were kinda bland? I use spicy sausage and only do the recipe as written, and it comes out way better. If you add bay leaf you should probably remove it later, unless you like surprises 😅
Totally get that “fine but not wow” feeling. I’ve made it before and it really does need a bit more thyme and salt. I also add a bay leaf in step 5—makes the whole thing taste deeper.
Really good but I substituted beef for sausage. It still turned out great! Yum!
Yum! I added some cheese on top, and it made it even better! 🧀
Tasty but too much thyme for my taste. I prefer more oregano!
This was amazing! My family loved it, will definitely make again!
Sausage casserole.. it’s like eating comfort in a bowl ❤️.
I don’t know… my potatoes were still hard after 45 minutes. What did I do wrong?
This was a hit at my dinner party! Everyone loved it. The flavors are amazing!
Super easy recipe! Even I could make it, and I usually burn toast.
Okay but why does everyone put so much salt? I cut it down and it was perfect!
I think you’re right! Sometimes people just go overboard with the salt. It’s all about finding that perfect balance!
Flavor is decent, but mine turned a little watery because my canned tomatoes were pretty thin. Maybe I should reduce the sauce longer before baking.
Quick and easy! Will make it again. Just wish it had more spice.
Sausages? Who needs ‘em! I used mushrooms instead, turned out great!
Mushrooms, huh? That’s interesting! I might try that next time. Thanks for the tip!
Sausages are key for flavor! Not sure how good mushrooms would be in this. 😕
Sausages can be full of fat, I don’t know if it’s healthy or not. The taste was okay.
This recipe is amazing! My kids loved it and asked for seconds. Definitely a keeper!
Sausgrades are the worst! Should’ve used beef or something, way better! Just saying.
Sausages are great! They bring so much flavor. Beef would just be dry in a casserole. Just sayin’.
This is basically just a stew. Not really a casserole.
I don’t know about this. Seems kinda bland. I might add some hot sauce next time.
I like sausage casseroles, but I’m skeptical about baking potatoes covered only 45 minutes. I usually brown the potatoes first. Anyhow, flavor was good!
Turned out fine, but I think I could’ve added something else like cheese or bacon? Just an idea. 😄
Made this last night and wow—comfort food goals. The thyme + oregano combo with the potatoes is so good. I used smoked sausage and it turned out extra flavorful.
Yes!! That thyme + oregano combo is seriously underrated. I’m stealing “comfort food goals” for my next dinner 😂
Eww, this was gross. I didn’t like the texture of the potatoes. 🤮
Not bad, but I’m not sure about the “400 grams canned tomatoes” part—mine turned out a little too tangy. Next time I’ll use less or add a pinch of sugar.
Super easy to make! I added some extra spices for a kick. Definitely making it again!
I did not have bell pepper so I used some frozen mixed peppers. Also used veggie broth (I know, I know) and it was still alright. Would make again for sure.
Nice! Frozen mixed peppers usually work great in casseroles—glad it still turned out good. What kind of sausage did you use (spicy or mild)?
“Veggie broth (I know, I know)” is honestly fine. Tomato + herbs can cover a lot. Might try that next time too—thanks for the tip!
I tried it and the oven temp was fine, but I think I underbrowned the sausages. It tasted a little flat, like it was missing that extra sear flavor.
I get what you mean—if the sausages don’t get that deeper browning, the whole casserole can taste a bit muted. Next time I’d brown them harder/longer (even if it takes a few extra minutes) before you bake.
This was so good! My whole family loved it. I used spicy sausage and it was amazing!
This recipe seems too easy, I’m skeptical. Does it really taste good?
Easy recipe, made it for my kids. They enjoyed it! I might actually try it with less potatoes next time.
Yummm! I love anything in a casserole dish!
Yum! Like it real, I put some cheese on top. So cheesy and delicious! 😍
This casserole was amazing! So flavorful and comforting. My kids loved it!
Best casserole I’ve ever made! I used spicy sausages and it kicked it up a notch. Mmm!
Easy to make, but my hubby thought it was too many potatoes. Maybe I should use less next time?
You forgot any veggies in the ingredients list! It sounds bland.
I think it sounds delicious! Sausage and potatoes are great together. Who needs veggies? 🌭🥔
But the bell pepper is a veggie! You clearly missed that…
Just saying! 😅
Yummy! My kind of comfort food. Can’t go wrong with sausages and potatoes. 😋
Totally agree! This is the best kind of food for a cozy night in! ❤️
Sausages are the best! I used chicken sausages and it turned out great!
The oven temp says 350°F which is 180°C right? I think I did the conversion wrong at first 😅 but eventually it turned out okay. Would make again, though.
180°C is definitely the usual conversion for 350°F, so you were right to double-check. Love that you still made it and would make it again—recipe’s doing its job!
Yes—350°F ≈ 180°C (give or take). Glad you figured it out 😅 I’ve done that exact mix-up before. This sounds like a comfy one!
This was delicious! My whole family gobbled it up!!
Looks good, but my kids are picky eaters. Not sure they’d like it. Anyone tried with vegan sausages?
So glad to hear that! It’s always a win when the whole family enjoys dinner. 😊
The recipe is solid, but 180°C for 45 minutes felt short for my diced potatoes (I cut them bigger). Still tasty though—just more time needed.
I don’t think this recipe is all that great. The potatoes were undercooked and it lacked flavor.
Not to be rude, but how can you call this a casserole if it’s not layered? Kind of a letdown.
Easy to make but I added some extra spices like paprika and chili flakes. It turned out delicious!
I followed the recipe, but my sausages burnt! I think maybe I cooked them too long? Not sure I’ll try again.
Maybe try lowering the oven temp next time? 180°C might be too hot for your sausages.
Pretty tasty, but mine needed more liquid. After 45 min the potatoes were still a bit firm, so I added a splash more broth and baked 10 more minutes.
Great recipe but what’s thyme? 😂
This recipe is amazing! So simple to follow and tastes incredible. My whole family loved it!
Glad you liked it! We love this recipe too, it’s a family favorite! 😍
I don’t know why it turned out so watery. Maybe I added too much broth?
Pretty easy. I followed the steps but I added a little extra garlic and a pinch of chili flakes. Cook time was almost perfect—potatoes needed like 10 more minutes in my oven.
I added mushrooms and it turned out great! Highly recommend.
Pretty good, but I think it needed more seasoning. I also forgot the garlic, which might’ve helped. Next time I’ll try adding some chili flakes.
I totally agree! A little more seasoning can really take a dish to the next level. Garlic and chili flakes sounds like a great idea for next time!
Lost me at canned tomatoes. How about fresh? It ain’t the same.
Sausages in casseroles? Really? I thought it was for just potatoes and veggies. Still tasted okay though.
Sausage casserole? More like sausage disaster! Followed the recipe but wasn’t feeling the taste. Never again.
Sorry to hear that! Maybe try adjusting the spices next time?
Sausage Casserole? More like Potato Casserole with a hint of sausage.
5 stars, no doubt! But like, what if I added cheese?
Adding cheese sounds like a great idea! It would make it even more delicious 🤤!
Simple and tasty. I was worried 45 minutes wouldn’t be enough for the potatoes, but it worked at 180°C. Next time I’ll dice them a bit smaller for extra softness.
What kind of sausages do you use? Mine was too salty! Can it be fixed?
Try adding some sugar to balance it out, might help with the saltiness. I dunno tho… Just my thoughts!
I used Italian sausage and they were perfect! Maybe try a different brand, the saltiness can vary a lot.
Why potatoes AND tomatoes? Seems weird. Also the instructions are kinda vague with timing…
I get the “why both?” feeling, but the tomatoes add a nice tang and some moisture so the potatoes cook up better. Without them it can feel a bit heavy.
Not bad, but mine came out a bit watery. I think my tomatoes were juicier than the ones I usually get. Next time I’ll simmer the sauce longer before baking.
Made this tonight—so cozy. The potatoes cooked through perfectly at 45 minutes, and the thyme/oregano combo is legit. I used spicy sausages and it kicked up the flavor a lot.
This is missing something, like cheese or a roux? I don’t know. It’s good, but kind of basic for my taste. Also, 1 cup broth feels low with 2 cups potatoes.
Made this last night—super cozy. The potatoes came out tender and the sausage stayed juicy. I added a pinch of chili flakes and it was perfect.
Very bland to me. Maybe I didn’t salt enough? I even added pepper, but it tasted like “soup with sausage.” Could be my sausage was mild.
I get what you mean—this one can be pretty bland if the sausage doesn’t bring flavor. I’d try salting a little more (and taste the sauce before it goes in the casserole). Also, browning the sausage well makes a big difference.
This is totally my kind of dinner. One dish, hearty, and the smell while it bakes is amazing. Resting it helps—didn’t rush, and it thickened nicely.
