Potato Galette With Cheese

October 10, 2025

Potato Galette with Cheese is a golden, crispy masterpiece that turns simple ingredients into something extraordinary. Layers of thinly sliced potatoes are baked with butter and cheese until the edges become perfectly crisp and the inside melts into creamy perfection. This rustic French-inspired dish is the ultimate comfort food – rich, flavorful, and impressive enough to serve at any dinner table.

The beauty of a potato galette lies in its simplicity. Thin potato slices are arranged in overlapping layers, brushed with butter or olive oil, and sprinkled generously with cheese. As it bakes, the potatoes soften and the cheese melts, creating a tender, cheesy interior with a crunchy, caramelized crust. The aroma alone is irresistible, filling the kitchen with warmth and comfort.

Choosing the right cheese makes all the difference. Gruyère or sharp cheddar adds depth and nuttiness, while mozzarella or fontina brings a creamy melt. A touch of garlic, thyme, or rosemary adds an aromatic note that perfectly complements the rich potatoes. Each bite delivers a balance of crisp edges, soft layers, and gooey cheese – simple yet sophisticated.

Potato galette is versatile enough to be served as a side dish or the star of the meal. Pair it with roasted meats, a fresh salad, or even eggs for a comforting brunch. It’s equally at home at a holiday feast or a cozy weeknight dinner. And while it looks elegant, it’s wonderfully unfussy to prepare, relying on the natural beauty of the golden potato layers for its presentation.

Potato Galette with Cheese is proof that comfort food can also be refined. With its buttery layers, melted cheese, and crispy edges, it’s a dish that celebrates everything we love about potatoes – hearty, humble, and utterly delicious.

I dunno about this. The layers end up mushy. Wonder if I did something wrong…

    1. User avatar Loren Sauer Jr. says:

      4 stars
Maybe try slicing the potatoes thinner? That can help with the texture. I had some mushiness too at first.

OMG, so cheesy! Totally up my alley. I used cheddar and it was to die for!

This was fun to make, but messy. Still turned out alright though. Nice dish!

Took way longer than 45 min to cook. Kinda disappointed. Taste was okay tho.

I forgot the thyme :((( So sad now. I hope it will be good anyway.

Don’t worry! The cheese will still make it delicious. Just call it a ‘cheesy potato galette’!

Thyme or no thyme, how bad could it be? I think it’ll still taste fine. Also, what’s thyme anyway?

  8. 4 stars
Yum! Even my picky eater son liked it. It’s a total winner. Thanks for sharing!

  9. User avatar ray.reynolds says:

Too much cheese if u ask me. Next time im using half, it was drowning in it lol.

  10. User avatar freddy.jerde54 says:

Looks like a potato pizza but better. I sliced the potatoes with a mandolin and it baked evenly.

  11. 5 stars
The spiral layering is oddly satisfying. I used cheddar and it browned beautifully. Would absolutely make again.

  12. User avatar kristopher.bogan1979 says:

    5 stars
Wow—surprisingly easy for how impressive it looks. The cooling step helped; slices held together better.

  13. User avatar kala.mcglynn58 says:

    3 stars
I’m skeptical about the 45 minutes. My potatoes were almost underdone until I sliced them even thinner. Still delicious.

  14. User avatar lucius.veum20 says:

    5 stars
The spiral layering is kind of hypnotic, not gonna lie. This is a solid side dish and also feels fancy without much effort.

  15. User avatar jesse.simonis11 says:

I think 400°F is too hot… or my oven runs cold? I ended up covering it with foil halfway so it wouldn’t burn.

  16. 3 stars
I don’t know… it came out kinda mushy. Maybe I sliced the potatoes too thick?

  17. User avatar vernon.west92 says:

    5 stars
This was amazing! The cheese makes it so rich and tasty!

  18. User avatar elsie.schowalter48 says:

Super easy to make! Even my kids ate it without complaining. Will definitely make again!

  19. User avatar Emily Saunders says:

    4 stars
Mine didn’t brown much after 45 min, so I left it another 15. Tastes awesome though—next time I’ll crank the oven a bit.

  20. User avatar Randall Rodriguez says:

    5 stars
Soooo yummy! I used mozzarella instead and it was a hit at the party!

  21. User avatar stanton.kiehn45 says:

    5 stars
Just finished baking mine and it’s delicious!!! Perfect comfort food.

  22. 4 stars
The spiral layering is kind of therapeutic lol. Flavor was solid, but I wish it had more info on skillet size—mine got crowded and the edges browned too fast.

  23. User avatar joslyn.ondricka24 says:

    4 stars
Super easy, but my potatoes weren’t tender at 45 minutes (thin slices helped later). I think next time I’ll cover it for the first half to steam a bit.

    1. User avatar gena.purdy32 says:

      5 stars
Totally agree about the slicing—45 min seems to depend a lot on how thin they are. Covering for the first half is a great fix to help steam them through.

  24. User avatar cecil.tremblay15 says:

    4 stars
I followed the steps pretty closely, but my slices were a touch too thick. Still good, just less crispy. Next time I’ll slice thinner and bake a few minutes longer.

  25. User avatar Jade Cormier I says:

Made this tonight—so crispy on top and the thyme smell is unreal. I used cheddar because that’s what I had and it still turned out great.

  26. User avatar walton.hill89 says:

    3 stars
Do I really need to peel the potatoes? Seems like a lot of work…

    1. User avatar austin.bechtelar says:

      5 stars
Nah, peeling is overrated! Leave the skin on for some extra nutrients. Way easier too!

    2. User avatar jeffery.boyer79 says:

      4 stars
You don’t have to peel them, but it does help with the texture! I say give it a try either way.

  27. User avatar melvin.goodwin98 says:

    4 stars
Super easy to make! I used cheddar and it tasted sooo good. Will try with Gruyère next time.

  28. User avatar jesus.oberbrunner says:

This was sooo good! I added some garlic and it was incredible. Def gonna make again!

    1. User avatar Lumberjack says:

  29. User avatar hershel.fay69 says:

    I don’t know, I think it’s just sliced potatoes and cheese? 🤔

    1. User avatar hellen.schaden73 says:

      5 stars
It’s more than just that! The butter and thyme really add flavor. You gotta try it!

  30. User avatar dorian.little1975 says:

    3 stars
My cheese slid off a bit because I used pre-shredded cheese. Next time I’ll grate my own—still tasty.

    1. User avatar lorean.gutkowski says:

      5 stars
That makes sense—pre-shredded usually has anti-caking stuff, so it doesn’t melt/grab as well. Grating your own will definitely help it stay put. Still, glad it tasted good! 😊

  31. User avatar lupe.oconner67 says:

    1 star
I burnt mine because I forgot it in the oven. 😭 Plz watch your time!!

    1. User avatar zachary.conn says:

      3 stars
Yeah, but 45 min?? That’s a long time… I usually check mine earlier.

    2. User avatar katie.williamson1968 says:

      4 stars
Oh no! I’ve done that too. Timer is a lifesaver! 😅

  32. User avatar kelly.balistreri2017 says:

    3 stars
I followed the steps but my potatoes weren’t tender after 45 minutes. Maybe my slices were too thick—still tasted good though.

  33. User avatar glenn.wyman91 says:

    3 stars
I followed it exactly and mine didn’t get crispy—more like soft and cheesy. Maybe my potato slices were too thick or the skillet wasn’t hot enough?

    1. 4 stars
Yeah, that sounds like the two usual culprits. If the potato slices weren’t really thin (like ~1–2 mm), they can stay soft instead of crisping. Also make sure the oven is fully preheated and your skillet is hot before it goes in—if it’s a thick, heavy pan it can take longer to brown.

    2. User avatar halflife4 says:

      3 stars
Maybe 45 min isn’t enough? Mine was crispy after like an hour, but I also used waxy potatoes instead of russet (idk if that matters). Also I might’ve added more cheese than the recipe, so it got that cheesy crust.

  34. User avatar giuseppe.bednar2006 says:

    4 stars
The instruction to “spiral” the potatoes is kinda hard… mine looked more like a tangled potato pile. But it cooked fine and the edges got crispy anyway.

  35. 4 stars
I used cheddar only and it still turned out great. Sliced potatoes pretty thin and it definitely helped with the crisping.

  36. User avatar elinor.daugherty13 says:

    3 stars
Mine stuck a little to the pan even though I greased it. I think I should use parchment under the potatoes next time. Still ate it all lol.

    1. 5 stars
Ugh, that’s the worst 😩 Parchment totally could help—especially since the potatoes get a little sticky from the cheese and butter. Next time, try parchment *and* a little extra butter on the pan edges. Glad you still ate it all though 😂

    2. User avatar Ryan Turner IV says:

      3 stars
Maybe you didn’t grease enough? I’ve had luck just pressing it down and letting it bake longer so it releases. Also 45 min feels short for thin slices? Next time try higher temp maybe like 425°F. Mine didn’t stick at all.

  37. User avatar nancie.ullrich2025 says:

    5 stars
This galette is amazing! The cheese melts perfectly. My family loved it!

  38. User avatar jean.dicki81 says:

    2 stars
I found this recipe to be quite bland. Maybe add some garlic next time?

  39. 2 stars
I think 400°F for 45 min is too low… and also 1 tsp thyme seems like a lot? I’m going to try 425°F next time and cut the thyme in half.

  40. 5 stars
OMG this is so good! Made this for a dinner party, everyone loved it.

  41. User avatar tamica.monahan says:

    5 stars
Made this tonight—so good. The thyme really comes through and the top gets perfectly crispy. I sliced the potatoes a bit thicker and it still worked.

  42. User avatar reuben.flatley says:

    2 stars
I think you need way more than 1 teaspoon salt for 4 medium potatoes. It tasted a bit under-seasoned until I added more pepper and thyme at serving.

    1. User avatar marquitta.oreilly says:

      5 stars
Totally agree—1 tsp salt for 4 medium potatoes feels light. I usually salt a little more (and sometimes add extra right at the end too).

  43. User avatar Pizpot Gargravarr says:

    2 stars
WAY too much butter! I felt like I was eating lard. Will cut back next time.

    1. User avatar Spider Soldier says:

      4 stars
I totally agree, too much butter can really overpower the taste! I prefer mine with less as well.

    2. User avatar King Daltus says:

      2 stars
Nah, butter makes it better! You gotta embrace the flavor, dude! 😋

  44. 3 stars
I followed it exactly, but mine turned out a bit dry and not as golden. Maybe my skillet wasn’t getting hot enough? Taste was fine, just not the texture I wanted.

    1. User avatar stephani.kerluke80 says:

      4 stars
Oof, that’s frustrating. If it’s dry but the taste is still good, I’d suspect the cook time/temp or how thin your slices were. I’ve found thicker slices = drier center, and a skillet that doesn’t heat evenly won’t brown as well. Next time try slicing a hair thinner and/or bump to 425°F for the last 5–10 min (watch it).

    2. User avatar clair.macgyver77 says:

      3 stars
Maybe the skillet wasn’t hot enough, but also… 45 mins seems short? I usually bake longer til it looks like “brown paper” lol. Did you grease the dish/skillet good? And did you squeeze out extra potato water? Mine always get golden if I do that.

  45. User avatar chase.gorczany63 says:

    2 stars
I followed it exactly but somehow my top never got golden, more like lightly browned. Could be my oven runs cold—otherwise it was tasty.

    1. User avatar Genghis Khan says:

      3 stars
Hmm I don’t think you followed it “exactly” if the top didn’t brown. Maybe your potatoes were too thick, or your skillet is too light/slow to heat. Also do you cover it at all? (I always keep it uncovered.)

    2. User avatar damian.predovic says:

      4 stars
That sounds like an oven temp issue—mine also took longer when I set 400°F but it wasn’t really that hot. Try cranking to 425°F next time or bake 10–15 minutes extra until it actually browns.

  46. User avatar isreal.kshlerin1973 says:

    5 stars
Absolute crowd pleaser! Made it for friends and they loved it. Thx for sharing!

  47. User avatar fidel.greenfelder56 says:

    1 star
I used mozerrella instead of cheddar, it was a big fail. Sticking to the recipe next time!

  48. User avatar alba.rodriguez says:

    4 stars
What is a galette anyway? I just call this cheesy potatoes. Still, yum!

    1. User avatar junior.hoeger88 says:

      2 stars
Cheesy potatoes? That’s just what I call my mashed potatoes. What’s a galette even supposed to mean?

    2. User avatar isadora.predovic2024 says:

      4 stars
A galette is like a fancy potato dish! But honestly, cheesy potatoes sound better to me! Yum!

  49. User avatar melvin.cruickshank1952 says:

    5 stars
Made this for dinner last night—super cozy. The thyme smell while it baked was unreal, and the top got beautifully golden.

    1. User avatar tissues_with_issues says:

      5 stars
Oh wow, that sounds perfect. I love when the thyme smell fills the kitchen like that—this is going on my list for sure. Did you slice the potatoes super thin or did you use a mandoline?

  50. User avatar domenic.thiel says:

    3 stars
I followed it exactly and it came out kinda salty? Maybe my cheese was already salty. Still tasty though, just be careful with the salt.

  51. User avatar sherie.satterfield97 says:

    3 stars
Not bad, but my potatoes took longer to cook than the recipe said. Maybe my oven is off?

  52. 4 stars
Tasty and easy, but why thyme? I forgot to put it, lol!

  53. User avatar Theron Koch says:

    4 stars
Pretty good, but my potatoes weren’t tender at 45 minutes (maybe my slices were thicker). Next time I’ll slice thinner or bake a bit longer.

    1. User avatar jeni.ondricka68 says:

      4 stars
Hmmm maybe I just don’t know ovens, but mine weren’t tender either at 45 minutes. I covered it with foil halfway and they finally softened—also my potatoes were kinda thick tho 😅

    2. 5 stars
Totally agree—45 minutes feels short if the slices are more than paper-thin. I usually aim for closer to 55–65 and it still comes out crispy on top.

  54. User avatar tracee.bahringer says:

    5 stars
This came out super crispy on top and creamy in the middle. I used gruyère and the flavor is honestly restaurant-level. Will make again.

    1. User avatar kendra.luettgen2008 says:

      5 stars
Yes!! That’s exactly how it’s supposed to be—crispy top, creamy middle. I’ve been using Gruyère too and it really does taste “fancy.” 😄

  55. User avatar Flame Atronach says:

    4 stars
Potatoes are a vegetable, right? So this is kinda healthy?

  56. User avatar Karl Littel says:

    5 stars
Made this tonight and it came out super crispy on top. I used Gruyère and the thyme really made it pop. Slice held together better after a 10-min rest.

  57. 5 stars
This was AMAZING! So cheesy and crispy. Definitely going to make it again.

    1. 2 stars
I dunno, it seems a bit too cheesy for my taste. Maybe I won’t try it after all.

    2. User avatar basementDweller says:

      5 stars
Yum! I tried this and loved how the cheese melted. It’s a hit with my family too!

  58. 4 stars
Does anyone else find grating a whole cup of cheese annoying? 😅 But yeah, it was worth it. I’m making this again for brunch.

  59. 2 stars
Potatoes tasted bland until I added extra salt at the end. Also, 400°F is a bit intense—mine browned before fully cooking, so I had to cover it with foil.

    1. User avatar terminatorXYZ says:

      5 stars
Totally agree on the salt. I always end up needing a pinch more at the end—cheese helps, but the potatoes still can taste a little flat without it. Also I set mine closer to 375°F so it doesn’t brown so fast.

    2. User avatar pete.schroeder62 says:

      3 stars
400°F didn’t do that for me but maybe your slices were too thick? I’d try thinner slices and maybe keep the skillet covered after it starts to brown. Otherwise yeah, bland potatoes happens—salt isn’t optional 😅

  60. User avatar van.ebert64 says:

    3 stars
This is just like my grandma used to make, but she never used thyme. Kinda weird.

  61. 3 stars
Galette? I thought this was a frittata! 😂 Still turned out good tho.

Potatoes and cheese, can’t go wrong. Eating this is like a hug in my stomach! 🤗

  64. User avatar emile.skiles55 says:

    4 stars
Pretty tasty but 45 minutes felt a little short for my oven. I ended up going closer to 55 and the potatoes were actually tender. Otherwise great.

  65. User avatar trent.mccullough1980 says:

    2 stars
Could be better—mine was a bit bland even with salt and pepper. I think next time I’ll add garlic or something, because right now it tastes like “potato but okay.”

  66. User avatar clayton.sanford says:

    5 stars
This came out so crispy on top while the inside stayed tender—exactly what I wanted. The thyme makes it taste way more “fancy” than a simple potato dish.

    1. User avatar ardelle.paucek74 says:

      5 stars
Yes!! I made this once and got the exact same crispy top / tender middle vibe. The thyme really levels it up—so good with a little extra pepper.

    2. User avatar cristopher.satterfield says:

      3 stars
Mine was tasty but I couldn’t get it “crispy on top” like you said—maybe my slices were too thick? I used cheddar and I think it burned a little before the potatoes were done. Still ate it though 😅

  67. User avatar gena.walker29 says:

    5 stars
This turned out super crispy on top and the potatoes were tender inside—exactly what I wanted. I used Gruyère and fresh thyme, and it smelled amazing while baking.

    1. User avatar marcellus.jacobs86 says:

      5 stars
Yes! That’s exactly the sweet spot—crispy top but tender inside. Gruyère is such a good call with thyme.

    2. 3 stars
I tried this but mine didn’t really crisp… maybe I sliced the potatoes too thick? I used cheddar though. Still tasted good, just kinda greasy on top.

  68. User avatar johnson.wiegand says:

    3 stars
The ingredient list is simple, but I think the ratios are off. 1 cup cheese for 4 potatoes feels low unless you pack it tightly. Flavor was okay though.

  69. User avatar lucila.sauer52 says:

    5 stars
Yummm! Perfect for potlucks. So cheesy! Everybody loved it!

  70. User avatar judie.schaden says:

    4 stars
not bad at all! i used cheddar and it browned fast—had to watch it in the last 10 min. would make again

  71. User avatar Salvador Dickens says:

    3 stars
I’m skeptical about the timing—45 minutes at 400°F wasn’t enough for my thick-cut potatoes. I ended up baking closer to 60 minutes. Flavor is solid, just watch the doneness.

  72. User avatar van.shields0 says:

    3 stars
Mine stuck to the skillet even though it was greased. Next time I’ll use parchment or a better nonstick dish. Taste was good regardless.

  73. 5 stars
    Yum!

  74. 5 stars
Really nice recipe! I used Gruyère and it tasted kinda nutty and rich. Would absolutely make again for guests.

    1. User avatar alberta.runolfsson18 says:

      5 stars
Thanks! Gruyère sounds perfect—nutty and rich is exactly what I hope the cheese brings. Love that you’d make it for guests too.

  75. User avatar Shaddam Corrino IV says:

    5 stars
    yum

  76. 2 stars
I didn’t really get it. Too much cheese? I dunno, it just felt heavy.

  77. User avatar stanley.greenfelder28 says:

    4 stars
I tried this in a glass baking dish and it was fine, but I lost some crisp on the bottom. Skillet probably matters a lot.

    1. User avatar Vanryth says:

      5 stars
Totally agree—skillet vs glass makes a big difference. I’ve noticed the bottom browns way better in cast iron or a dark metal pan. Glass seems to steam a bit more, so you lose that crunch.

  78. User avatar katy.pfeffer71 says:

    3 stars
Good recipe but needs more flavor. I added garlic powder and it was better.

    1. User avatar hsiu.prohaska77 says:

      5 stars
I completely agree! Garlic powder really amps up the flavor. I like to add some paprika too. Will try it your way next time!
