Ingredients
  

  • 2 pounds Russet potatoes Peeled
  • 1/4 cup All-purpose flour
  • 1 teaspoon Salt Adjust to taste
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Onion powder
  • 1/4 teaspoon Black pepper
  • 2 cups Vegetable oil For frying

Instructions
 

  • Peel and parboil the potatoes in boiling water for about 10 minutes. Drain and let them cool enough to handle.
  • Grate the parboiled potatoes using a box grater, then transfer the grated potatoes to a clean kitchen towel and squeeze out excess moisture.
  • In a mixing bowl, combine the grated potatoes, flour, salt, garlic powder, onion powder, and black pepper. Mix well to combine.
  • Shape the potato mixture into small tots using your hands, then set them aside on a plate.
  • Heat the vegetable oil in a deep skillet over medium-high heat. Fry the tots in batches until golden brown and crispy, about 3-4 minutes on each side.
  • Remove the tots from the oil and drain them on paper towels. Serve hot and enjoy!

      I feel you—tater tots can turn out kinda muted if the seasoning isn’t punchy. Paprika is a great call. I also like adding a pinch of cayenne or even a little smoked paprika for extra flavor.

      Hmm I wonder if your parboil was too long or you didn’t squeeze enough moisture out. When mine come out bland, it’s usually because they’re a bit watery inside and the seasoning doesn’t stick right. Try drying them more and letting the spice mix sit a minute.

    Okay not gonna lie… I overcooked the parboil by like 15 minutes and my texture was more mashed than tot-y. But the seasoning saved it.

      I tried it but mine weren’t as crispy—maybe my oil temp was wrong? Also I didn’t let the potatoes cool enough after parboil (oops). Still tasty though, will try again.

      I think the 10 min is fine… my batch always turns out but I cut them smaller. If you do big potatoes though, it makes sense they’ll be raw inside. Maybe try smaller pieces next time.

    Only thing: I used 1 tsp salt by accident and they were too salty. Fix that and it’s a solid recipe. Also, grating is weirdly therapeutic.

      Good catch on the salt—mine also got too salty one time when I didn’t pay attention. I think starting with like 1/2 tsp max (or even less) depending on your potato size would be perfect. Still, the tot texture is spot on.

      Good point—1/4 cup flour depends a lot on how dry the potatoes are after squeezing. If anyone’s mixture feels too wet, adding a tablespoon at a time should help hold together. I’ve done the “more flour” fix too.

      I felt the same at first, but 2 cups is basically for coverage plus enough depth so they don’t steam. If your pan runs shallow, you’ll lose that nice browning.

      I get what you mean—garlic + onion can hit hard. But for me 1/2 tsp each is pretty mild once you’re frying a couple pounds of potatoes. Next time, I’d try cutting both to 1/4 tsp or go less on the salt too—then you’ll keep the flavor without it tasting “too seasoned.”

      Sounds like oil temp/ moisture level—if the oil’s not hot enough they kinda slump into potato chunks. Try 350-375°F-ish and don’t overcrowd the pan. And squeeze harder (but don’t mash).

      Oof, that towel sticking/shape loss is real. Next time make sure the towel is *dry* and maybe use a clean flour-dusted surface when shaping. Also letting the potatoes cool a bit before squeezing can help them firm up.
