      Yeah, I get that—3 tablespoons mayo + 1 jalapeño can mellow out fast. I usually go heavier on jalapeño (or leave some ribs for more heat). Also, 1/8 tsp salt is super light for 6 eggs—worth bumping it up.

      Yep, jalapeño powder can work in a pinch—I’d start with like 1/4–1/2 tsp and taste, since powders vary a lot. I usually still seed/chop fresh if I’m making it exactly as written, but powder saves the chopping pain 😄. Also bacon: pan-cook it and crumble—no need to broil unless you like it extra crispy.
