Paella Verdura

January 28, 2026

Paella Verdura is a vibrant, vegetable-forward twist on the classic Spanish paella, celebrating fresh, seasonal produce in every colorful bite. This dish is perfect for those seeking a lighter, plant-based alternative to traditional seafood or meat paellas, without sacrificing the rich, comforting flavors that make paella a beloved dish worldwide. With its mix of tender vegetables, saffron-infused rice, and fragrant spices, Paella Verdura is as pleasing to the eyes as it is to the palate.

The heart of any paella is the rice, and in Paella Verdura, it’s cooked to perfection with a blend of aromatic vegetables like bell peppers, peas, artichokes, zucchini, and green beans. Sautéed in olive oil with onions, garlic, and a touch of smoked paprika, the vegetables release their natural sweetness, infusing the rice with layers of flavor. A pinch of saffron not only gives the dish its iconic golden hue but also adds a subtle floral depth that elevates every bite. Stirring is minimal to encourage the formation of the socarrat, the cherished crispy layer at the bottom of the pan, which adds a delightful texture contrast.

Paella Verdura is highly versatile and can be adapted based on what’s fresh and in season. Cherry tomatoes, asparagus, mushrooms, or even roasted cauliflower can be added for extra flavor and color. Fresh herbs like parsley or thyme brighten the dish just before serving, enhancing both aroma and presentation. Lemon wedges are a must, offering a tangy finish that balances the richness of the saffron and olive oil.

This vegetable paella is ideal for sharing with friends and family, served straight from the pan for a casual, communal dining experience. It pairs beautifully with a crisp white wine like Albariño or Verdejo, which complements the earthy flavors of the vegetables and the subtle spice of saffron.

Paella Verdura proves that vegetarian dishes can be just as flavorful, hearty, and satisfying as their traditional counterparts. Its combination of vibrant vegetables, perfectly cooked rice, and aromatic seasonings makes it a centerpiece-worthy dish that celebrates fresh ingredients and the joy of cooking. Whether for a weeknight dinner or a festive gathering, Paella Verdura is a delicious, colorful, and wholesome choice.

OMG this is SO GOOD! My kids even ate it without complaining! I’ll make it again for sure.

    1. 2 stars
Looks good but I doubt my family will eat it. They don’t like green beans, and saffron is too fancy for us. Anyone tried it with chicken?

    2. User avatar smartestRedditor says:

      5 stars
I’m so glad to hear that your kids loved it! It’s always a win when they don’t complain about dinner. What sides did you serve with it?

  2. User avatar alita.swaniawski1990 says:

    5 stars
This paella was so vibrant and full of flavor! Loved the saffron touch. 5 stars!

    1. User avatar emmett.runolfsdottir14 says:

      2 stars
Saffron is so expensive! Is it really necessary for the flavor? I’m skeptical.

    2. 4 stars
I’ve never tried making paella before, but it sounds delicious! Do you think I could add chicken?

  3. User avatar donita.spencer57 says:

    2 stars
It turned out a bit mushy for me. Maybe I added too much broth? Not sure if I’ll try again.

  4. User avatar sheri.bins92 says:

    3 stars
Instructions were a bit confusing, but the result wasn’t bad. I’ll give it another shot.

    1. 4 stars
I think if you follow the instructions closely, it’s actually pretty easy. What was confusing for you?

  5. User avatar nikia.mcglynn says:

    4 stars
I dont know what saffron is, but I put some curry powder instead. Works for me! 😂

  6. User avatar MAGA2024.Trumpster says:

    4 stars
Easy and quick! Perfect for a weeknight dinner. I added some chickpeas too for extra protein!

  7. User avatar rhett.dare93 says:

    3 stars
Eh, not my thing. I prefer meat in my paella. This just felt like a vegetable soup with rice.

  8. User avatar geoffrey.fahey says:

    3 stars
Couldn’t find Bomba rice, so I used Arborio. It was tasty but I didn’t get that classic bottom crust (socarrat). Might be my heat.

  9. User avatar bethel.wunsch97 says:

    5 stars
Made this tonight and it came out super flavorful. The smoked paprika really makes it taste “paella-ish” even without seafood. I used regular short-grain rice and it still worked.

    1. User avatar Lumberjack says:

      3 stars
I tried something similar, but mine turned out kind of bland. I think I didn’t soak the saffron long enough? Also, when you say paella-ish—does it still get that crusty bottom (socarrat) in a regular pan?

    2. User avatar quinton.gleichner4 says:

      5 stars
Yes!! That smoked paprika “paella vibe” is real. I’ve done it veggie-only too and it still slaps—great call on the short-grain rice.

  10. User avatar joaquina.wolf36 says:

    4 stars
Perfect dish for a cozy night in, but I left out the green beans (don’t like them) and it was still great!

  11. User avatar Kelly Terry says:

    5 stars
This sounds delicious! Can’t wait to try it out with my family!

  12. User avatar hiram.waelchi63 says:

    5 stars
Made this tonight—so bright and veggie-forward! The saffron smell is seriously next level. I used frozen peas and it still came out great. Will definitely make again.

    1. User avatar basementDweller says:

      5 stars
Love hearing that! The saffron really does make it so “restaurant-y” (in a good way). Frozen peas still working is a nice win too 😄

  13. 3 stars
Not gonna lie, this reads a bit like a vegetable broth soup until the rice part. I think you need a wider pan and proper heat to get that paella crust.

    1. User avatar wendie.purdy20 says:

      4 stars
Maybe I did something wrong? My pan was smaller and mine definitely came out more like rice soup than paella. Next time I’ll use a wider pan and try higher heat like you said. The flavors were great though.

    2. 5 stars
Totally get what you mean—paella is *supposed* to form a crust (socarrat). I’ve found that a wider, shallower pan and heating it up a bit more at the end makes a huge difference. Also worth not stirring after the rice goes in.

  14. 3 stars
I’m not sure why you say “without stirring” because I always stir paella or it clumps 😅 But the veggies were tasty and the saffron smell is legit.

  15. 1 star
5 stars? Nah. I followed steps exactly and it was bland and too soupy. Maybe my rice wasn’t bomba (grabbed random short grain). Also saffron is expensive… not sure it’s worth it.

    1. User avatar Shelli Boyer III says:

      4 stars
I get the frustration. Paella can turn soupy fast if the heat is too low (or the broth amount ends up too high). Did you keep it at a steady simmer and not cover it? Also bomba vs other short grain really matters for that texture.

  16. User avatar andra.mraz2025 says:

    5 stars
Just like my abuela used to make! A real gem of a recipe. I added some extra veggies and it was perfect.

  17. 4 stars
I’m not gonna lie, I was skeptical about “stirring, 1-2 minutes” then “don’t stir.” But the paella crust idea makes sense. Mine got a little stuck in spots, but flavor was on point.

  18. User avatar josef.powlowski2006 says:

    1 star
Paella? More like paella-ugh! Didn’t turn out well, my friends said it looked weird. Never again.

    1. User avatar hilma.brakus92 says:

      4 stars
Sorry to hear that! Maybe it was just an off day? Paella can be tricky, but I love it when it turns out right!

  19. User avatar ashley.abernathy says:

    3 stars
My rice stuck to the pan a little because I used a smaller skillet. Maybe medium heat was too high? Tasted good though—nice flavor.

    1. User avatar penney.turner77 says:

      4 stars
Totally makes sense—using a smaller skillet changes how heat hits the rice. Medium might’ve been a bit hot for your pan size, especially since the recipe says “uncovered” and not stirring after simmering. I’ve had good luck with a slightly lower simmer so the bottom doesn’t crisp too hard.

  20. User avatar annalisa.dare says:

    2 stars
I dont know about saffron; too fancy! Could I use chili powder instead? Not sure if that’d work, ideas?

    1. User avatar Daron Howe says:

      3 stars
I dunno, saffron is super important to paella! If you dont have it, maybe just skip it instead of using chili? It won’t taste the same.

    2. 4 stars
Chili powder could definitely add a different flavor, but saffron gives it a unique taste! If you want to try chili, maybe use half and half? Just a thought!

  21. User avatar chloe.sawayn71 says:

    4 stars
I screw up the rice every time! 🙄 but this recipe made it sooo easy! Finally got it right!

  22. User avatar liana.klein74 says:

    5 stars
Wow, this Paella Verdura is amazing! So much flavor!

  23. 5 stars
This turned out really flavorful—loved the smoked paprika with the saffron. I used frozen peas and it still tasted fresh. Great weeknight paella vibe!

  24. User avatar dexter.abshire says:

    5 stars
This looks delicious—vegetable paella is such a comfort. I especially love the smoked paprika + saffron combo. Going to try it with bomba rice and not stir after the boil like the instructions say.

  25. User avatar coleman.streich38 says:

    3 stars
Not bad for a veggie dish, I guess.

  26. 4 stars
Yummy! Quick & easy to follow. Just a little bland for my taste, maybe more spices next time.

    1. User avatar dia.bergnaum14 says:

      4 stars
Glad to hear you found it quick and easy! For more flavor, maybe try adding some cayenne pepper or even a splash of soy sauce? 😊

    2. User avatar alfredo.padberg0 says:

      3 stars
Bland? Really? I thought it was bursting with flavor! But hey, everyone’s taste is different. More spices next time, for sure!

  27. User avatar manda.swift49 says:

    2 stars
I’m skeptical. 20–25 minutes uncovered sounds optimistic for rice + lots of veg. Mine took closer to 35. Still edible, but plan ahead.

  28. User avatar Gaius Helen Mohiam says:

    1 star
Not my thing. Too many veggies! Gimme meat!

    1. User avatar nickolas.grimes58 says:

      4 stars
Hey, I get it! Not everyone likes veggies. You can always add some chicken or shrimp to this recipe!

  29. User avatar mathWizard says:

    3 stars
I like the veggie-forward vibe, but “no stirring” made me nervous 😅. Also my onion went slightly brown because my burner ran hot. Still tasty though, just not as pretty as the picture in my head.

  30. 5 stars
This paella is super tasty! I loved how the saffron brought out the flavors. Definitely making it again!

  31. User avatar Paul "Muad'Dib" "Usul" Atreides says:

    2 stars
I didn’t have saffron threads so I used a pinch of turmeric. It tasted… fine? Color was nice but it didn’t taste the same. Probably a “buy saffron once” situation.

    1. User avatar Sonny Keeling says:

      4 stars
Yeah, turmeric can get you the color, but saffron has that distinct flavor/aroma. “Fine” is basically the best-case substitution 😅 Next time just bite the bullet and grab some saffron threads—usually a little goes a long way.

  32. User avatar ted.kirlin34 says:

    3 stars
Couldn’t find saffron threads, so I used a pinch of turmeric + a little extra paprika. It wasn’t the same, but it was still yummy.

    1. 2 stars
No saffron = not really paella, sorry 😅 But if you liked it, I guess it counts. I’d cut back on the paprika though, turmeric can get kinda bitter if you add too much.

    2. User avatar craig.lebsack says:

      4 stars
Totally get that! Saffron is so pricey/hard to find. Turmeric + extra paprika is a clever workaround—glad it still turned out yummy. Did the color come out more golden-orange than yellow?

  33. User avatar w00d_ch0p says:

    3 stars
I’ve never made paella before and this looked easy but I messed it up. My rice got mushy 😭. Need more practice!

  34. User avatar chet.cassin says:

    4 stars
Good guide! I was worried about not stirring after simmering, but it actually gave me a nice texture. Next time I’ll add a pinch more saffron because I love that aroma.

  35. User avatar ilona.satterfield22 says:

    3 stars
Not bad, but paella needs seafood? That’s what my family says. Also I accidentally added the peas too early and they went mushy. Flavor still good, but texture was off.

    1. User avatar denny.anderson2000 says:

      4 stars
Totally get you—traditional paella often has seafood (or at least stock from it). For this verdura version though, the veg + saffron broth still gives it that classic vibe. And yep, peas mushy is a real risk—adding them earlier can do that. Next time I’ll add them later (like the recipe says) or even briefly fold them in near the end.

  36. User avatar wellRespected says:

    5 stars
Yum! Just made it for dinner and my whole family loved it. Will definitely make again!

  37. User avatar Nick O'Teen says:

    5 stars
Made this tonight—super flavorful and the saffron really makes a difference. I used bomba rice and it came out nice and tender. Next time I might add some artichokes for extra texture.

    1. User avatar mathWizard says:

      3 stars
Hmmm paella without chicken? Still looks good, but I always worry about saffron being wasted in veggie versions. Also “uncovered” simmer—mine dries out fast. Did you add more broth maybe?

    2. User avatar heath.price1996 says:

      5 stars
Yes!! I love when the saffron actually shows up in flavor. Bomba rice doing its job 👏 Next time artichokes sounds like such a great add too—would give it that little briny bite.

  38. User avatar ShanksOnePiece says:

    2 stars
I’m skeptical about “uncovered without stirring” for 20-25 minutes. Mine dried out and got crunchy on the bottom, so I added a splash of broth near minute 15.

    1. User avatar gilbert.hessel36 says:

      5 stars
Yeah, I get the skepticism. Uncovered and “no stirring” can work, but only if your heat isn’t too high and there’s enough broth evaporating at a steady pace. If the bottom dries/cooks too fast, a splash like you did is totally reasonable.

  39. 3 stars
Huh, saffron is so expensive! I might skip that part. Still looks good tho.

  40. User avatar kelsie.waters says:

    2 stars
I think 1 cup green beans is too much for the rice ratio—mine felt veggie-heavy. Would probably cut to 1/2 cup next time.

  41. User avatar guy.stamm says:

    3 stars
I only gave it 3 stars because my bell pepper didn’t cook down enough—next time I’ll cut them smaller or cook them longer. Otherwise pretty solid vegetarian paella.

    1. User avatar lesley.langosh9 says:

      4 stars
3 stars is fair. I always find bell pepper stays a bit crunchy if it’s chunky. Maybe also cover it for part of the simmer or add it a little earlier? Either way, sounds tasty.

    2. User avatar Dwarven Centurion says:

      5 stars
Thanks for the honest feedback! Bell pepper can be stubborn—cutting smaller or just giving it a few extra minutes in step 3 usually fixes it. Glad you still liked the overall paella vibe 🙌

  42. 3 stars
Could be great, but I found 20–25 minutes wasn’t enough for my rice. I ended up simmering longer and it finally set properly.

  43. User avatar Arthur Philip Deodat says:

    5 stars
Smoked paprika + saffron is such a smart combo. I also added a squeeze of lemon at the end and it took it to another level. 10/10.

    1. User avatar Wes Lehner says:

      3 stars
Interesting… I’m not sure about the lemon. Paella is already pretty flavorful and lemon can make it taste more like seafood. But hey, if you liked it, I guess it’s worth trying once. 🙂

    2. User avatar donnetta.becker58 says:

      5 stars
Yes!! Smoked paprika + saffron is seriously underrated. I’ve never tried lemon at the end but I can totally see it brightening everything up—will do next time. 10/10 indeed 🌿

  44. User avatar diego.stanton1979 says:

    4 stars
Pretty good, but mine was a little bland until I actually went heavy on the black pepper. Also I think 20-25 min wasn’t enough for my rice, so I added 5 more minutes. Still tasty though.

  45. 5 stars
This is my kind of weeknight paella—bright, veggie-packed, and not fussy. I used regular short-grain rice and it still worked great. The saffron smell is everything.

  46. User avatar CTRLplusW says:

    2 stars
Smoked paprika in paella is kinda throwing me off. It tastes more like chili than Spanish rice. I might use regular paprika next time.

  47. User avatar Nell Ondricka says:

    4 stars
Saffron is expensive 😅 but I get it. I used a tiny pinch and honestly the color helped a lot. Would make again for sure.

  48. User avatar elna.mckenzie says:

    3 stars
I accidentally stirred during the simmer and it came out more like risotto than paella. Flavor was good, but texture was wrong.

  49. 3 stars
The steps are clear, but my paella pan didn’t work like a paella pan (smaller burner). I had to adjust heat and it came out okay, not perfect.

  50. User avatar milford.senger7 says:

    3 stars
Why no lemon at the end? Paella always tastes better with a squeeze of lemon in my opinion. Still, the veggies sound great.

  51. User avatar gerard.spinka1977 says:

    5 stars
Soo good! I loved how colorful it looks on the plate!

  52. User avatar kasandra.ritchie73 says:

    2 stars
I used regular long-grain rice by accident (oops) and it turned into something closer to rice soup. Don’t make my mistake—short-grain matters!

  53. User avatar carlena.hane3 says:

    3 stars
The saffron amount feels a little low? I know it’s expensive, but I barely tasted it. Maybe my threads weren’t soaked long enough.

    1. 5 stars
Totally get that—0.5 tsp threads can be subtle, especially if they don’t bloom much. I usually soak mine 10–20 min and rub the threads a bit before adding.

  54. User avatar marcel.frami2024 says:

    4 stars
Easy recipe! I added some chickpeas too. Yum!

  55. User avatar clemmie.bailey54 says:

    5 stars
    Yum!

  56. User avatar reda.bogan31 says:

    1 star
I used brown rice instead… BIG mistake. 😂

  57. User avatar tissues_with_issues says:

    3 stars
Isn’t paella supposed to have shrimp? I feel like it’s missing somethin. 🤔

  58. User avatar carol.marvin1964 says:

    4 stars
Pretty good, but 20-25 minutes felt a little short for my rice. I had to add a splash more broth and cook 5-10 mins longer. Other than that, super nice texture and color.

  59. User avatar marvin.graham says:

    4 stars
I made something similar but I didn’t soak saffron… big mistake lol. The saffron water really makes a difference. Thanks for the clear steps!

  60. User avatar ray.kemmer56 says:

    4 stars
Quick question: is 3 cups broth enough for 1 cup rice? I feel like it’s low but I’ll trust you. If it works, I’ll be very happy!

  61. User avatar smartestRedditor says:

    4 stars
Not sure about “any short-grain rice.” Bomba/Arborio vibes are different, but still—looks solid. I’d recommend sticking to bomba if possible, otherwise it might turn a bit mushy.

    1. 4 stars
Mushy paella is tragic 😅 I think “short-grain” can still work, but bomba is definitely the safer bet if someone wants that proper bite. Thanks for the tip!

    2. 5 stars
Yeah I agree—bomba really makes the texture right for paella. I used arborio once and it got a bit too creamy. Next time I’ll stick to bomba.

  62. User avatar Meriadoc Brandybuck says:

    5 stars
This looks so bright and comforting. I love that it’s veggie-forward but still has that paella vibe with saffron and smoked paprika.

  63. User avatar denis.harris2012 says:

    2 stars
Saffron is expensive for me, so I used “saffron-style” threads from the store (probably not the real thing). It smelled nice but the color was weaker than I expected. Might try real saffron later.

    1. User avatar galina.mohr1956 says:

      4 stars
That makes sense—saffron “style” stuff usually doesn’t give the same deep color or aroma. Your approach with soaking in warm water is spot on though. If you try real saffron later, I bet it pops more.

  64. User avatar tony.wilderman62 says:

    2 stars
I tried this recipe but idk if I did something wrong, it was kinda bland…

    1. User avatar nora.williamson2016 says:

      4 stars
Maybe try adding more spices next time? I usually put extra garlic or even some chili flakes for a kick!

    2. 2 stars
Bland? What do you expect? It’s veggies, they don’t have much taste if you don’t spice them up right!

  65. User avatar smartestRedditor says:

    4 stars
Paella Verdura sounds fancy but I made it with whatever veggies I had (zucchini too). It was still tasty and the family ate it all. I’m giving it points for flexibility.

  66. 3 stars
Not sure about “without stirring” part. I always stir paella so it doesn’t burn—ended up with uneven texture. Flavor was fine, but the rice didn’t feel right to me.

  67. User avatar luciano.ondricka says:

    5 stars
This is my new go-to vegetarian meal. The smoked paprika gives it that “restaurant” flavor. I’ll probably add artichokes next time.

  68. User avatar Sapphire says:

    3 stars
I dunno, it tastes okay but not really like the traditional one. Where is the seafood?

  69. User avatar refugio.terry71 says:

    5 stars
I loved the veggies, but I kept wanting to stir like you would with risotto. When I finally stopped stirring, the rice settled better. Lesson learned.

    1. 5 stars
Yes! I’ve noticed that too—paella isn’t risotto. That undisturbed simmer helps the socarrat form and the rice stays more even.

  70. User avatar silva.reichert says:

    4 stars
I love vegetarian paella, but the instructions say ‘without stirring’—I totally get why, yet I was nervous. Still came out great and didn’t get mushy.

    1. 5 stars
That’s awesome! The “no stirring” part always makes me nervous too, but it’s probably what keeps the rice from turning into mush. Glad yours turned out great 😊

  71. User avatar jacinto.crist says:

    2 stars
I don’t know… Paella is supposed to have seafood, right? This feels wrong.

    1. 4 stars
I get what you mean, but this is a veggie twist! It’s still paella but without seafood. Try it, you might like it!

    2. User avatar joseph.dare84 says:

Nah, that’s not paella! Paella needs shrimp and mussels. This is just a glorified rice dish.

  72. 4 stars
Pretty tasty, but 0.5 tsp saffron felt like a lot for my budget 😅 I tried 1/4 tsp and it was still good, just less golden.

    1. 5 stars
Totally get the saffron budget pain 😅 I’ve been using a pinch too—your adjustment makes sense, especially since you still got good flavor without going full “golden”.

I don’t get why you “don’t stir” after boiling. I always stir rice so it doesn’t clump, but the recipe said no, so I went with it. Worked, I guess. Paella pan next time!

    1. 5 stars
Nice! The no-stir part makes sense for paella—less agitation helps keep that nice texture instead of turning it into porridge. Paella pan really helps with the crispy bits too 😄

    2. User avatar nathanael.schamberger83 says:

      3 stars
I still don’t know why recipes say not to stir. Like… rice is rice? If you stir it once in a while won’t it be fine. But if it worked for you, respect.

  74. User avatar katina.schaden says:

    4 stars
Pretty good, but I had to cook a bit longer than 20-25 min. The rice wasn’t fully tender at first, so I added a splash more broth and it came together. Next time I’ll measure the simmer time more carefully.

  75. User avatar christal.white says:

Didn’t have saffron, used turmeric instead. Still tasted good!

    1. User avatar scarlet.rath87 says:

      5 stars
Turmeric is a good substitute! I always have some in my spice rack. Glad it turned out well for you!

  76. User avatar awilda.johns says:

    3 stars
I followed it but my rice turned out sticky (maybe I used the wrong rice?). Still delicious though, I ate the whole pan. 😅

  77. User avatar birgit.cole25 says:

    2 stars
Overly fussy instructions tbh—so many steps. I did not soak saffron properly because I was rushing and it clumped. Would’ve been better if it just said add it in.

  78. User avatar kristen.ullrich80 says:

    4 stars
Delicious! I’ll be making this for my veggie friends at the BBQ!

Cooking rice is a bit tricky but try to not stir much! It helps! 😄

Why would anyone eat just veggies? Where’s the meat? No thanks.

  81. User avatar sam.collier46 says:

    4 stars
Easy recipe, but is saffron really necessary? I used turmeric instead, and it turned out fine.

  82. User avatar Byron Kirlin says:

    3 stars
Not bad at all, but 3 cups broth for 1 cup rice felt a little high. I ended up cooking longer to dry it out. Would make again with slightly less liquid.

  83. User avatar bennett.pagac1967 says:

    4 stars
Saffron is expensive… does it really matter? I tried it anyway and yeah, it tastes different, but I’m not sure I’d buy it every time.

  84. User avatar Corrupted Shade says:

    4 stars
I followed it exactly and the bottom got a little too dark (my pan runs hot). Flavor was good though—would recommend medium-low heat after the boil.

  85. User avatar lida.kemmer says:

    4 stars
I followed it pretty closely and the rice came out great—nice texture and flavorful broth. Next time I’ll add a little extra paprika for more smokiness.

    1. User avatar elijah.cole2009 says:

      4 stars
Nice! I tried something similar but I think my rice got too soft because I stirred too much. When you say uncovered—did it bubble the whole time? I might try your paprika idea too.

    2. User avatar rutha.ratke95 says:

      5 stars
That’s awesome! I love when the broth actually flavors the rice like that. Extra paprika sounds perfect for a deeper smokiness—paella really benefits from that.

  86. User avatar noelia.king53 says:

    2 stars
Kinda bland for me. I think the smoked paprika was too subtle, and I didn’t soak saffron long enough. Could be a me problem, but yeah—needs more punch.

  87. 3 stars
The proportions feel a bit off to me—3 cups broth for 1 cup rice maybe ends up tight depending on your rice brand. Mine absorbed fast so I added a splash of hot water.

    1. User avatar tom.stiedemann says:

      4 stars
Mine came out perfect with exactly 3 cups. I used Bomba though, so maybe your rice was more absorbent? I’d still keep an eye on it near the end and adjust if needed.

    2. User avatar yuko.hermann says:

      5 stars
Yeah I agree—rice brands vary a lot. I’ve found 3 cups works best for Bomba/short-grain, but if your rice drinks it up quick, a splash of hot water is totally the move.

  88. User avatar ArabianNights says:

    3 stars
Not bad at all. I used regular long-grain rice by mistake (oops) and it wasn’t authentic, obviously, but it was still tasty. Now I’ll buy Bomba next time.

    1. User avatar elisa.dickinson92 says:

      4 stars
I mean… long-grain isn’t “authentic,” true, but it’ll still work in a pinch. 20-25 min uncovered seems a bit much though—mine dries out. Did you use enough broth? 👀

    2. 5 stars
Honestly that’s exactly how I learn—mistakes first, then the real stuff. Long-grain will change the texture, but paella’s all about flavor anyway. Bomba next time!

  89. User avatar Uh Shenlong says:

    5 stars
This tastes like Spain… maybe. I can’t verify because I’ve never been 😂. But my kitchen smelled amazing and my roommates went back for seconds.

  90. User avatar suspiciousCommentator says:

    5 stars
This is the best paella recipe! I’ve tried many, but this one was perfect! So flavorful!

  91. User avatar clara.schaden32 says:

    4 stars
Pretty good, but I had to add a splash more broth near the end—the rice was a bit firm at 25 minutes. Next time I’ll keep an eye on the liquid like you would for other short-grain dishes.

  92. User avatar ignacia.oconnell99 says:

    2 stars
I followed everything and it came out kinda watery, like soup. Maybe my broth measurement was off or my pan was too small? Either way, I’ll try again with less liquid.

  93. User avatar Francis Heaney says:

    2 stars
I only had long grain rice and it turned into more of a risotto-ish thing. Still edible, but yeah… not true paella.

  94. User avatar cecil.jerde1995 says:

    4 stars
I used whatever short-grain rice I had (not bomba) and it still worked. Next time I’ll chop the veggies a bit smaller for more even cooking.

  95. User avatar CTRLplusW says:

    2 stars
Maybe my pan was too small? It dried out before the rice was fully cooked, and then I had to rescue it with more broth. Flavor was good, timing was off for me.

    1. User avatar dorsey.cronin16 says:

      5 stars
Oof, that sounds frustrating! If the pan was too small, the rice can overcook/dry on the outside while the middle still needs time—paella really depends on having a wide, shallow pan. Next time, try a larger surface area and/or add a bit more broth (or start checking a few minutes earlier). Glad the flavor was still good though!

    2. User avatar Tricia McMillan says:

      4 stars
Maybe you didn’t wait for the broth to come fully to a boil before lowering? If you lower too soon, it won’t cook evenly and can dry out fast. Also 20–25 min might be short depending on the rice brand—try tasting near 18 min and stop when it’s tender. (My pan is small too so I’ve had the same problem 🙃)

  96. User avatar richie.connelly9 says:

    4 stars
Looks great, but 20-25 minutes felt a little short for my rice. I ended up adding a splash more broth and simmering longer. Still tasty though!

    1. User avatar broderick.weimann73 says:

      4 stars
Yeah 20-25 min is kinda optimistic depending on your rice and how hot the stove runs. No shame in going longer—paella should be tender, not crunchy. 😄

    2. User avatar brendon.hickle38 says:

      5 stars
Totally get that—paella rice timing can be super sensitive. I’m glad adding a splash of broth helped! Next time I might simmer a touch longer too.

  97. User avatar malika.schaden99 says:

    4 stars
Looks simple. Maybe too simple? But I’m gonna try it. If it’s bland I’m blaming the onion 😅

    1. User avatar pei.walsh63 says:

      4 stars
Too simple? maybe. I’d add a tiny pinch of chili or lemon at the end for brightness. And don’t stir once it’s simmering—gotta let the rice set.

    2. User avatar joesph.batz2010 says:

      5 stars
I think “simple” is kinda the whole point of paella—just don’t skip the resting time. Also, if it’s bland, more salt/pepper at the end usually fixes it, but onion does sound like a likely culprit 😄

  98. User avatar jame.watsica says:

    1 star
Saffron is expensive though… do you really taste it?

    1. User avatar Daedric Prince says:

      5 stars
Yes—you can taste it. It’s more like a subtle floral/earthy flavor than “wow, saffron!” If you use enough (and soak it), it really shows up.

  99. 3 stars
Not gonna lie, mine came out a little dry after 25 minutes. Maybe my broth evaporated too fast. Still tasty, but I think I need to adjust liquid or heat.

    1. 5 stars
I’ve had that happen too—if it simmers too aggressively or the pan is too small/wide, the broth evaporates fast. I’d try a slightly lower heat and maybe add a splash more broth if it’s looking dry before the 20–25 min mark.

    2. User avatar fabiola.dickens says:

      4 stars
Dry at 25 mins? Broth evaporated too fast sounds right. Also paella rice can be picky—bomba really drinks more than regular rice. I’d say measure your broth and don’t stir after it boils, but do make sure there’s still liquid-ish left near the end.

  100. User avatar Draugr Overlord says:

    4 stars
The ratios feel pretty forgiving. I doubled the onion and garlic because I like it bold (oops maybe), and it was still balanced. Next time I’ll keep tomato more diced and less juicy.

  101. User avatar elden.blick2017 says:

    5 stars
Made this tonight—so colorful and honestly smells amazing. The saffron really makes a difference. Mine took closer to 30 min for the rice to fully soften, but it was worth it.

  102. User avatar dan.bashirian82 says:

    5 stars
Wow, easy and fancy at the same time. My family thought I bought it from a restaurant lol.

  103. 3 stars
I followed it exactly but my rice was a bit undercooked at 25 minutes—maybe my heat was too low or my broth not hot enough at the start. Still tasty though.

    1. User avatar lamonica.jerde says:

      4 stars
25 min seems short imo? I usually do more like 30-35 and keep the heat higher so it makes that socarrat sound 😅 Also bomba vs generic short grain matters a lot. Undercooked but tasty is still a win though!

    2. 5 stars
That makes sense—paella rice is pretty sensitive. If the broth wasn’t really boiling when you lowered the heat, it won’t cook through in 25 minutes. Next time, try bringing it back to a strong simmer right after lowering the heat, and make sure the liquid level stays consistent.

  104. User avatar Max Quordlepleen says:

    3 stars
Not bad, but I wish the instructions said when to add salt. I salted the broth lightly and then again at the end—still okay. Overall it’s a solid veggie paella.

  105. 5 stars
Made this last night and it turned out colorful and fragrant. The saffron really elevates it—didn’t expect that much difference from such a small amount. I used frozen peas and it still tasted fresh.

    1. User avatar Jitan Sa'mi says:

      5 stars
That’s awesome—colorful and fragrant is exactly what I aim for with saffron. Glad frozen peas worked too!

  106. User avatar wellRespected says:

    3 stars
Paella purists would say this isn’t real paella without the socarrat and seafood/meat. I get that, but for a meatless version it was enjoyable. The saffron step is key.

    1. User avatar basementDweller says:

      5 stars
As someone who loves paella, I agree the saffron soaking/adding is the make-or-break. That said, I do miss the socarrat. Still—meatless paella can be legit if you really let the rice toast at the bottom.

    2. User avatar ArabianNights says:

      2 stars
Meatless paella? I dunno 😅 Paella is supposed to have seafood or at least some meat. Also 3 cups broth for 1 cup rice seems a bit much—mine always gets mushy if I go that high. But maybe the resting helps?

  107. User avatar kip.ernser2001 says:

    2 stars
I followed it exactly except I didn’t have saffron threads. I used turmeric and it was… kinda yellow but not the same. Still ate it all, so 🤷‍♂️

    1. User avatar bertie.watsica says:

      5 stars
Totally get that—saffron is such a specific flavor/aroma. Turmeric will get you that yellow color, but yeah the “real” taste is different. Glad you still liked it though!

  108. 5 stars
Made this tonight and it turned out gorgeous—so fragrant from the saffron and smoked paprika. I used a mix of frozen green beans/peas and it still worked. The resting time really helps.

  109. User avatar francesco.schiller85 says:

    2 stars
Meh. Tastes fine but kinda plain—would love more spices. Also I forgot the garlic the first time lol, so yeah.

  110. 4 stars
Not gonna lie, “don’t stir” is where I always mess up. I think mine needed one quick stir at the 10-minute mark, but it still tasted good.

  111. 5 stars
5 stars! The resting time made it come together. Also the veggies stayed bright instead of mushy—nice.

  112. User avatar carrol.koelpin says:

    5 stars
Wow. Super easy and colorful. I added extra peppers bc I was hungry lol. Pretty good for a veggie paella—5/5

    1. User avatar carolee.considine says:

      3 stars
Veggie paella is cool but I still think you gotta toast the rice a bit longer. Also 20-25 mins feels short for most rice—unless it’s like exact Bomba timing. Still, looks tasty!

    2. User avatar garland.heller98 says:

      5 stars
This sounds awesome! I love that you added extra peppers—sounds like the perfect hungry-person upgrade 😄 Did you add any extra spices too, or just the paprika?

  113. User avatar Baby Goron says:

    5 stars
Five stars because it was easy and tasted like restaurant food. I added lemon at the end and it was perfect.

    1. 5 stars
Love hearing that! Lemon at the end is such a good move—brightens everything. 👏

  114. User avatar chase.kilback says:

    4 stars
Smoked paprika seems a bit random in paella to me… but honestly it works. My family asked me to make it again, so yeah.

  115. User avatar Colin the Security Robot says:

    4 stars
Not gonna lie, paella vibes but I wasn’t sure about “uncovered and don’t stir.” Still, the texture came out good—like fluffy but not mushy.

    1. User avatar rickiestmorty says:

      5 stars
Totally get the “uncovered and don’t stir” part 😅 But that’s basically how you get the right texture and the bottom to develop. If you stir a lot, the rice can turn more creamy than paella-style. Glad it still came out fluffy for you!

  116. User avatar cody.schmitt says:

    4 stars
I followed the steps closely and the flavor was solid, but my rice got a tiny bit mushy. Next time I’ll watch the simmer time more carefully. Still delicious though!

    1. User avatar wesley.daniel says:

      5 stars
Glad you got solid flavor! Mushy rice usually comes from simmering too hot or too long—your “watch the simmer time” plan is spot on. Next time, try resisting the urge to stir after the broth goes in.

    2. 4 stars
Mushy rice happens if the liquid is too much or it simmers forever. I’ve found short-grain rice can still work, but keep the heat low and don’t cover it. Also, make sure you rest it—5 minutes helps firm things up.

  117. 1 star
I tried this and it tasted bland. Could be my broth or my paprika (I might have grabbed sweet instead of smoked). Won’t give up though—I’ll adjust next time.

  118. 5 stars
This is the kind of recipe that makes me proud to cook at home. Simple ingredients, strong payoff. Would make for friends again.

  119. 3 stars
Only 20-25 min? That’s suspicious… but it actually worked. Just let it rest too, otherwise it’s kind of soupy. Resting matters.

    1. 5 stars
Yeah, the “rest” is the whole game. I’ve definitely rushed it once and it turned into a soupy rice puddle 😅 After 5–10 minutes it firms up a lot.

    2. User avatar bethel.mohr24 says:

      2 stars
Only 20-25 min for paella rice?? I’m skeptical. My rice usually needs way longer or it’s still hard inside. Maybe short-grain is forgiving though.
