Roasted Peppers

April 22, 2026

Roasted peppers are a flavorful and versatile dish that works as a side, a topping, or a main ingredient in various recipes. The charring process enhances their natural sweetness and adds a smoky depth.

Bell peppers are a simple yet deeply flavorful dish that transforms ordinary bell peppers into something rich, sweet, and aromatic. Through the process of roasting, their natural sugars caramelize, creating a soft texture and a slightly smoky taste that enhances both simple and complex meals.

The preparation of roasted peppers begins with fresh bell peppers, often in a variety of colors such as red, yellow, or orange. These are typically placed under high heat, either in an oven, over an open flame, or on a grill, until their skins become charred and blistered. This charring is an important step, as it helps develop the signature smoky flavor that defines roasted peppers.

Once roasted, the peppers are usually covered or placed in a sealed container for a short time. This allows the steam to loosen the skin, making it easy to peel away. Removing the skin reveals soft, silky flesh underneath, which is naturally sweet and tender. The seeds and stems are then discarded, leaving behind clean strips of roasted pepper ready for use.

Roasted peppers are incredibly versatile in the kitchen. They can be served as a side dish, added to salads, blended into sauces, or layered into sandwiches and wraps, served with lamb chops or beef bulgogi. Their sweetness pairs beautifully with savory ingredients like garlic, olive oil, herbs, cheese, and grilled meats. They can also be preserved in jars with oil and seasonings, extending their shelf life and intensifying their flavor over time.

Beyond their taste, roasted peppers are also nutritious. They are rich in vitamins, particularly vitamin C and vitamin A, as well as antioxidants that support overall health. The roasting process preserves many of these nutrients while enhancing digestibility.

Roasted peppers remain a staple in many cuisines because of their simplicity and adaptability. Whether used in Mediterranean dishes, Italian antipasti, or everyday home cooking, they bring depth, color, and a natural sweetness that elevates any meal.

Delicious! I added some garlic and it was perfect.

  2. 5 stars
Simple yet so flavorful. Perfect side dish! My family loved it. 💛

450°F feels a little aggressive for peppers but it worked. Next time I’ll check a few minutes earlier because they can go from charred to too dark fast.

  4. User avatar genny.rippin37 says:

    5 stars
Wow, these roasted peppers were amazing! So sweet and delicious. Will definitely make again.

  5. User avatar Clara Nett says:

    5 stars
Turned out way better than I expected—really sweet and smoky. I used red peppers and added the balsamic, and wow. Will make again.

  6. 5 stars
I made these for a party and they disappeared! Everyone loved them.

  7. User avatar tabetha.reynolds32 says:

This recipe is just too simple. You really called this a recipe? 🤔

  8. User avatar ethyl.mills69 says:

These turned out so sweet and smoky! I used red peppers and the balsamic drizzle really made it pop. Easy and definitely a keeper.

    1. User avatar kathleen.hamill36 says:

      3 stars
Huh, mine weren’t really smoky… I think my oven runs cool because they only charred a little. Still tasted fine though. Any tips to get it more charred?

    2. User avatar emilee.rodriguez says:

      5 stars
Yes!! That balsamic drizzle is the difference-maker. I did this with yellow peppers and it was seriously sweet-smoky heaven.

  9. 3 stars
I followed the steps, but mine didn’t really blister much. Maybe my peppers were too big or I should’ve dried them better.

  10. User avatar kareem.gerlach34 says:

    3 stars
Question: do you *always* discard the charred skin? I’m skeptical but willing to try. The instructions say discard if desired.

  11. User avatar pia.bergnaum11 says:

    3 stars
I followed it mostly, but 450°F felt too hot. The skins blistered fast and I burned one tray. Maybe next time I’ll drop it to 425°F.

  12. User avatar randell.zemlak says:

    5 stars
This is how my grandma made it too! Bringing back childhood memories! 😍

    1. User avatar Spider Worker says:

      5 stars
I love roasted peppers too! They really remind me of family gatherings. Such a comfort food! ❤️

  13. User avatar sol.rolfson33 says:

    5 stars
Not sure about peeling ‘discard if desired’—the char taste is kinda the whole point. I didn’t discard much and it still tasted great with pasta.

  14. User avatar alden.farrell says:

    2 stars
Ugh no, the skin was hard to peel! What’s the point of roasting??

    1. User avatar aron.klein says:

      3 stars
I think maybe you roasted them too long? I usually roast mine just until they’re slightly charred and they peel right off!

    2. User avatar efren.mcdermott says:

      4 stars
I had the same problem! The skin was a pain to peel, but I found soaking them in water helped a bit. Maybe next time give that a try?

  15. User avatar asuncion.gislason9 says:

    3 stars
Is it normal for it to smell funny while cooking? I thought I burned my house down!

  16. User avatar rico.harris2025 says:

    4 stars
I just threw in some cheese on top before roasting! Next level taste!

  17. User avatar Chronos says:

    4 stars
I love roasted peppers, but peeling was kinda annoying. Also I used green peppers once and it tasted… not sweet at all, so the color tip matters.

    1. User avatar lizzzard says:

      5 stars
Totally agree—peeling is the worst part. The steaming step helps a lot though. Also yep, green peppers can be way less sweet than red/yellow/orange!

  18. User avatar tammi.mosciski87 says:

    4 stars
I followed the temp and time but mine weren’t super blistered. Maybe my peppers were too thick? Still tasty though.

  19. User avatar kermit.kutch84 says:

    3 stars
450°F is kinda aggressive lol. I charred half of them a lot. Still tasty, just next time I’ll keep an eye and rotate the tray.

  20. User avatar carey.jaskolski says:

    4 stars
I didn’t have balsamic vinegar, but used lemon juice. Came out fine.

    1. 5 stars
Great substitution! Lemon juice gives a nice twist. I might try that next time!

  21. User avatar nakisha.torphy says:

    5 stars
This was actually amazing. Also, the parchment trick saved me from sticking—my last attempt stuck terribly lol.

  22. User avatar milda.muller84 says:

    1 star
Okay, I must’ve done something wrong because mine turned out mushy. Help!

  23. User avatar shaun.farrell7 says:

    4 stars
The 450°F step is key. Mine charred a bit more than expected at 30 minutes, but the flavor was still great. Next time I’ll start checking at 20.

    1. User avatar kenna.brekke48 says:

      5 stars
Yes! 450°F really makes the skins blister just right. I usually pull mine closer to 22–25 minutes depending on pepper size—checking early saves you from that “oops” char.

    2. User avatar pedro.mraz70 says:

      4 stars
Mine took way longer than 30 min at 450°F… maybe my oven runs cold. Still tasty though. I do the foil steaming step every time—way easier to peel.

  24. User avatar arlette.hodkiewicz1955 says:

    5 stars
These turned out so sweet and smoky! I used yellow peppers and the balsamic touch at the end was perfect. Charred skin peeled off way easier after steaming—will make again.

  25. User avatar chimpanzee says:

    3 stars
I found the steps a bit confusing. Could you explain what ‘charred’ means? I thought it was burnt.

  26. 5 stars
Roasting peppers is so easy! Who knew? Thank you for this idea!

  27. User avatar liberal.hero says:

    5 stars
Not gonna lie, I questioned this recipe—peppers are already peppers, right? But the char + steaming combo is legit. I’m converting.

  28. 5 stars
These peppers are my new favorite! I added some garlic before roasting, it was sooo good!

    1. 5 stars
I totally agree! Garlic makes everything better! Can’t wait to try this. 🔥

  29. 4 stars
I didn’t have balsamic vinegar so I used apple cider vinegar instead. Still turned out good!

  30. User avatar Grunthos the Flatulent says:

    4 stars
I don’t really like peppers, but my kids loved them! Guess it’s a win, haha.

    1. 3 stars
But how can u not like peppers? They are so sweet! 😝

    2. 5 stars
That’s awesome! Kids are great taste testers, haha! Maybe you could try hiding them in a sauce or something next time?

  31. User avatar angelic.fadel57 says:

    4 stars
Pretty good! Roasting time was close to 30 minutes for me. Mine got a little too charred on the edges, but the flavor was still fantastic.

  32. User avatar Barliman Butterbur says:

    2 stars
Not my favorite. Too much salt for my taste (I might’ve overdone it). Also mine were kind of watery when I served them.

  33. User avatar isaac.carter29 says:

    4 stars
Pretty good, but 25-30 minutes felt a little short for my oven. I charred them a bit more and they were perfect after steaming.

  34. User avatar hoa.lockman57 says:

    5 stars
These turned out way better than I expected—nice char, super sweet. I skipped the balsamic at first but added it at the end and wow.

    1. User avatar Alia Atreides says:

      3 stars
I tried this but mine came out too soft and kinda watery… I think my oven was not hot enough? Also I forgot to use balsamic until later but yeah it helped. Next time 450 for full 30 mins.

    2. User avatar Frankie and Benjy says:

      5 stars
Same here! I was like “how sweet can peppers be?” but the char really caramelizes them. I also add a little balsamic at the very end—so good.

  35. 2 stars
I burned mine, but still tasted okay. Maybe I’m just a bad cook. 🤷

  36. User avatar rich.landlord says:

    5 stars
Simple and honestly foolproof. I used one red and three yellow peppers and they roasted beautifully in about 28 minutes. Balsamic was a nice touch.

    1. User avatar rodger.jakubowski says:

      5 stars
Nice! I did basically this once and the peeling step was way easier after steaming. Glad it worked out for you.

  37. 3 stars
This was good, but I think 25-30 minutes is too narrow. My peppers needed closer to 35 before they blistered properly.

  38. User avatar brady.macgyver says:

    2 stars
This is too simple. Can’t believe people rave about roasted peppers.

  39. 5 stars
Yummm, the smell while they cook is amazing! 🔥

  40. User avatar tissues_with_issues says:

    3 stars
Why parchment AND foil? Seems like overkill. I just put them on the tray and it was fine, though cleanup was messier.

    1. User avatar emilee.nienow says:

      4 stars
Good point—foil *is* optional. I mainly use parchment so the cut peppers don’t stick/tear as much, and the foil is just to make cleanup easier since the peppers can get a little messy with juices. If you’re already getting char/blistering without it, you can totally skip one step.

  41. User avatar isabella.okeefe75 says:

    5 stars
These turned out so sweet and smoky! I used red peppers and the balsamic really made them pop. Will definitely make again.

    1. User avatar richelle.greenfelder says:

      5 stars
Glad you nailed it! The balsamic really does make the sweetness pop—especially with the char. I’ll have to try red peppers next time.

  42. User avatar fredrick.gislason says:

    3 stars
Step 6 confused me, like why put them under a lid? Whatever, they taste fine.

    1. User avatar wellRespected says:

      4 stars
I totally get you! I wasn’t sure about the lid part either at first, but it really helps steam them. Glad to hear they still turned out tasty!

    2. User avatar Fiddlesticks says:

      3 stars
I thought that part was kinda odd too. Why cover them? Is it to make them soggy? I don’t know, but hey, if they taste good, that’s what matters!

  43. User avatar Sand-Dial says:

    2 stars
I don’t know, mine got burnt on the edges and the insides were still firm. Maybe my oven runs hot? The idea is good but timing is fussy.

  44. User avatar carletta.bauch says:

    3 stars
Not sure about the instructions saying discard the skin—mine definitely tasted a little bitter when I left it. Peeling helped a lot.

  45. 5 stars
These were way better than I expected—sweet, smoky, and the balsamic makes everything pop. I charred mine a bit longer and it was perfect.

    1. User avatar camille.runolfsdottir31 says:

      5 stars
Totally agree! I did the char just a little longer too and the smokiness is unreal. Didn’t expect balsamic to make that much difference—so good.

    2. User avatar augustus.raynor says:

      3 stars
Mine came out kinda bitter when I charred it. Maybe I left the skin on too long? Still tasty though, just not “perfect” like yours. What peppers did you use—red ones?

  46. User avatar tissues_with_issues says:

    3 stars
Psh, roasted peppers? My grandma just boiled them. Guess I’m old-school.

  47. User avatar brant.muller87 says:

    4 stars
Good and simple, but I think 25 minutes was a little short for my oven. Broiled for the last 2-3 minutes and the blistering looked way better. Solid recipe though.

  48. User avatar w00d_ch0p says:

    2 stars
I tried to roast them but my oven runs hot. The peppers got way too burnt and I had to scrape everything off. Flavor was harsh.

    1. User avatar cyrus.willms88 says:

      4 stars
Oh no—if your oven runs hot, 450°F might be too aggressive. I’d try 425°F and start checking at ~20 minutes. Also, roasting cut-side down can help blistering, but you may want to rotate the pan halfway through.

  49. 2 stars
Meh. I know it’s simple, but it tasted kinda bland until I added extra balsamic and a pinch of garlic powder.

  50. User avatar Random Dent says:

    5 stars
I did this with orange peppers and they came out kinda candy-like. My picky kid ate them and asked for more. So… win.

  51. User avatar bettye.williamson2010 says:

    5 stars
    Yum. 😋

  52. User avatar cecil.quitzon16 says:

    4 stars
Pretty straightforward, but mine took more like 40 minutes to get properly blistered at 450°F. Still delicious though—would make again.

  53. User avatar armadillo says:

    2 stars
I don’t get why people love these so much—mine tasted kinda plain after. Maybe I under-salted it? Also my peppers were huge.

  54. 4 stars
Love this as a quick side—so easy. I didn’t even bother peeling all the skin, and it still tasted great.

    1. User avatar Arthur Dent says:

      5 stars
Exactly! I’m always too lazy to peel them perfectly, and the char + steam does most of the work. So good with balsamic.

    2. 4 stars
I tried this but mine took longer at 450F—like 40 min—still tasty though. Next time I’ll trust the blistered skin more and not yank ’em early 😂

  55. User avatar sumiko.jones says:

    5 stars
Love the steam step—my peppers peeled so much easier. Would be even better with garlic or herbs, but this is solid as-is.

  56. User avatar lawana.pfannerstill says:

    4 stars
This is simple and forgiving. The steaming step actually works—peeling was way easier. I didn’t have balsamic so I used lemon and it was still good.

    1. 5 stars
Yes! The steaming really is the magic part—char first, then steam, and the skins practically fall off. Love that you swapped balsamic for lemon too; that tang sounds perfect.

  57. User avatar arden.hane75 says:

    4 stars
Okay but 25-30 min feels like a guess. Different pepper sizes vary a lot. Still tasty, just need better timing guidance.

  58. 4 stars
I skipped the balsamic (didn’t have any) and they were still good. Could’ve used a little more salt, but overall solid.

  59. User avatar octavio.wilkinson1950 says:

    5 stars
Made these tonight—so easy and the peppers taste super sweet once they blister. I didn’t bother peeling all of it and it still rocked.

  60. 4 stars
Five stars?? It’s just roasted peppers lol. Still, they’re dangerously good. I ate them straight off the sheet.

    1. User avatar lucien.bode says:

      5 stars
Haha facts—roasted peppers are basically candy. I always end up eating way too many right off the tray too 😅

  61. User avatar shawn.denesik60 says:

    3 stars
I followed it pretty closely but my peppers came out a bit soggy. Not horrible, just not that perfect roasted texture. Maybe my oven runs cool?

  62. User avatar jarrod.fahey says:

    4 stars
450°F feels super high for peppers… I was nervous, but wow, the skin got nicely charred. Next time I’ll watch them closer because it can go from “blistered” to “burnt” fast.

    1. User avatar shirley.maggio32 says:

      5 stars
450°F didn’t sound right to me either, but I tried it and yep—the char happens quick. I like using the cut-side down like the instructions say; it helps a lot.

    2. User avatar walter.lang50 says:

      3 stars
I always roast peppers at like 350… 450 feels like you’re basically burning pizza toppings 😅 But if it turns out sweet and tender, I guess I’ll trust it. How do you keep them from getting too dark?

  63. 3 stars
Not sure about the ‘discard if desired’ part… I tried to peel everything and ended up wasting half. Still delicious though. Next time I’ll leave a bit of char.

  64. User avatar roberto.collier49 says:

    3 stars
I skipped balsamic and used regular vinegar and it tasted kinda flat. Also 1 tsp salt might be too much for me? But overall still good.

  65. User avatar claretha.gleichner says:

    5 stars
These turned out so sweet and smoky—my whole kitchen smelled amazing. I did the steam step and the skins came off way easier than I expected. Five stars.

    1. User avatar Twisted Fate says:

      5 stars
Love hearing that! The steaming step really is the secret sauce for getting the skins to slip right off. 😊

  66. User avatar ross.kessler5 says:

    1 star
I tried this and they came out raw inside. My oven must run cold, but the recipe doesn’t say what to do if they’re not blistered enough—kinda annoying.

  67. 4 stars
Honestly I forgot the balsamic and they were still amazing. Also steaming in a covered bowl works better than foil for me.

  68. User avatar gerald.hagenes says:

    5 stars
Made these last night—so easy and the skin peels way better after steaming. The balsamic is a nice touch.

  69. User avatar Hildegard Ortiz DDS says:

    4 stars
Charred skin is a little intimidating, but the steaming step saved it. Texture was perfect—soft but not mushy.

  70. User avatar katheryn.witting says:

    2 stars
umm so i did it at 450 but my oven ran hot i think 😅 the outside was black. inside was edible but not pretty. still, would try again carefully.

  71. User avatar Shrine Maidens says:

    5 stars
Great instructions—450°F is the sweet spot. Mine blistered fast at 25 minutes, but I still peeled easily after steaming.

    1. User avatar Ethel L. Cahall says:

      3 stars
Mine blistered too but I think my oven runs hot? 25 min and it was kinda burnt on the edges. Still tasted fine though. Do you flip them halfway or always cut side down?

    2. User avatar smartestRedditor says:

      5 stars
Yes!! 450°F really does the trick. I also get that “blistered in under 30 minutes” thing—just keep an eye on them so they don’t go too far.

  72. 3 stars
I roasted mine on parchment like it says, but half stuck anyway?? Maybe my peppers were too wet. The taste was still solid.

  73. User avatar Max Quordlepleen says:

    4 stars
I didn’t have balsamic, so I skipped it… still delicious though. Next time I’ll definitely add it for the tang.

  74. User avatar lissa.jacobs18 says:

    4 stars
Not sure about discarding the skin. That’s like… flavor? I kept some and it was still good, though maybe not as smooth.

  75. User avatar Tamekia Christiansen says:

    2 stars
Only 4 peppers for a meal? Idk, felt kinda small for the effort. Flavor is okay but not mind-blowing.

    1. 5 stars
Nah I think 4 is perfect lol. Roast + steaming makes them way sweeter and the texture is so good. If you want more, add chickpeas or pasta and call it a meal.

    2. User avatar delisa.dare25 says:

      4 stars
I get what you mean—4 peppers can feel like not enough if you’re feeding people or want it super filling. I’ve doubled it and it still roasts great.

  76. 5 stars
This feels too simple to be “recipe-worthy,” but wow. Charred skin + steaming is genius. 10/10 for effort.

    1. User avatar Peregrin Took says:

      5 stars
Right?! I was skeptical too, but the char + steam combo makes them taste super sweet and roasted instead of just… baked pepper. Delicious.

    2. 4 stars
Honestly sounds basic, but “charred skin + steaming” is the key I guess. I did 35 min at 450 and they got a lil burnt tho 😅 still tasted good.

  77. User avatar sergio.crist30 says:

    5 stars
Wow, this is basically foolproof. I used balsamic and it tasted fancy like restaurant roasted peppers.

  78. User avatar kyle.collins says:

    2 stars
Not gonna lie, peeling burnt pepper skin is a chore. Would love a shortcut like how long to steam or a better method.

  79. 3 stars
450°F feels aggressive lol. Mine got super dark, but after steaming they came out fine. Next time I’ll watch more closely.

  80. User avatar earlene.russel2004 says:

    4 stars
Nice and simple. I followed it pretty closely, but I think 25 minutes was a little short for my oven. Still turned out great.

    1. User avatar oPandariaNo says:

      5 stars
Totally agree—“about 25 minutes” is so oven-dependent. Mine always needs closer to 30-35 to get that proper blistered char. Glad it still came out great though!

    2. User avatar sanjuanita.cassin67 says:

      3 stars
I tried this once and mine got kinda burned on the edges… but maybe I cut them too thin? The steaming step helped a lot, not gonna lie. Next time I’ll watch more than the timer.
