Smooth, refreshing, and indulgently sweet, a cinnamon caramel cold brew is one of those coffee drinks that perfectly bridges the gap between cozy and energizing. Inspired by the popular Starbucks version, this homemade copycat captures all the rich flavors and creamy textures you love, with the added bonus of being easy to customize to your taste. It starts with cold brew coffee, known for its smooth, mellow flavor and low acidity, which provides the ideal base for layering sweet and spiced elements. The deep, roasted notes of the coffee balance beautifully with caramel’s buttery sweetness and cinnamon’s warm, aromatic spice.
What makes this drink so irresistible is the combination of textures and flavors. A swirl of caramel sauce adds richness and depth, while a hint of cinnamon brings a comforting warmth that feels like fall in a glass. A touch of vanilla extract or cinnamon syrup can elevate the sweetness even more, giving the cold brew a cozy, dessert-like quality without being overwhelming. The drink is often topped with a velvety cold foam, which floats gently on top and creates a luxurious mouthfeel with every sip.
This cold brew isn’t just for autumn, its balanced sweetness and refreshing chill make it a year-round favorite. In warmer months, it’s the perfect pick-me-up on a hot afternoon, while in cooler weather, its caramel and cinnamon notes pair beautifully with seasonal treats like pumpkin truffles or apple cider donuts. You can also adjust the sweetness level to your liking, making it stronger and bolder with extra coffee or more decadent with a generous drizzle of caramel and a sprinkle of cinnamon sugar on top.
Whether you enjoy it as a daily treat or a special weekend indulgence, a cinnamon caramel cold brew delivers café-level flavor with a comforting, homemade touch. Each sip is a satisfying balance of cool coffee, creamy sweetness, and cozy spice, a drink that feels like a little luxury any time you need it.

Looks easy enough, but ain’t nobody got time for making cold brew. I’ll stick to Starbucks!
Cinnamon and caramel?! YUM! But I think the coffee should be hot instead. Just my opinion.
I don’t drink coffee, but I made this for my boyfriend and he loved it! He said it’s better than Starbucks.
This is too sweet for my taste. I added less caramel but still not great 🙁
I totally get that! Sometimes recipes just don’t hit the right spot. Maybe try adding some salt to balance the sweetness next time?
Too sweet? Are you sure you did it right? I love caramel! More is always better. 🍬
I tried this recipe and OMG it’s just like the real thing! So good!
Absolutely delicious! Tastes just like the real thing!🍮
Great recipe! I used oat milk instead and it was delicious. Will make again! Thanks!
Oat milk? That sounds interesting! Do you think it would taste different with almond milk too?
Mine turned out kinda bland and the caramel didn’t mix well at first. I had to stir way longer. Might be my syrup (or my cold brew was too strong/too weak).
Ugh, sorry that happened! For mine, I had to make sure the caramel syrup was actually warm a sec (even 10-15 seconds) before mixing with the cold brew—otherwise it clumps and won’t blend. Also, I found a touch more cinnamon helps if it tastes flat.
Could be the caramel syrup brand. Some are super thick and don’t dissolve in cold drinks. Maybe try stirring like 2-3 minutes straight, or shake the jar instead. And if your cold brew is too strong or too weak, the flavors will totally seem “off”.
I messed up the measurements and it turned out terrible. How do you even get the caramel right??
I don’t see why everyone likes cold brew. It’s just coffee with ice, lol.
Wow this tastes super close to Starbucks! The caramel + cinnamon combo is honestly perfect for a cold brew day. I used oat milk and it was delicious.
Yes!! I’ve been trying to nail that Starbucks vibe at home, and this combo is it. Oat milk is such a good call—gives it that smooth sweetness. 🙌
Caramel + cinnamon does sound right, but I’m curious—did you use the 2 tbsp caramel syrup or more like for real drizzle? I always end up going too sweet 😅
Caramel syrup + coffee = yes. Easy.
I tried it and it was too sweet for my taste. Maybe less caramel next time?
I totally agree! I reduced the caramel and it was way better. Can’t handle all that sweetness either!
Too sweet? I thought it’s just right! Maybe your coffee is just not strong enough?
It was okay, but I think Starbucks does it better. Just my opinion.
Yum! But way too sweet for me. I might cut down on the caramel next time.
I agree! I found it a bit too sweet too. Maybe I’ll try almond syrup instead?
Not gonna lie, I was skeptical about the cinnamon. But it totally works—like a caramel latte vibe without the hot coffee. Great quick recipe.
How much cinnamon do you really use? It overpower the drink!
I think 1/4 teaspoon is just right! But if you don’t like strong flavors, you could use less. Just add to taste! 😊
too much cinnamon, ruins the drink for me. Next time I’ll try with less cinnamon.
So easy to make, I can’t believe I waited so long to try this! Love it!
Looks easy, but I dunno if I’ll get it right. Can you even call it coffee if it’s full of caramel?
I know right? It’s sooo good! I make it all the time now!
This is soooo good! Tastes just like Starbucks but better. Love the caramel drizzle. A++
I followed it pretty much exactly, but I think next time I’ll use a bit more cinnamon. Still really good though—nice and sweet and not too heavy.
Nice! I tried once and it was way too cinnamony, so I guess I’m scared to add more 😅 But the caramel + cold brew combo is still fire. Did you measure the cinnamon like 1/4 tsp exactly or eyeball it?
Totally agree—if you like that cozy cinnamon kick, a tiny extra always helps. I’ve been doing like 1/2 tsp and it still doesn’t feel heavy. Glad it came out sweet and smooth for you!
Okay but 1/4 tsp cinnamon felt like not enough for me. I added an extra pinch and it tasted way more flavorful. Other than that, solid.
