    1/2 cup vinegar?? that seems a lot lol. I reduced it to 1/4 cup and it was still good. Just saying, the proportions might be forgiving.

      Totally fair point—vinegar strength varies a lot by brand, and I can see 1/2 cup being “pucker city.” Reducing to 1/4 cup and still getting a good result makes sense. Thanks for the real-world adjustment!

    Good and simple! I was worried the soy + vinegar would be too sharp, but simmering for 10 minutes mellowed it a lot. Next time I might reduce the water a bit so it’s thicker.
