Rotelle with burrata, spinach, and almonds is a pasta dish that balances creaminess, freshness, and a satisfying crunch in every bite. The unique combination of ingredients offers a delightful contrast of textures and flavors, making it a perfect choice for a light but indulgent meal. Whether you’re preparing it for a weeknight dinner or a special occasion, this dish brings comfort and elegance to the table.
The rotelle pasta, with its wheel-like shape, is ideal for holding onto the creamy sauce and bits of spinach, creating a hearty bite every time. The spinach adds a touch of freshness and color to the dish, while the burrata, with its soft, creamy center, brings a luxurious richness that ties everything together. The burrata melts slightly when mixed with the hot pasta, making every bite indulgent and comforting.
The addition of toasted almonds introduces a satisfying crunch, complementing the creaminess of the burrata and the tender spinach. The nuts also add a subtle, nutty flavor that enhances the overall taste, making each forkful a perfect balance of creamy, crunchy, and savory.
To elevate the dish, a simple garlic and olive oil sauce or a light lemony dressing can be drizzled over the top. This brings out the natural flavors of the ingredients without overpowering them. A sprinkle of parmesan can also add an extra touch of umami if desired.
Rotelle with burrata, spinach, and almonds is a versatile dish that can be enjoyed as a main or paired with a light side salad for a more complete meal. It’s fresh, satisfying, and full of flavor – perfect for pasta lovers looking for something a little different.

I followed it pretty closely. The spinach wilted fast and the garlic smell was on point. Burrata melted in a really nice way—will make again.
Mine did the same with the spinach—though I think I overcooked it a bit. Next time I’ll do less time. Also, does anyone else end up adding lemon or chili flakes? 😅
That’s awesome to hear! The garlic + burrata combo is honestly the best part—glad the spinach wilted up right for you.
Wow, I didn’t know almonds went with pasta. What a lovely surprise!
This was so yummy! The burrata melted perfectly with the pasta. Will make again!
This recipe is absolutely delicious! The burrata adds such a creamy flavor, and the almonds give it a nice crunch. Will definitely make this again!
I tried this and the spinach got kinda watery in my pan. Maybe I washed it and didn’t dry it enough. Still good, just not pretty.
Yummy! First time cooking burrata. It was a hit at dinner! Also, I added some red pepper flakes for spice! 🔥
My kids loved it! Spinach usually gets rejected but this time they cleaned their plates! 🤗
Instructions were a bit confusing. What does ‘al dente’ mean? I just overcooked my pasta. 😩
Al dente means the pasta is firm to the bite, not mushy. You might try cooking it a minute less next time!
Mine turned out too soggy… maybe I cooked the spinach too long? Wont give up tho.
Hmm, I’m not a fan of burrata. Can I just use regular mozzarella? I think that would work.
Easy to make but I think it needs something more…maybe a little lemon juice?
Yum! I added grilled chicken to it and it was fantastic! Perfect for dinner.
I didn’t have burrata, so I used mozzarella. Still turned out pretty good! Not sure about the almonds tho.
I was skeptical about only 2 cups spinach with 100g pasta, but it worked out. Still, I wish the measurements were a little more specific—like how much spinach is “2 cups” when packed.
Totally get that skepticism—fresh spinach packs so differently. I usually weigh mine after washing: 2 cups packed is roughly 60–70g, depending on how tightly you shove it in the cup. Glad it still worked for you though!
Sounds good but 100 grams rotelle for two people is like… a snack? Maybe I’m hungry, but I’d double the pasta next time.
Made it tonight and followed the steps pretty much exactly. Loved the garlic + spinach combo, and the toasted almonds gave a nice crunch. Next time I’ll use a bit more black pepper.
Just made this too—spot on with the garlic + spinach. The toasted almonds really make it, like a nice little crunch. I also added a touch more pepper at the end and it was perfect.
I forgot the garlic and used mozzarella instead of burrata…still turned out tasty! 👌
What is rotelle? Is that a type of cheese or pasta? I’m confused. 🤔
This was too salty for my taste. I never put salt in my pasta. Anyway, my kids liked it.
Loved how fresh this tasted—spinach wilted perfectly and the toasted almonds gave a nice crunch. Burrata on top is a cheat code for sure.
Made this tonight and it tasted like heaven! The almonds added a nice crunch. Yum! 😋
So glad you enjoyed it! The crunch really does make a difference. 😍
Too many greens for my taste, I’m not a salad person. Gave it a 2 cause the cheese was nice.
Delicious! Next time, I’ll try with different nuts. Great base recipe.
This recipe is so simple and delicious! I loved the creaminess of the burrata with the spinach. Will make again!
Sounds easy enough, but isn’t burrata a bit overrated? I feel like it’s just fancy cheese for show.
I’m so glad you loved it! The burrata does make everything more creamy. What did you serve it with?
This recipe is absolutely delicious! The burrata adds such a creamy touch. My whole family loved it!
Who puts nuts in pasta??? Isn’t that weird? I just don’t understand. 1 star.
Nuts in pasta is actually a thing in some cuisines! I think it adds a nice crunch. But if it’s not for you, that’s okay! Different tastes. 4 stars.
Delicious! But how did ya cook the almonds? I just threw them in raw! 🙂
You should toast the almonds before adding them! Just cook them in a pan for a few minutes until they’re golden. It makes a big difference! 🙂
Delicious! My kids loved it and ate all their greens for once!
That’s awesome! Glad your kids enjoyed it. It’s nice to have a meal they actually eat all of! 🥦
This dish is absolutely divine! The burrata adds such a creamy texture. Love it!
Best dish ever!! 😍 I’m making this for my dinner party next week, thanks for sharing!
You’re gonna love it! That burrata is so creamy, it’s a crowd-pleaser for sure! 😊
I made it without olive oil and it turned out not too bad! Healthier I think? LOL.
That’s interesting! I wonder if it changed the flavor a lot. I’ll have to try it your way! 😊
is burrata really cheese? I thought it’s just fancy cream. 🤨
Not gonna lie, I didn’t toast the almonds and it tasted kinda flat. Toasting them fixed it instantly. Now it’s a keeper.
I don’t get why everyone loves burrata. I found this dish kinda bland. 2 stars.
Super easy to make! I added some chili flakes for a kick. Yum! Will make again.
Next time I make this I’ll add some chicken! Gotta have protein, right? 😂
Thought I could use different pasta, but it still turned out great! Swapped rotelle for penne and worked like a charm.
So easy and quick! I added some cherry tomatoes and it was perfect! 🍅
I love adding cherry tomatoes too! They give a nice splash of flavor and color! 🌈
Quick and yummy! The kids liked it. Perfect for a weeknight meal. 🌟
This is an easy one, but I think it needs more flavor. I added some red pepper flakes!
