Good catch on the salt—mine also got too salty one time when I didn’t pay attention. I think starting with like 1/2 tsp max (or even less) depending on your potato size would be perfect. Still, the tot texture is spot on.

Sounds like oil temp/ moisture level—if the oil’s not hot enough they kinda slump into potato chunks. Try 350-375°F-ish and don’t overcrowd the pan. And squeeze harder (but don’t mash).

Mine did the same when I packed the potatoes too wet. After squeezing in the towel, I also waited 5 minutes and squeezed again—helps a lot. No egg needed, usually!
I don’t think flour alone should do it if the potatoes are still holding moisture. Did you parboil exactly 10 min? Next time try squeezing drier or adding 1–2 tbsp more flour.
