Haddock and Zucchini Ribbon

May 30, 2024

If you’re looking for a fresh, elegant dinner that’s both simple and nourishing, this haddock and zucchini ribbon dish delivers on every front. With tender, flaky fish and beautifully shaved zucchini, it’s a light yet satisfying meal that feels restaurant-worthy but comes together in under 30 minutes at home.

Zucchini ribbons are a fantastic way to add a visual and textural twist to your plate. You can make them using a vegetable peeler or a mandoline slicer. Their delicate shape allows them to cook quickly and soak up flavor without becoming mushy. They also pair beautifully with seafood, making them an ideal match for mild, flaky haddock.

Haddock, a lean white fish, is known for its slightly sweet flavor and firm texture. It’s quick to cook and adapts well to many seasonings. In this recipe, it’s gently pan-seared with olive oil, garlic, lemon zest, and fresh herbs like parsley or dill. A splash of white wine or lemon juice in the pan adds brightness and forms a simple, flavorful sauce.

Once the fish is nearly cooked, the zucchini ribbons are tossed in just long enough to soften slightly and absorb the garlicky citrusy goodness in the pan. The result is a dish that’s light, fresh, and full of clean flavors, perfect for warm evenings or anytime you want a meal that feels refreshing but still nourishing.

For serving, garnish with more fresh herbs, cracked black pepper, and a final squeeze of lemon. You can enjoy it on its own or serve it with a side of couscous, quinoa, or crusty bread if you’d like something a bit more filling.

Whether you’re trying to eat healthier or just want something different from your usual fish recipe rotation, haddock and zucchini ribbon is a beautifully balanced dish that tastes as good as it looks.

400°F feels a little hot for 15 minutes—mine was done, but the edges were a bit drier than I prefer. Flavor still good. Maybe lower to 375°F if you’re nervous.

  2. 3 stars
Wait, what’s a zucchini ribbon? I just cut them in circles. Still good tho.

    1. 5 stars
Zucchini ribbons are just strips of zucchini! Cutting them in circles is fine too. As long as it tastes good, who cares? 😊

  3. User avatar palmer.christiansen2025 says:

    4 stars
Question—do you season the zucchini too? I did not, and mine needed a little more salt. Also my foil packets leaked a tiny bit, lol.

  4. 5 stars
Really loved this dish! Added some chili flakes for a kick. Yummmm!

  5. User avatar lesley.little58 says:

Fish? Nope. Can’t do it. Not for me.

    1. 4 stars
I totally get it, fish can be such a hit or miss! Maybe try something like chicken instead?

  6. 2 stars
Too much lemon for my taste. Maybe cut it down to half a tsp next time.

  7. User avatar yetta.wunsch54 says:

    3 stars
Honestly thought it would be bland. The seasoning felt simple, but the lemon helped. I added a pinch of chili flakes and it improved a lot. Not bad for a quick dinner.

    1. User avatar charita.predovic1972 says:

      3 stars
I dunno, “simple” seasoning sometimes means bland. But if lemon + chili fixes it, I might try—just 15-20 mins feels a bit short for fish? Either way, not bad.

    2. 5 stars
Totally get that—lemon can make a simple seasoning pop. Chili flakes is a great tweak too. Quick dinners are the best. 😊

Really enjoyed it! I added some spices because I like it spicy, and it came out delicious.

  10. User avatar Huey D'Amore PhD says:

    4 stars
I followed it pretty closely, but my zucchini still had a little bite after 4 minutes. Next time I’ll sauté 5-6 to match my preferences.

I burned the fish 😩 but my dogs loved it! So win-win, I guess.

    1. User avatar domingo.abernathy2021 says:

      4 stars
At least the dogs enjoyed it! 😄 Maybe next time try checking the oven more often?

Burned fish?? How did you manage that? It’s super easy to cook if you follow the steps!

  12. User avatar brady.bosco says:

    4 stars
Salt and pepper, that’s all you need….. Or maybe some butter? Idk, I just like butter 😊.

  13. User avatar jacqulyn.marvin37 says:

OMG YUM! I added parmesan and it took this to another level. Highly recommend!

Great recipe! I substituted the haddock with salmon. Still came out great!

    1. 4 stars
Salmon instead of haddock? That’s interesting! I’ve never thought of that. But if it worked for you, who am I to argue? Good job!

  16. 3 stars
I’m not a fish person, so I didn’t enjoy it much. But the zucchini was nice. 🍝

    1. User avatar gilberto.hettinger says:

      3 stars
Maybe try changing the fish? Salmon might be better if you like that? 🤔

    2. User avatar robbie.boyer1979 says:

      4 stars
I get it! Fish isn’t for everyone. I usually just skip it and pile on the vegetables.

  17. User avatar rickey.skiles2020 says:

    4 stars
I was skeptical about using zucchini like that, but it turned out great! Will make again.

  18. 4 stars
I liked the idea, but my zucchini ribbons got a little watery after sautéing. Next time I’ll salt them briefly or sauté less to keep them firmer.

  19. User avatar smartestRedditor says:

    2 stars
2 haddock fillets for 15-20 min at 400 seems too short, right? I’m skeptical but I’m trying it anyway. Fingers crossed!

  20. User avatar renae.turner says:

    5 stars
Tried this tonight—super light and tasty. The foil bake keeps the haddock really moist, and the zucchini ribbons were a nice change from regular slices.

    1. User avatar Rob McKenna says:

      3 stars
Tried it too but I think 15 minutes was too long for my fillets… they got a little dry. Next time I’ll pull them closer to 12 and maybe crank the temp down a bit.

    2. User avatar aubrey.wiegand28 says:

      5 stars
Yes! I love foil-baked fish—always comes out juicy. And zucchini ribbons are such a fun way to switch it up from the usual slices.

  21. User avatar brinda.heller14 says:

    4 stars
I don’t have a veggie peeler, so I just sliced the zucchini thin. Worked, but the “ribbon” vibe is better—still good!

  22. User avatar joe_banana says:

    4 stars
400°F for 15-20 minutes felt a little long for my thinner fillets. I checked at 12 minutes and it was already done—so start checking earlier than the instructions say.

  23. 3 stars
This is a quick meal to prepare, but the haddock was a bit dry. I added some butter next time.

    1. User avatar soraya.beatty says:

      4 stars
I totally get what you mean! Haddock can be tricky. Butter’s a great idea to add some moisture!

  24. 3 stars
Could you really say it’s “done” when it flakes? I overcooked mine a tiny bit—next time I’ll stop earlier.

  25. User avatar jospeh.quigley73 says:

    2 stars
I tried it and it was fine… but why aluminum foil? Can you just bake it uncovered? Might save time. Idk, maybe I’m lazy. 😅

  26. User avatar Deep Thought says:

    4 stars
Easy and healthy! I love how simple it is. I’m gonna make this again for sure!

    1. User avatar Draugr Overlord says:

      3 stars
Sounds good but I’m not sure if I’d like zucchini ribbons. Can I just use regular chopped zucchini? 🤔

    2. User avatar le.bartell19 says:

      5 stars
I tried this recipe yesterday and it was amazing! The haddock turned out so flaky and the zucchini was just perfect. Definitely a keeper!

  27. 3 stars
Instructions were kinda confusing. What’s a ribbon? Anyway, my fillets turned out nice.

  28. User avatar irwin.reinger says:

    4 stars
I used cod instead of haddock and it worked great. The ribbons sautéed fast like expected—great for weeknights when you don’t want heavy food.

  29. 3 stars
Not sure if I did something wrong, but the haddock tasted kinda bland until I added extra lemon. I’d recommend more seasoning to start.

  30. 4 stars
I’m skeptical about “ribbons” staying good, but they actually held up. 3-4 minutes was enough for me. Next time I’ll zest more lemon because I like it punchier.

  31. User avatar toby.stoltenberg91 says:

    5 stars
This was such a quick and easy recipe! The haddock turned out amazing!

  32. 4 stars
Haddock is not my favorite but I tried this recipe for my husband. He loved it!

  33. User avatar hee.rodriguez says:

    3 stars
Not bad, but 1 clove garlic is kinda too much for me—overpowered the fish. Also I didn’t have foil so I used parchment and it stuck a bit.

  34. User avatar earlie.wyman2012 says:

    4 stars
Ok but why foil AND oven—seems like extra steps. Still, the garlic-lemon combo is good. I’ll maybe do it without foil next time.

  35. User avatar dino.thiel30 says:

    5 stars
This recipe was amazing! The haddock was so flaky and the zucchini ribbons were a hit with my kids. Definitely making again!

    1. User avatar Grunthos the Flatulent says:

      5 stars
I’m glad you enjoyed it! Haddock is such a great fish, and zucchini is always fun to eat. Your kids are lucky!

    2. User avatar meg.emard73 says:

      3 stars
I tried this and it was a bit bland for me. I think it needs more seasoning or something, ya know?

  36. User avatar benton.hauck93 says:

    4 stars
What a simple yet delicious recipe! I thought it might be boring but the flavors are so bright. Loved it!

    1. 5 stars
I totally agree! It’s such a light and flavorful dish. Perfect for summer!

    2. User avatar kenisha.jacobson says:

      2 stars
I mean, it’s good but isn’t it kinda boring? Fish and zucchini? Where’s the excitement?

  37. User avatar smartestRedditor says:

    5 stars
Easy peasy! I omitted the garlic and it was still tasty. Perfect for dinner. 👍

  38. 2 stars
400°F seems high for foil-wrapped fish—mine came out a bit dry. Flavor was okay, just not the texture I wanted.

  39. User avatar thi.rogahn says:

    4 stars
Had to use cod instead of haddock since that was all I had. Still yum!

  40. 3 stars
Pretty good, but my haddock was a little dry even though I baked 15 minutes. Maybe my fillets were thicker? Still tasted nice—just needs better timing for different sizes.

    1. User avatar eddie.halvorson81 says:

      5 stars
Totally makes sense—15 minutes can be different depending on fillet thickness. I usually start checking at ~12 minutes and pull it as soon as it flakes. Also, foil helps but if the packets aren’t sealed tight or the oven runs hot, it can dry out.

  41. User avatar jewell.blick9 says:

    2 stars
Honestly this is kinda bland. The fish was fine but the zucchini ribbons needed more seasoning. Olive oil by itself didn’t do enough for me.

    1. 4 stars
Yeah I get that. I usually add a pinch of paprika or a little chili flakes to the zucchini and finish with more lemon juice—otherwise it can taste kinda muted. Olive oil alone is definitely not the star here.

  42. User avatar teresita.schowalter says:

    2 stars
Why wrap in foil? I baked it uncovered and it came out flaky faster. Seems like extra steps for nothing.

  43. 1 star
Zucchini ribbons? Are we supposed to eat that? What’s next, carrot spaghetti?

  44. User avatar MAGA2024.Trumpster says:

    4 stars
Haddock? Never heard of it. Used tilapia instead. Still tasted fine.

  45. User avatar slyvia.mcglynn says:

    2 stars
Meh. I don’t like zucchini that much. The fish was okay. Not really my thing.

  46. 3 stars
Meh, it was ok. Just fish and some veggies on my plate. Kind of bland if you ask me.

  47. User avatar Reg Nullify says:

    3 stars
I followed the instructions but my fish came out dry. Maybe it was in the oven too long?

    1. User avatar Michael83 says:

      4 stars
Yeah, I think 20 minutes is too long for fish. Next time try 15 and see if that helps!

  48. User avatar carolin.schuster1997 says:

    3 stars
I followed the recipe but my zucchini ribbons turned kinda soggy after sautéing. Next time I’ll keep the heat a bit higher and sauté less. Flavor was okay.

  49. User avatar herman.bergnaum says:

    4 stars
Haddock is kinda underrated. This recipe makes it feel restaurant-y without the hassle. I served it with rice and it was perfect.

  50. User avatar allene.marquardt34 says:

    5 stars
This is one of those recipes that sounds healthy and then actually delivers. Also, wrapping in foil is genius—clean-up was basically nothing.

  51. User avatar Vroomfondel says:

    5 stars
This recipe is amazing! The haddock turned out so flaky and the zucchini ribbons were a great touch. Definitely a keeper!

  52. 2 stars
Um, why wrap the fish? Is it really necessary? I usually just bake it directly. 🤷‍♂️

  53. User avatar Wesley Marvin DDS says:

    4 stars
Wow, I would never think of using zucchini like this! So cool. Will try!

  54. User avatar oPandariaNo says:

    5 stars
This was surprisingly good—bright lemon and garlicky haddock with the zucchini ribbons felt super light. Cook time was spot on (mine took closer to 20).

    1. 5 stars
Glad it hit the bright lemon/garlic vibe! And yup—15 min can be optimistic depending on fillet thickness. Did you notice the foil keeps it extra moist?

  55. User avatar Arianna Hyatt says:

    4 stars
I dont have zucchini peelers so I sliced them thin—still worked kinda. The garlic smell is amazing, but I might use less salt next time.

  56. 5 stars
This was super easy and tasted really fresh. The lemon and garlic on the fish were perfect, and the zucchini ribbons felt fancy without much work.

  57. 4 stars
I followed it pretty closely but I think my garlic was a bit strong. Still good though. Next time I’ll mince smaller or use less.

  58. User avatar andy.schmitt says:

    2 stars
I don’t know, seemed too bland. Needs more flavor! Maybe some spices or something.

  59. User avatar Loonquawl and Phouchg says:

    5 stars
This recipe is super easy and delicious! My kids loved it too! 😍

    1. 5 stars
Sounds great! Can’t wait to try this with my family too! 😊

  60. User avatar randall.russel4 says:

    3 stars
I didn’t have lemon juice so I used lime… wasn’t the best choice. The haddock came out a bit dry. 😕

  61. User avatar richard.christiansen71 says:

    5 stars
Made this tonight—super light and tasty. The foil bake kept the haddock really moist, and the zucchini ribbons were a nice fancy touch without much effort. Will definitely repeat.

  62. User avatar Ms. Rayford Weber says:

    2 stars
Too much lemon! Made it taste weird for me. Anyone else have that problem?

    1. User avatar callie.wehner75 says:

      4 stars
I totally get you! I thought the lemon was too strong too. Maybe just a splash next time?

    2. User avatar maurita.kerluke68 says:

      3 stars
Naaah, I think the lemon gives it a refreshing touch! Maybe you used too much? 🤔

  63. User avatar ashlie.kerluke says:

    3 stars
The zucchini ribbons are a cool idea, but mine turned a little watery after sautéing. Still good though.

  64. User avatar van.olson says:

    5 stars
Can’t believe how simple this was! I had everything at home already! Thx!

    1. User avatar darcel.rogahn59 says:

      5 stars
So glad you enjoyed it! It’s super easy and tastes great, right? 😊

  65. User avatar Peregrin Took says:

    5 stars
    Yum. Simple and healthy!

  66. User avatar fe.torp49 says:

    5 stars
Super delicious and healthy! Perfect for my diet. Will make again for sure!

    1. 5 stars
I agree! This recipe is fantastic. I love how easy it is to make!

  67. 3 stars
Confusing part: I don’t get why we need the lemon juice before wrapping. I added it anyway though and it was okay, just a bit strong at first.

  68. User avatar jeneva.hyatt2014 says:

    2 stars
I used 1 zucchini and it looked like not enough. Maybe buy bigger zucchini next time?

    1. 5 stars
I think 1 zucchini is usually okay, but it depends how thick it is. Bigger one = more ribbons for sure. Your instinct is right—next time grab a larger zucchini!

    2. User avatar bob.roob51 says:

      5 stars
Yeah, 1 medium zucchini might not make a ton of ribbons. The recipe says 2 medium, so your experience matches. I’d just use 2 next time, or add a little more zucchini if you like it heavy.

  69. User avatar elisha.barrows71 says:

    4 stars
Pretty good, but I think 15 minutes might be a little short depending on fillet thickness. I needed closer to 20. Still turned out flaky and flavorful though!

  70. User avatar Julius Spinka says:

    4 stars
I liked the idea a lot, but my foil packets leaked a bit and the fish came out slightly less juicy. Still tasty though—next time I’ll seal more carefully.

  71. User avatar esther.kris says:

    3 stars
“Cooked through” is vague 😅 I checked at 15 and it wasn’t fully done, so I added time. End result was worth it.

  72. 2 stars
Hmm. I think I overcooked mine—foil was in too long. Still edible but not as tender. Otherwise recipe is simple.

  73. User avatar basementDweller says:

    4 stars
The concept is great, but I found the zucchini ribbons a little bland. I added a pinch of chili flakes and it was way better.

  74. User avatar norman.gleason2025 says:

    5 stars
The foil-wrapped haddock came out moist and flaky. I’d do this again, no question. Maybe add a sprinkle of parsley if I’m feeling extra.

  75. User avatar nakesha.welch says:

    4 stars
This is a healthy choice I can stick to. The garlic is a nice touch.

  76. User avatar leland.ondricka says:

    5 stars
I followed it pretty much exactly. Only change: added a pinch of chili flakes and it totally leveled it up. Great balance with the lemon.

    1. User avatar jerald.luettgen34 says:

      5 stars
Love this! A pinch of chili flakes with lemon is such a good idea—makes the whole thing pop. Glad it worked out for you.

  77. User avatar russell.emard2016 says:

    5 stars
This is a fancy-sounding meal for a lazy weeknight. The zucchini ribbons look impressive, and the prep is quick. Love it.

    1. User avatar kip.parisian36 says:

      4 stars
Lazy weeknight? Maybe—unless my zucchini refuses to peel into ribbons lol. Still, haddock in foil with garlic and lemon sounds good enough to try again.

    2. User avatar jean.bogisich54 says:

      5 stars
Totally agree—this feels “fancy” without being a whole production. The foil wrapping is genius for keeping the fish tender. 😋

  78. User avatar Prince Ralis says:

    5 stars
    5 stars. Easy. Yum.

  79. User avatar arlinda.schuster22 says:

This is the worst!! Zucchini ribbons? Who even eats that? Next time I’ll just steam them and serve with rice.

  80. User avatar Wonko the Sane says:

    5 stars
Loved how light this felt—zucchini ribbons are such a nice touch. The lemon/garlic combo really made the haddock pop. I’ll definitely make it again.

  81. User avatar cherilyn.doyle24 says:

    5 stars
This was super easy and delicious! I loved the zucchini ribbons. Definitely making this again!

    1. 5 stars
I totally agree! The zucchini ribbons were a game changer! Can’t wait to try it again, maybe with some lemon zest this time!

    2. User avatar lewis.muller93 says:

      3 stars
It was okay, but I don’t really get the hype over zucchini ribbons. Seems kinda unnecessary to me.

  82. 5 stars
Made this tonight and it was actually super simple. The zucchini ribbons stayed a little tender-crisp, and the lemon garlic flavor on the haddock was spot on. Would definitely cook again.

  83. User avatar bryanna.larkin2015 says:

    4 stars
Pretty good, but my fish took closer to 22 minutes to flake. Zucchini was perfect after 4 min though. Would recommend checking early.

  84. 5 stars
Easy peasy! My kids ate it lol. the zucchini was weird at first but then they went back for more. 10/10

  85. User avatar malcom.baumbach1997 says:

    5 stars
Loved the presentation! I served it with lemon wedges and it looked like restaurant food. Also my kid ate the zucchini—win!

  86. User avatar Cletus Bartoletti Sr. says:

    4 stars
Nothin’ beats some baked fish. But where are the seasonings? I added a bit of paprika. Next time gonna try butter too.

  87. User avatar Ismael Maggio says:

    2 stars
I don’t know, my fish didn’t cook even after 20 minutes. Maybe I did somethin wrong?

  88. User avatar evangelina.sauer4 says:

    3 stars
Not bad, but 2 haddock fillets felt like it wasn’t enough for two people with decent appetites.

  89. User avatar enrique.reinger80 says:

    3 stars
Not sure about wrapping in foil—felt a little soggy on the bottom. Flavor was fine, just texture wasn’t my favorite. Next time I might open the foil for the last few minutes.

  90. 4 stars
Not gonna lie, wrapping fish in foil feels weirdly fancy for me. But it worked—juicy fish and no sticking.

  91. User avatar joni.toy28 says:

    4 stars
15–20 minutes felt a little long for my fillets (they were thin). I checked at 12 and they were already flaking. Flavor was good, just be careful with timing.

  92. 5 stars
I’m skeptical about zucchini ribbons staying tender in a skillet for 3-4 min, but they did! Great texture.

  93. User avatar octavia.schaden says:

    5 stars
    Yummm

    1. 5 stars
Yummm is right 😋 The foil-baked haddock sounds so tender, and the zucchini ribbons feel fancy but easy.

    2. User avatar edward.labadie1956 says:

      4 stars
Looks good, but 15-20 minutes at 400°F—will the zucchini still be firm after sautéing 3-4 mins? I always overcook zucchini lol.

  94. User avatar lucie.goyette1965 says:

    4 stars
This is a nice light dinner. I’d add some chili flakes or herbs if you like a bit more punch.

    1. User avatar Keneth Haley says:

      3 stars
I kinda disagree. The lemon + garlic already has a nice flavor and chili flakes might overpower the haddock. Maybe add herbs only if you want—my tastebuds are basic I guess 😅

    2. 5 stars
Totally agree—this is super light and easy. A pinch of chili flakes would really wake it up. I’ll try it next time with some parsley or dill too!

  95. User avatar liberal.hero says:

    5 stars
This is one of those meals that looks fancy but is actually easy. The lemon + garlic on the fish is perfect. Will make again—my partner asked for the same thing.

  96. User avatar danette.prosacco says:

    5 stars
Made this tonight—so light and fresh. The garlic + lemon on the foil fish was perfect, and the zucchini ribbons stayed tender instead of turning to mush. Will definitely make again.

  97. User avatar kendrick.jacobs31 says:

Not sure about wrapping fish in foil… I feel like it steams too much. I guess it worked because it was flaky, but I wanted more browning.

Not bad, but I found the zucchini a tiny bit bland. A pinch of chili flakes or more salt would help. Otherwise it’s a solid light meal.

The foil wrap is genius. Less mess, and the seasoning stayed in the fish. My picky eater even went back for seconds.

Totally agree—foil makes everything so much easier. Glad your picky eater loved it too! 🙌

My zucchini ribbons unraveled and got mushy after 4 minutes. Maybe my peeler is bad or my skillet was too hot? Tasted fine, just not the look.

I followed it pretty closely, but my fish took closer to 22 minutes. Still flaky and tasty though. Next time I’ll check earlier.

Honestly, not a fan. The zucchini ribbons felt bland without more seasoning. Also, I don’t love fish baked in foil because it feels like it steams instead of bakes.

I followed it pretty much exactly. My haddock took closer to 20 minutes (thicker fillets), but it flaked perfectly. Will make again.

The zucchini ribbons were cool, but mine turned watery in the pan. Maybe I used too much heat? Either way, it tasted okay, just not as “tender” as I expected.

Sounds good, but do you really only bake haddock 15 minutes? Mine usually takes longer… also I’ll probably use more lemon juice lol.

Yum indeed! The lemon-garlic foil bake sounds super flavorful—can’t wait to try it with the zucchini ribbons 😋

400°F is right, but I think 15 minutes would’ve been undercooked for me. I’d suggest checking at 15 and again at 18-20.

Good point! I usually start checking around 15 too—foil can make it a little tricky depending on the thickness of the fillets. 18–20 sounds right for a firmer cook.

Made this tonight—so simple and honestly really fresh tasting. The lemon + garlic combo is doing the heavy lifting.

So easy. I love that it’s one baking step plus quick sauté. Would 100% cook again for a weeknight meal.

Made this tonight—super light and flavorful. The lemon + garlic on the haddock was perfect, and the zucchini ribbons didn’t get mushy.

Made this tonight too—couldn’t believe how light it was. The lemon-garlic really pops, and my zucchini ribbons stayed nice instead of turning into mush. Thanks for the great idea!

This was good but I think 15-20 min was a little long for my fillets (they got slightly dry). Next time I’ll start checking around 12-13. Flavor combo is still solid though!
