Next time cover the pot for part of it so they sweat instead of fry, then uncover to brown. Burned garlic is the worst—bitter garlic ruins everything.

    French onion pasta sounds fancy but it’s actually pretty easy. I did 10/10 caramelization (or tried 😅) and the flavor was there. Next time I’ll use a little less broth so the pasta soaks it up better.

      French onion pasta is okay but for me the pasta came out a little wet. I followed the steps mostly, except I didn’t stir as much, and I used regular cheddar (cause didn’t have Gruyère). Still good though 😅

      I love this—made it last week and the caramelized onions really carry the whole dish. I used veggie broth and it still tasted super rich. Next time I’ll also try less broth like you said so it’s not soupy.

      Wait… I thought pasta always cooks better covered? I cooked this uncovered and my pasta was kinda mushy AND still not done? like, what temp is “medium” for you? Next time I’d cover it maybe halfway. Also 4 cups broth seems like a lot… idk.

      I usually keep it uncovered once the pasta goes in so it can simmer down and cook at the right pace. If yours was uncovered and it cooked slower, you might want to make sure your pot is actually at a steady simmer (not just a light bubble) and slice the onions a bit thinner.

    It needed way more seasoning than the recipe says. I had to add salt like crazy and some black pepper. Once adjusted, it was great.

      Totally agree. I kept tasting and it was super bland until I went heavy on salt and cracked in black pepper. After that it actually started tasting like French onion flavor. Next time I’ll start with more thyme too.

      Interesting… I tried this but mine turned out a bit bland. Maybe I didn’t caramelize long enough? I used regular cheddar cuz that’s what I had, and it didn’t melt the same. Still okay tho, would try again with Gruyère.

    Really solid concept, but I found it needs more liquid than I expected. My pasta got a little tight before it turned al dente, so I added a splash more broth halfway through. Tasty though—cheese pull was legit.

    Not to be that person, but “until al dente” varies so much by pasta—package times are not the same when it’s in broth. I ended up adding a splash more broth.

    Not bad, but mine was kinda soupy. I used too much broth maybe? Next time I’ll reduce the liquid a bit before adding the pasta. Otherwise flavor is solid.
