Potato Galette with Cheese is a golden, crispy masterpiece that turns simple ingredients into something extraordinary. Layers of thinly sliced potatoes are baked with butter and cheese until the edges become perfectly crisp and the inside melts into creamy perfection. This rustic French-inspired dish is the ultimate comfort food – rich, flavorful, and impressive enough to serve at any dinner table.
The beauty of a potato galette lies in its simplicity. Thin potato slices are arranged in overlapping layers, brushed with butter or olive oil, and sprinkled generously with cheese. As it bakes, the potatoes soften and the cheese melts, creating a tender, cheesy interior with a crunchy, caramelized crust. The aroma alone is irresistible, filling the kitchen with warmth and comfort.
Choosing the right cheese makes all the difference. Gruyère or sharp cheddar adds depth and nuttiness, while mozzarella or fontina brings a creamy melt. A touch of garlic, thyme, or rosemary adds an aromatic note that perfectly complements the rich potatoes. Each bite delivers a balance of crisp edges, soft layers, and gooey cheese – simple yet sophisticated.
Potato galette is versatile enough to be served as a side dish or the star of the meal. Pair it with roasted meats, a fresh salad, or even eggs for a comforting brunch. It’s equally at home at a holiday feast or a cozy weeknight dinner. And while it looks elegant, it’s wonderfully unfussy to prepare, relying on the natural beauty of the golden potato layers for its presentation.
Potato Galette with Cheese is proof that comfort food can also be refined. With its buttery layers, melted cheese, and crispy edges, it’s a dish that celebrates everything we love about potatoes – hearty, humble, and utterly delicious.

I dunno about this. The layers end up mushy. Wonder if I did something wrong…
Maybe try slicing the potatoes thinner? That can help with the texture. I had some mushiness too at first.
Just a potato pie with cheese… boring!
This potato galette is amazing! I added some garlic for a kick and it was perfect. My family loved it!
OMG, so cheesy! Totally up my alley. I used cheddar and it was to die for!
This was fun to make, but messy. Still turned out alright though. Nice dish!
Took way longer than 45 min to cook. Kinda disappointed. Taste was okay tho.
I forgot the thyme :((( So sad now. I hope it will be good anyway.
Don’t worry! The cheese will still make it delicious. Just call it a ‘cheesy potato galette’!
Thyme or no thyme, how bad could it be? I think it’ll still taste fine. Also, what’s thyme anyway?
Yum! Even my picky eater son liked it. It’s a total winner. Thanks for sharing!
