Halloumi and Vegetable Skewers

July 14, 2025

Halloumi and vegetable skewers are a colorful, satisfying dish that brings together bold Mediterranean flavors and irresistible grilled textures. Whether you’re firing up the barbecue or using a stovetop grill pan, these skewers are a perfect meatless option that feels both hearty and fresh. With crispy, golden halloumi and a mix of roasted vegetables, they work as a main dish, a side, or even a fun appetizer for summer gatherings.

The star of the show is halloumi, a semi-hard cheese from Cyprus that doesn’t melt when grilled. Instead, it develops a crispy, golden crust on the outside while staying soft and chewy inside. Its slightly salty flavor pairs beautifully with vegetables like zucchini, bell peppers, red onion, and cherry tomatoes. Together, they create a combination of textures and flavors that are earthy, bright, and deeply satisfying.

The beauty of this dish lies in its simplicity. After cubing the halloumi and chopping your veggies, a quick toss in olive oil, lemon juice, garlic, and herbs like oregano or thyme brings everything to life. Once skewered, they grill in just a few minutes, long enough to char the edges, soften the vegetables, and make the cheese irresistibly golden.

Halloumi and vegetable skewers are incredibly versatile. You can serve them over couscous, quinoa, or rice for a more substantial meal. Add a drizzle of yogurt sauce, tahini, or chimichurri for extra flavor. They also work well as part of a mezze spread alongside dips, olives, and flatbread.

These skewers aren’t just for vegetarians, meat lovers appreciate the rich, savory bite of halloumi, especially when paired with the smokiness of the grill. They’re a reminder that vegetarian dishes can be just as satisfying and flavorful as any traditional cookout fare.

Whether you’re cooking for guests or just want a quick, tasty meal, halloumi and vegetable skewers are easy to make and hard to resist.

Made these last night—so easy and the char on the halloumi is unreal. I used a little extra oregano and it really popped.

    1. User avatar Falmer Gloomlurker says:

      5 stars
Yes!! The char on halloumi is the best part. Extra oregano is such a good call—makes everything pop.

  15. User avatar teresia.sauer says:

Did my best, but I think I burned the halloumi. 😬

  16. User avatar theo.schuppe96 says:

  31. User avatar rosaline.crooks18 says:

    5 stars
Yasss! This recipe is a keeper. Perfect for our weekend barbecue!

  32. 2 stars
I tried this and the cheese did not melt for me. Is it supposed to melt? I followed the recipe exactly!

    1. User avatar clemente.kovacek2006 says:

      3 stars
Why didn’t it melt tho? Halloumi’s meant to melt! Sounds odd, maybe your cheese was too cold or something?

    2. User avatar numbers.bogan92 says:

      4 stars
The halloumi cheese is supposed to get a bit soft and golden, but it doesn’t melt like other cheeses. It’s more of a grilling cheese. Maybe try a bit longer on the grill next time?

  33. User avatar odis.brakus says:

    5 stars
These skewers were a hit at my barbecue! Everyone loved them!

  34. 2 stars
I don’t get why people like halloumi. It’s too salty if you ask me.

  35. 5 stars
Not gonna lie, I thought halloumi would be weird on a grill. Turns out it’s amazing—chewy, salty, and the oregano on top is clutch.

  36. User avatar Alba Sauer says:

    3 stars
Yummy but too salty for me. Maybe less halloumi next time?

  37. User avatar rosie.torp says:

    3 stars
I think the halloumi is too salty for my taste, but the veggies were nice.

  38. User avatar Del Ebert says:

    3 stars
I followed the recipe, but mine didn’t turn out as good… Maybe my grill isn’t hot enough?

    1. User avatar doreatha.ruecker76 says:

      4 stars
Maybe your grill isn’t hot enough. You could try preheating it longer or checking the temperature. Good luck!

    2. User avatar lorita.johnston16 says:

    1. User avatar joane.kshlerin88 says:

    2. User avatar amado.kertzmann1983 says:

Perfect for summer BBQs! Made these for friends and they loved them!

  41. User avatar eliza.jast27 says:

Very easy to make, but the cheese was kinda rubbery..?

  42. User avatar cameron.leuschke92 says:

    1 star
I tried this but the cheese just melted away – not what I expected. More like a grilled mess.

  43. User avatar Donnell Ankunding says:

    2 stars
Zucchini wasn’t cooked enough and halloumi was too chewy. I guess it’s hit or miss?

    1. User avatar sheena.lynch56 says:

      4 stars
I had the same issue! I think the cooking time matters a lot. Maybe try grilling a bit longer? Just my two cents.

  44. User avatar sanford.reynolds says:

    4 stars
Not bad at all! I liked how the veggies stayed tender without getting mushy. Next time I’ll cut the zucchini a little thicker so it doesn’t soften too fast.

  45. User avatar edgar.bruen says:

    5 stars
Simply delish! Easy to prep and tastes fancy. Perfect for summer. Yum!

  46. User avatar gordon.keeling32 says:

    5 stars
Yum! I didn’t have oregano, so I used some Italian seasoning instead. Still worked great! Will make again.

  47. User avatar NAFO.SUPREMACY says:

    5 stars
yum! Can’t wait to try this at the next BBQ! Might throw some mushrooms on there too!

  48. User avatar Draugr Wight says:

    2 stars
Grilled halloumi can be a bit squishy…not sure if I did it right.

    1. User avatar holly.koch1985 says:

      4 stars
It can be squishy if grilled too long! Just keep an eye on it next time. It should be golden, not mushy!

  49. User avatar deon.krajcik says:

    4 stars
My kids gobbled these up! Even the zucchini, which is a win in my book.

  50. User avatar hilton.vonrueden2000 says:

    5 stars
These skewers look dangerously good—halloumi + char is a combo I can’t resist. The 8–10 minutes timing feels just right too.

    1. User avatar lauren.johns says:

      5 stars
Right?? That halloumi gets so crispy with the char—dangerous combo indeed. I usually aim for the same 8–10 mins and it comes out golden every time.

  51. 1 star
who needs fancy food? just grill some chicken instead

  52. User avatar Cordie Johnston PhD says:

    5 stars
These skewers were seriously addictive. The halloumi gets so golden and salty—perfect with the sweet pepper and onion. I did 9 minutes and turned them every couple minutes like suggested.

  53. 5 stars
Just made these and they were gone immediately lol. I used wooden skewers and didn’t burn them, so that’s a win.

  54. User avatar criselda.quigley says:

    2 stars
This is just vegetables with cheese. What’s so special about that? Not impressed.

  55. User avatar ShanksOnePiece says:

    2 stars
Why do people like halloumi? It kinda tastes like rubber. 🌟

  56. User avatar pablo.parker62 says:

    4 stars
I was skeptical about halloumi but these skewers are surprisingly good. Great recipe!

  57. 5 stars
These skewers were AMAZING! Easy to make and super tasty. My family loved them!

    1. User avatar Humma Kavula says:

      5 stars
So glad to hear you enjoyed them! They’re a hit at my BBQs too! 🌟

  58. 4 stars
Very delicious! Used cherry tomatoes instead of red onion, still yum!

  59. 2 stars
I don’t get why people like halloumi. It’s just rubbery cheese… not worth the hype.

  60. User avatar alonso.pacocha says:

    4 stars
I followed it pretty much exactly, but my zucchini got a little too soft after 10 minutes. Next time I’ll cut thicker slices or grill a minute less.

    1. User avatar Ramon Morissette says:

      5 stars
Good call! Zucchini can go from perfect to mushy fast—thicker slices (or pulling them a touch earlier) makes a big difference. I also like doing zucchini last so it doesn’t overcook.

    2. 4 stars
Wait 10 minutes was too long? Mine never gets soft that quick… maybe your grill was hotter than “medium-high”? Also I think zucchini should be par-grilled separately or it’ll just steam on the skewer.

  61. User avatar wellRespected says:

    1 star
to hard ii couldn’t even eat it

  62. User avatar darnell.dach2024 says:

    3 stars
I’m not a fan of halloumi, but I gave this a try. It was better than I expected! Still won’t eat halloumi again tho.

  63. 5 stars
Wow, I didn’t know grilled cheese could be a thing! Great summer meal!

  64. User avatar Grunthos the Flatulent says:

Super easy and fun to make, but I think I overcooked mine. Oops. 😅

    1. User avatar marcos.corwin30 says:

Who needs perfect? Cooking is about fun! Just slap it on a salad. 🍴

    2. 4 stars
Don’t worry! Halloumi can be tricky. Just keep an eye on it next time. 😄

  65. User avatar francesco.lakin83 says:

    3 stars
Zucchini is like, my least favorite. Could I sub with some other veggies? 🤔

  66. 4 stars
Great recipe! I used Greek seasoning instead of oregano because I ran out and it worked fine.

    1. 5 stars
Using Greek seasoning sounds interesting! I might try that next time. Thanks for sharing!

  67. User avatar robert.thompson says:

    5 stars
So easy to make! I used a mix of vegetables and it turned out great!

  68. 3 stars
Pretty colors on the plate, but flavor was a bit off for my taste. Maybe too much oregano?

  69. User avatar ShanksOnePiece says:

    3 stars
Honestly, I don’t get the hype. I made these and they were just… okay. Not that exciting.

    1. User avatar teodoro.breitenberg45 says:

      5 stars
What?! Are you serious? These are AMAZING! The halloumi gives it a unique flavor. I think you needed to marinate it longer or something.

    2. User avatar marcelino.purdy92 says:

    1. User avatar freeman.hills1966 says:

So good and easy, my kids loved them! Alot of flavor and healthy too. Win win!

  73. User avatar moises.howe42 says:

  75. User avatar willian.deckow4 says:

    3 stars
I burned mine on the grill. Be careful, the cheese cooks fast!

  76. 4 stars
The directions are clear, but I would add a squeeze of lemon at the end. Without acid it can taste a little salty (halloumi be salty, ya know).

  77. User avatar refugio.berge says:

    1 star
I don’t understand why people like this cheese. Anyone else feel the same? 🤔

    1. 5 stars
I actually love halloumi! It’s delicious grilled with veggies. Maybe you just had a bad experience? 🤷‍♀️

  78. User avatar rueben.tromp10 says:

  79. User avatar dahlia.streich2017 says:

    2 stars
I tried this but burnt the heck out of it… how do you grill without it sticking?!

    1. User avatar Dan Streetmentioner says:

      4 stars
Try using non-stick spray or oiling the grill grates directly. It helps a lot! Also, don’t press down on the cheese while grilling.

  80. User avatar ronni.pagac says:

    5 stars
This was really good! The halloumi was so cheesy and delish with the veggies.

    1. User avatar velia.bartell2025 says:

  88. User avatar Papahl and family says:

These are the best skewers! Halloumi is love ❤️.

  89. 5 stars
I love how simple this is. Also, the oregano with the olive oil makes it taste more “restaurant” than I expected.

  90. User avatar arturo.daugherty3 says:

I don’t know, I feel like halloumi is overrated. Why not just use regular cheese?

  95. User avatar ShanksOnePiece says:

    5 stars
Five stars just for halloumi. I didn’t even have oregano so I used Italian seasoning and it worked. My friends asked for the recipe 😅

  96. User avatar gretta.ruecker1982 says:

    3 stars
The recipe is easy, but where could I get halloumi? I don’t even think I’ve seen it in stores.

  97. User avatar dennis.king2010 says:

    4 stars
These skewers were good, but mine stuck a bit to the grill. Next time I’ll oil the grates too, not just the skewers.

    1. User avatar eusebia.reilly says:

      5 stars
Good call—halloumi can be a little stubborn on the grill. Oiling the grates (or using a lightly oiled paper towel with tongs) usually helps a lot. Also try not to move the skewers too early; give them a minute to get that char going first.

  98. User avatar lucia.rolfson88 says:

    3 stars
I followed it pretty much exactly and the timing felt off. 8-10 minutes was a bit short for my zucchini slices—ended up grilling a couple minutes longer.

    1. User avatar Prostetnic Vogon Jeltz says:

      5 stars
Good catch! Zucchini slices can vary a lot in thickness—if yours were a bit chunky, 8–10 minutes will definitely feel short. I usually aim more for “tender + light charring” than the exact time and grill a couple minutes longer if needed. Next time try slicing thinner or just keep the turning consistent.

Tasted good but took too long to cook. And my halloumi fell apart… 😒

Sorry to hear it didn’t turn out perfect! Halloumi can be tricky. Try less heat next time, it helps keep it together.

    2. 3 stars
I had the same problem! The halloumi crumbled on me too. Still, the flavor was nice. Was it worth the hassle?

These skewers are a game changer! The halloumi was so tasty and easy to make. I added some cherry tomatoes too!

  101. 4 stars
Not bad at all, but I wish there was something acidic in the recipe. Without it, it’s a little heavy/cheesy. Still, I’d make it again.

Good recipe, but I used feta instead. Sorry, halloumi is too expensive for me.

My skewers burned a little because my heat was too high. Still tasted good though—just be careful with the medium-high part.

    1. User avatar lovella.blanda22 says:

      5 stars
Good reminder! I always crank it to medium-high like the recipe says, then wonder why it chars too fast 😅 8–10 minutes is probably more like “watch constantly” for my grill.

Halloumi is expensive where I live, so I was hesitant. But honestly the flavor was worth it. I’ll try swapping in cheaper cheese next time maybe not though.

Grilling it was so much fun. The flavors are amazing! Can’t wait to have these at my BBQ party.

Sounds yummy! Halloumi is my favorite. Do you have a special marinade?

Tried something similar but my halloumi stuck a bit. Any tips on soaking/spacing the cubes so it doesn’t grab the grill?

    1. 4 stars
Mine stuck too. I’d say soak the skewers (or use wooden ones) so they don’t burn, and don’t grill too hot—medium heat and turn more often. Also cut the halloumi a bit larger so it doesn’t melt into the bars.

    2. User avatar danica.labadie86 says:

      5 stars
Halloumi loves to glue itself—make sure it’s patted super dry and use a light oil, not a soaking. Also leave a little gap between cubes so steam can escape and they don’t weld together on the hot grate.

  107. 2 stars
Is halloumi even healthy? I thought cheese was bad for you…

    1. User avatar Joel Lindgren Jr. says:

      4 stars
Halloumi can be part of a balanced diet! It’s rich in protein and calcium. Just watch the portion sizes!

    2. 3 stars
But cheese is still fattening, right? I dunno. I guess everything in moderation?

  108. 4 stars
Really tasty, but I think my grill runs hot. I had to pull them closer to 7 minutes or the halloumi started to get too charred for my liking. Still great though!

    1. User avatar pasquale.kling2009 says:

      5 stars
Good point about grill temp—halloumi can go from “golden” to “burnt” fast. I usually start at medium and check at ~6-7 minutes too.

I don’t know why you’d use halloumi instead of chicken. Seems weird to me.

Made these for friends and everyone kept stealing them off the skewers. Red onion + halloumi is a combo I didn’t know I needed.

  111. 3 stars
The instructions are straightforward, but 8-10 minutes felt short for my grill. I ended up turning more often to avoid burning the onion.

  112. 2 stars
I don’t really see the appeal of halloumi, it’s kinda rubbery. Maybe it’ll be better grilled?

  113. 2 stars
why did my halloumi burnt so quick? I grilling right??

  114. 4 stars
Really easy and yummy! My kids actually ate their veggies! 🎉

These skewers came out so good—halloumi gets that perfect golden char. I added a squeeze of lemon at the end and it totally brightened everything.

    1. User avatar marshall.gerhold says:

I tried this but mine got kinda rubbery? maybe I overcooked it. Also I didn’t have oregano so I used some Italian seasoning and it was… fine. 😅

    2. User avatar zack.kris77 says:

      5 stars
Yes!! Halloumi + that char is unbeatable. Love the lemon at the end—I’ll steal that idea next time.

  116. User avatar Miss Bridgett Klein says:

I’m gonna be honest, I’m skeptical about how long cheese will survive on the grill without melting into sadness. But golden and slightly charred? okay I’ll try it.

  117. 3 stars
I followed it exactly and my zucchini turned a bit mushy. Maybe my slices were too thin? Flavor was good though.

    1. 5 stars
Totally possible—thin zucchini slices go mushy fast on medium-high. Next time try thicker slices (or even chunks), and don’t grill them as long—maybe pull when they’re just tender. Glad the flavor still came out though!

  118. 3 stars
I tried this once and the skewers stuck to the grill like crazy 😅 I didn’t oil the grates—so yeah, lesson learned.

  119. 2 stars
Honestly, I’m not sure about halloumi on a skewer. It’s salty already, so it needs more balancing flavors than just oregano.

  120. User avatar Marilou Schmeler says:

These skewers were delicious! Perfect for a summer BBQ. Will make again!

  121. 3 stars
I don’t like zucchini. Can I just put more onion? Asking for a friend.

Simple and quick recipe! My kids actually ate their veggies, miracle!

    Halloumi skewer goodness!

  124. User avatar elsa.klocko1982 says:

I’m giving 3 stars because the instructions are a little too vague about skewering. Some of my pieces spun around and fell off. Maybe I needed wooden skewers soaked more?

  125. 2 stars
This was mid. The zucchini went soft way before the rest, and the peppers got a bit too blistered. I’d only change the veggie sizes and maybe add a quick marinade.

    1. User avatar lorie.raynor says:

      3 stars
Mid?? 😅 I think your grill temp might’ve been too high or the zucchini slices were too thin. Try thicker slices (like 1/2 inch) and don’t overcrowd the skewers. Also halloumi releases moisture—so maybe pat it dry before grilling.

    2. User avatar antony.farrell says:

      4 stars
Huh, I get what you mean—zucchini cooks way faster than onions/peppers on a hot grill. I’ve had better luck cutting everything a bit chunkier or keeping the zucchini a little thicker (or even adding it a couple minutes later). A quick marinade might help too—what did you use?

  126. User avatar adelaida.kassulke says:

    5 stars
The combo of bell pepper, onion, and zucchini was perfect. Also, halloumi browns fast—watch it so it doesn’t get too crunchy.

  127. 4 stars
Halloumi on a grill is amazing, but 8-10 minutes felt short on my barbecue. My onions still needed more time. I ended up doing like 12 minutes and they were finally right.

Simple recipe, simple win. The instructions are clear and it actually matches what you get on the plate—tender veggies and browned cheese.

My grill runs hot—8 minutes was not enough, I think. The vegetables were still a bit crunchy. Still tasty, just adjust timing.
