Grilled Shrimp and Bok Choy Salad is a vibrant, satisfying dish that’s full of contrasting textures and bold, fresh flavors. It’s quick to prepare and light enough for summer lunches or warm evenings, while still packing enough protein and crunch to leave you full.
The shrimp are the highlight. Choose large, peeled, and deveined shrimp, and marinate them briefly in a mixture of soy sauce, garlic, ginger, lime juice, and a little honey. This combination adds a sweet-savory depth that enhances the natural flavor of the shrimp without overpowering it. Once marinated, grill them over high heat for just a couple of minutes on each side until they’re pink and lightly charred. The caramelization from the grill gives the shrimp a delicious smoky edge.
Bok choy is the perfect base for this salad. When grilled, baby bok choy becomes slightly charred on the outside but remains tender and juicy inside. Halve them lengthwise and brush with sesame oil before placing them on the grill. This method enhances their mild bitterness and brings out a satisfying, earthy note that balances the sweetness of the shrimp.
To build the salad, combine the grilled shrimp and bok choy with thinly sliced red chili, shredded carrots, cucumber ribbons, and chopped fresh herbs like cilantro or Thai basil. A scattering of roasted peanuts or cashews adds crunch and richness, while lime wedges on the side let you adjust the acidity to taste.
The dressing should be punchy and bright. A mix of lime juice, fish sauce, a touch of sugar, and toasted sesame oil works beautifully. You can also add a dash of chili sauce for heat.

OMG!! So good I shouted out loud when I tasted it. 10/10 would recommend!
I followed the recipe but ended up burning the shrimp. 😭 How do you keep them from drying out?
Maybe try cooking them for less time? Shrimp cook really fast! Or you could marinate them to keep them juicy. Good luck!
I just use a thermometer, shrimp are done at 120F! Otherwise it’s too easy to overcook. Hope that helps!
Really easy and soooo good! I added avocado because why not? 🍤🥗
Seems too complicated for a simple salad. Can I just toss everything raw? 🤔
Why grill the vegetables? I think steaming them would taste better.
Steaming might make them mushy! Grilling brings out a nice flavor! 🥗🔥
Was skeptical at first. Bok choy? Really? But wow, this was surprisingly good!
Yum!!! I added some hot sauce for extra kick! This is my new favorite!
Kinda bland for my taste. I added some hot sauce, and it was better but still not my fave.
I totally get that! Sometimes recipes need a little something extra. Hot sauce is always a good choice! 💪
Bland? Really? I thought it was great! Maybe you just need to season it better next time.
This salad is amazing! So fresh and light. The grilled shrimp takes it to another level.
I tried this salad and it was so good! The shrimp did make it pop! 🍤✨
I dunno, sounds a bit too healthy for my taste. Where’s the pasta? 🤔
Recipe was easy to follow. Shrimp was perfectly cooked. Loved it!
I’m glad you enjoyed it! The shrimp really do turn out great on the grill. 🦐
