Ingredients
  

  • 4 fillets salmon about 6 oz each
  • 1/2 cup parmesan cheese grated
  • 1/4 cup breadcrumbs preferably Panko
  • 1 tbsp parsley chopped fresh
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 lemon zest
  • 4 wedges Lemon for serving

Instructions
 

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil.
  • In a small bowl, mix together the Parmesan cheese, breadcrumbs, parsley, garlic powder, salt, pepper, and lemon zest.
  • Brush each salmon fillet with olive oil and then press the Parmesan mixture onto the top of each fillet, covering it well.

    I think my oven runs hot because mine overbrowned at around 10 minutes. Flavor was good, but I’d watch it closely. Next time I’ll start checking earlier.

      Idk my oven never runs hot 😅 but maybe yours. I’d try lowering to like 375°F for the same cook time if the crust browns too quick.
